This recipe for this dish is one that I received a while back, in one of my cooking classes on American Bistro. I have since changed and added some ingredients to suit my taste. It is a lovely dish, that is fairly quick, easy to make and very tasty. Most ingredients are ones you may have on hand. The sauce is a lovely compliment to the lamb. Served with a side of wild rice and a green salad or veggie, it is a perfect dinner.

8 lamb chops, fat trimmed
salt & fresh ground pepper
1/2 teaspoon garlic powder
2 tablespoons olive oil
2 garlic cloves, minced
1 large shallot, finely chopped
3/4 cup dry red wine
1 teaspoon fresh rosemary, minced
1 tablespoon fresh parsley, chopped
3/4 cup chicken broth or 3/4 cup chicken stock
1 teaspoon butter
1 teaspoon flour
2 teaspoons Dijon mustard
3 tablespoons heavy cream

Steps:

  • Heat a large skillet over medium-high heat. Season lamb chops with salt, pepper and garlic powder.
  • Add the oil to the skillet. Add chops to the pan cook 4 minutes.
  • Turn chops over and cook 3 minutes longer.
  • Remove chops from the skillet and set aside in a warm place.
  • Pour off all but 2 tsp of fat from skillet. Add the garlic and shallot. Cook until they become transparent and tender.
  • Add the wine, rosemary, and parsley, stirring up browned bits from the bottom of the pan.
  • Simmer over high heat until syrupy. That will take about 3 minutes.
  • Add the chicken broth and continue to simmer until sauce is reduced by about half.
  • Combine butter and flour in a cup (beurre manie).
  • Stir mustard and cream into sauce. Adjust seasonings. Bring to a boil.
  • Add beurre manie to sauce and stir well until incorporated into sauce and sauce thickens, about 2 minutes.
  • Remove sauce from heat.
  • Plate chops, 2 per plate, and add sauce over top. Garnish with a sprig of rosemary.
  • Serve Immediately.

1/2 cup packed fresh mint leaves, chopped, plus more for sprinkling

12 small rib lamb chops (about 2 1/3 pounds)
2 cloves garlic, smashed

Steps:

  • Preheat a grill to medium high. Mix the olive oil, mint, red pepper flakes, and salt to taste in a bowl. Rub the lamb chops all over with the garlic. Transfer a few tablespoons of the mint oil to a small bowl and brush on the chops.
  • Grill the chops until charred, 3 to 4 minutes per side. (Press the middle of a chop with your finger: It should be slightly firm with a little give for medium-rare doneness.) Transfer to a platter and brush with some of the remaining mint oil. Sprinkle with mint and serve with more mint oil.

2 pounds lamb loin chops
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon cumin
1 teaspoon mixed herbs - Italian, Greek, or French blend
½ teaspoon black pepper
½ teaspoon ground coriander
¼ teaspoon cinnamon
1 pinch cayenne pepper
salt as needed
¼ cup orange marmalade
1 pinch hot chili flakes
½ tablespoon rice vinegar
1 tablespoon chopped fresh mint

Steps:

  • Place lamb chops in a large bowl. Season with olive oil, garlic, cumin, mixed herbs, pepper, coriander, cinnamon, cayenne, and salt. Toss until well coated with oil and seasonings. Cover and refrigerate. Allow to marinate at least 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Place lamb chops on grill. Sprinkle the chops with a bit of salt. Grill until seared on the first side, 4 to 7 minutes depending on the size of the chops. Rotate chops a half turn on the grill about a minute before turning them. Turn and grill the other side to desired doneness, another 4 to 7 minutes. For medium rare, an instant-read thermometer inserted into the center should bead 125 to 130 degrees F (54 degrees C). Transfer to a serving dish and tent loosely with foil.
  • Place marmalade in bowl. Add chili flakes, mint, and rice vinegar. Stir together thoroughly.
  • Brush the sauce over the chops and serve.

1 cup extra virgin olive oil
6 fresh thyme sprigs, chopped
6 fresh rosemary sprigs, chopped
6 fresh oregano sprigs, chopped
4 cloves garlic, thinly sliced
8 pounds leg of lamb, boned, trimmed, and butterflied by butcher
salt and black pepper, to taste
Garlic Mint Sauce
2 tablespoons extra virgin olive oil
4 cloves garlic, finely chopped
1/4 teaspoon red chili flakes
1 tablespoon white wine vinegar
2 tablespoons chopped mint leaves
salt and black pepper, to taste

Steps:

  • In a bowl, whisk together the olive oil, herbs, and garlic. Place the lamb in a large baking dish. Drizzle or brush with the olive oil mixture. Cover with plastic wrap and marinate in the refrigerator for 4-8 hours. Heat a grill to medium-high heat. Lightly oil the grill rack. While the grill is heating, let the lamb come to room temperature. Remove the lamb from the marinade and pat dry. Reserve the marinade. Season the lamb with salt and pepper as desired. Place the lamb on the oiled rack and grill for 10 minutes per side, basting with the reserved marinade, until the lamb reaches 125 degrees F on a meat thermometer. Remove the lamb from the grill and let rest, covered with foil, for 15 minutes before slicing thinly. Alternate cooking instructions: Heat the oven to 425 degrees F. Place the lamb in a roasting pan and cook for 25 minutes or until the lamb reaches 125 degrees F on a meat thermometer. While the lamb is resting prepare the mint sauce. 3/4 teaspoon cinnamon
4 (1-inch-thick) lamb shoulder chops
For mint chimichurri:
1 to 2 garlic cloves
2cups flat-leaf parsley including trimmed stems
2 cups mint including trimmed stems
1/3 cup distilled white vinegar
1/2 cup extra-virgin olive oil
For peas:
1 (10-ounces) package frozen peas
3 tablespoons water
2 tablespoons unsalted butter

