BROILED OYSTERS WITH CELERY CREAM AND VIRGINIA HAM
Steps:
- Shuck the oysters and drain, saving the oyster liquor for the sauce and the top shells.
- In a non-corrosive saucepan, add the oyster liquor, 8 ounces of the heavy cream, the celery seed, bay leaves, parsley, lemon zest, and juice. Bring to a boil and let reduce by 1/8. Strain through a fine sieve and return the cream mixture to the saucepan. Add the finely diced celery and ham and bring to a boil. Add the black pepper and check for saltiness, as the ham will add a great deal of salt to the mixture. If it is too salty, (hams will vary in saltiness) add a little more cream. Keep warm.
- Drain the celery root, and, in another saucepan, add the celery root. Cover with fresh, salted water and bring to a boil. Cook until tender and drain. In a food processor, add the celery root, butter, and remaining cream, and puree.
- Preheat the broiler. Place a 1/2 teaspoon of the celery root puree into each of the oyster shells, top with an oyster, and spoon the celery ham cream over the oysters. Place the filled oysters on bed of sea salt on a sheet pan and broil in the oven for about 5 minutes or until browning and bubbly. Serve at once.

NEW ORLEANS' DRAGO'S GRILLED OYSTERS RECIPE
Steps:
- Gather the ingredients.
- Heat a gas or charcoal grill to high heat. Ideally, the grill should hit 500 F. In a small saucepan, gently melt the butter. Mix the melted butter with the garlic, pepper, and oregano. Reserve in a small bowl.
- Place the oysters on the half shell right over the hottest part of the grill. The oyster shouldn't be cut loose from the shell as they can slip and fall right through the grill.
- Spoon enough of the seasoned butter over the oysters so that some of it will overflow into the fire and flame up a bit. The oysters are ready when they puff up and get curly on the sides, about 5 minutes.
- In a small bowl, mix together the grated Parmesan and Romano cheeses. Top the oysters with the cheese mix and parsley. Serve on the shells immediately.

Oysters take very little time to cook. Our pan-broiled hors d'oeuvre, which consists of oysters tossed with herbs and showered with olive oil and Parmesan, spends just minutes in the oven; serve with crusty bread for soaking up the sauce.

- In a small food processor or mixing bowl, combine the butter, bourbon, honey, garlic, and chipotle. Stir or pulse until well-mixed. You can make the butter mixture up to 1 week in advance and refrigerate until ready to serve. If you're going to be cooking in the hot sun, make sure to chill the butter until solid before starting, about 1 hour.
- When ready to BBQ, fire up your grill or broiler. Remove the butter from the fridge, and place a scant tablespoon on each shucked oyster. Place the oysters on the grill or transfer to a baking sheet and place under the broiler. Once the oysters and butter have bubbled and caramelized, remove them from the grill or broiler, about 3 minutes. Let cool slightly before enjoying (the shells will be very hot). Eat immediately!

- Wash and scrub the oysters in cold running water, removing any sand, mud or loose shell. Place the clean oysters in a big bowl and keep refrigerated until ready to use ( the same day)
- Melt the butter in the microwave in a microwave-safe bowl. Time varies, but mine takes about 15 seconds. Add the garlic, chili paste, cheese and pepper. Salt is not needed because the oysters are already salty.
- Heat a grill to high heat. I use propane but charcoal grilling works well too. Remove oysters from the bowl and place on the grill using tongs. Discard any oysters that are already open. You want them to be tightly closed. Place them on the grill with the bowl shaped side of the shell down. Grill the oysters until they pop open a little bit. Remove from the heat with the tongs, and use an oyster shucker to pry and twist the oyster apart. Careful, it's HOT! Shucking oysters can be dangerous so never use a sharp knife. Use heat proof gloves or potholders to handle the oysters. . Once the oyster is open, scrape the flesh away from the muscle that attaches it to the shell. Scrape off the muscle and discard if it is on the bowl shaped side of the shell. Place the oyster flesh in the bowl shaped shell and set it aside. Discard the other side of the shell.
- When all the oysters are open and ready to go, place them, in their shells, back on the grill with the tongs. Pour the butter mixture over the oysters with a spoon, dividing it equally. Continue cooking the oysters until their "liquor" has burned off, leaving just the butter and cheese. They should be lightly golden brown. Don't overcook them or they will be rubbery. Be careful when cooking the oysters with the butter. There is a lot of spitting and sputtering.

- Preheat oven to broil with rack 6 inches from heat. Place bread pieces in a food processor, and pulse until biggest pieces are pea-size, 10 to 15 pulses. (You will need 3 cups of breadcrumbs.) Melt butter in a large skillet over medium-high. Add breadcrumbs, pork tasso, white parts of scallions, garlic, kosher salt, and pepper. Cook, stirring often, until breadcrumbs begin to toast and tasso begins to brown, about 7 minutes. Add beer. Cook, stirring constantly, until beer has been absorbed by bread and mixture is moist but not wet, about 15 more seconds.
