BOBBY FLAY'S GRILLED PEACH COBBLER A LA MODE
This simple but fabulous recipe from Bobby Flay is one of those "wow your guests" type of desserts that you make mostly on the grill. Have the packets made ahead of time, and plop them on as you eat the main course. When dinner is done, scoop the ice cream and add the peaches, granola and carmel sauce.

Steps:
- Cut four 12-inch squares of aluminum foil.
- Cut each peach into eighths and divide among the squares.
- Divide the butter, sugar, and cinnamon over the peaches.
- Fold the foil and seal the edges.
- Cook over a medium grill until the peaches are soft and butter has melted, about 15 minutes. Remove from heat for about 5 minutes.
- Scoop the ice cream into four bowls.
- Top with peach mixture.
- Sprinkle with granola and drizzle on caramel sauce.

BROILED PEACHES à LA MODE
I've never appreciated pies the way I know a lot of other folks do. I love chocolate so much that I always feel if I'm going to eat something fattening, I want it to be super-decadent-and pies, to me, are not. If I'm going to eat something that tastes like fruit, I figure I might as well just eat fruit and save the additional calories to later get my chocolate fix. Then I started cooking fruit more, and it totally changed my view. Granted, I make fruit much cleaner (as in healthier) than putting it in pies, but there's something really satisfying about a baked peach or a roasted grapefruit that just doesn't come across in uncooked fruit. This makes a hearty amount, so it's perfect for when you're craving something sweet, and lots of it. If you want just a little something, I'd recommend sharing it with a buddy.

Steps:
- Preheat the broiler. Line a small baking sheet with foil. Lightly mist the foil with spray.
- Cut each peach in half, crossing over the stem. Remove the pit. (If the peach is ripe, this should be easy to do with your fingers. If you have trouble, use a spoon to gently dig it out, being careful not to remove too much of the flesh.) Place the peach halves, side by side, cut sides up, in the pan, and sprinkle each with 1/2 tablespoon brown sugar and a pinch of cinnamon. Broil on high for 2 to 4 minutes, or until the peaches are tender and the sugar begins to bubble and caramelize (brown lightly).
- Divide the peaches between 2 dessert bowls and top each with 1/2 cup ice cream. Serve immediately.

BROILED PEACHES
Steps:
- HEAT the broiler.
- CUT the peaches in half and remove the pit. Place the peaches cut side down in a 9 x 13-inch baking pan.
- BROIL 4 inches from the heat source for about 3 minutes, until lightly charred. Remove the peaches from the oven and turn them over, cut side up.
- COMBINE the butter and sugar in a small bowl. Spread the mixture evenly over the peaches. Return to the oven and broil for 5 minutes, until bubbly and browned.
- SERVE immediately or at room temperature with your choice of toppings.
- Variations
- Ice cream and sorbet flavors-butter pecan, raspberry sorbet, or peach on peach.
- Sweet liqueurs-amaretto, framboise, hazelnut, and cassis.
- Toppings-cheater smoked dessert sauces, whipped cream, mascarpone cheese, honey, crème fraîche, crumbled amaretti cookies, toffee bits, crumbled gingersnaps, granola, toasted pecans, almonds, macadamias, and pistachios.
