BROILED FLANK STEAK
This marinated flank steak is a family favorite. We've made this recipe for over 30 years. I have passed this recipe on to friends more times than I can count!

Steps:
- Combine oil, soy sauce, water, brown sugar, ginger, garlic, and pepper in a small bowl. Mix until combined.
- Cut shallow slashes in a crosshatch pattern on both sides of the steak, being careful not to cut all the way through.
- Place steak in a low, flat dish and pour marinade on top, covering meat completely. Cover and refrigerate at least 4 hours, or overnight, turning steak over once.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Remove steak from the marinade and place on a baking pan. Reserve marinade.
- Broil, brushing occasionally with marinade, until browned and heated through, about 5 minutes per side. Remove steak to a platter and cover loosely with foil. Let rest for at least 5 minutes. Slice into 1- to 2-inch strips across the grain.

- Preheat the oven to 325 degrees F. Coat a baking sheet with cooking spray.
- Whisk 1 egg white in a large bowl until frothy. Add the nuts and stir until evenly coated. Add the spice mix and toss to coat. Spread the nuts in a single layer on the prepared
- baking sheet. Bake, stirring occasionally, until toasted and just dry, about 25 minutes.
- Let the nuts cool completely on the baking sheet (they will crisp as they cool). Break up any clusters.
FOIL-PACKET SPICED NUTS

- Tear off an 18-inch-long piece of heavy-duty foil. Toss 2 cups unsalted roasted mixed nuts with 2 tablespoons olive oil, 1 rosemary sprig, 2 wide strips lemon zest, 2 crushed garlic cloves, 1 teaspoon kosher salt and a pinch of red pepper flakes on the foil. Bring the two short ends of the foil together and fold to seal, then fold in the sides. Grill over medium heat, flipping occasionally, until the nuts are hot and toasted, 8 to 10 minutes. Carefully open and sprinkle with flaky salt.

- Preheat an air fryer to 300˚ F. Whisk the egg white in a medium bowl until foamy. Add the pecans and almonds; toss well. Add the thyme, sage, brown sugar, salt, smoked paprika and cayenne; toss well.
- Lightly coat the air fryer basket with cooking spray. Add the nuts and spread out in an even layer. Cook, tossing halfway through, until golden brown and glazed, 7 minutes. Let cool completely.

Spread on an oiled rimmed baking sheet and bake at 350 degrees F, stirring occasionally, until golden brown, 15 to 20 minutes; let cool completely.

- 1. Trim fat from steak. Score both sides of steak in a diamond pattern, making shallow diagonal cuts at 1 inch intervals. Place steak in a resealable bag set in a shallow dish. 2. For marinade, combine vinegar, oil, smoked paprika, and salt. Pour marinade over steak; seal bag. Marinate in the refrigerator for 4 to 24 hours, turning bag occasionally. Drain steak, reserving marinade. 3. For charcoal grill, grill steak in the rack of an uncovered grill directly over medium coals for 17 to 21 minutes for medium doneness(160), turning once and basting with reserved marinade halfway through grilling. (For gas grill, preheat grill. Reduce heat to mediu. Place grill on grill rack over heat. Cover and grill as above. 4. Thinly slice the steak diagonally across the grain. Immediately top steak slices with the basil butter. For Basil Butter: In a small bowl combine 1/4 cup butter, fresh basil, garlic, dijon mustard, 1/4 teaspoon smoked paprika, and pepper.