Steps:

  • Cook chops:
  • Preheat broiler.
  • Stir together cinnamon and 11/2 teaspoon each of salt and pepper in a bowl, then rub over chops. Broil in a 4-sided sheet pan 3 to 4 inches from heat, turning once, 8 to 10 minutes total for medium-rare.
  • Meanwhile, make chimichurri and cook peas:
  • With motor running, drop garlic into food processor and finely chop. Add remaining sauce ingredients and 1/2 teaspoon salt and pulse until herbs are finely chopped. Transfer to a bowl.
  • Cook peas in water and butter in a small saucepan over medium-high heat, covered, stirring once or twice, until just tender, about 3 minutes.
  • Serve chops drizzled with a little chimichurri and serve peas and remaining chimichurri on the side.

2 shoulder lamb chops, 3/4 inch thick
4 coves garlic, peeled, crushed
2 sprigs rosemary, bruised
2 tablespoons pomegranate juice
black pepper
salt
1/3 cup orange marmalade (No sugar or reduced sugar works fine.)
1 tablespoon white vinegar
1 tablespoon water
1/8-1/4 teaspoon crushed red pepper flakes
1/3 cup fresh mint leaves, lightly packed

Steps:

  • Season both sides of the lamb chops with black pepper and place in a seal able plastic bag. Toss in the crushed garlic, rosemary and pomegranate juice in the bag and seal. Place in refrigerator for about 1 hour.
  • While the chops marinate, prepare the mint sauce. Place the marmalade in a small saucepan, add the vinegar, water and crushed red pepper flakes. Bring to a boil, remove from heat and strain through a mesh strainer discarding the orange peel.
  • Allow the sauce to cool completely before cutting the mint leaves chiffonade and stirring into the cooled sauce.
  • About 30 to 40 minutes prior to grilling the chops, remove from refrigerator and allow to stand at room temperature. Preheat grill to medium high heat, remove chops from marinade, season with salt and place of grill. Cook 4 to 5 minutes per side. Allow to rest for 10 minutes before serving.

  • Set the oven to broil.
  • Place the lamb chops in a bowl. You can wash and dry the lamb chops, first, if you prefer. Lightly season the lamb chops with freshly cracked pepper, fine sea salt, and olive oil and then gently massage the mixture into the meat.
  • Place the seasoned chops on a sheet pan that has been greased. Insert the sliced garlic cloves into the lamb chops.
  • Remove the leaves from the rosemary plant by placing one hand near the top of the stem and then use your fingers on the opposite hand to scrape down the entire stem from the top to the base. Or, you can simply leave the sprig whole to make it easier to remove later. Take the fresh rosemary leaves and gently roll them between the palms of your hands to release their natural oils. Next, place a few of the freshly pressed rosemary leaves, or the just the whole spring, on top of each of the chops.
  • Place the lamb chops into the oven so that they are at least 8 or more inches from the heat source. Allow the lamb chops to broil until they are perfectly medium-rare, or about 8 minutes. For rare chops, about 6 minutes, or about 12 minutes for well-done chops.
  • When you are ready to eat the lamb chops, simply remove the garlic halves, brush the rosemary aside with your utensil, and then dig in. Large chunks of cooked garlic can be a bit overpowering to some people, while rosemary, whether fresh or dry, tends to have a woodsy texture that can make it tough to chew. Therefore, you'll want to remove them before indulging in your lamb chops for best results.

  • Clean your lamb chops and trim any fat from edges, if needed. Place lamb chops in large glass plate or container.

Add 2 tablespoons olive oil, 1 tablespoon salt, and spread them onto the grill along with the chops. Grill for 2 minutes. Flip the lamb chops and eggplants over, and grill for 2-3 more minutes. Remove from the heat and set aside.
  • In a mortar and pestle, add the garlic cut into slices, the chili peppers finely chopped, olive oil, salt, and bash them until the garlic and peppers are smashed. Add the lime juice, vinegar, honey, the mint finely chopped, and bash until the mixture is homogenized. Pour the sauce over the lamb and the eggplants. Serve with the olive oil.

  • Take your lamb chops out of the refrigerator and allow them to sit at room temperature for 30 minutes. Preheat your broiler to HIGH.
  • Place garlic cloves and olive oil in a small saucepan over medium-low heat. Allow to heat for 5 minutes, until oil is fragrant. Remove from heat and set aside.
  • Brush your chops on both sides with the garlic oil and season generously with salt and pepper. Place on a broiler pan. Broil the chops for 5-8 minutes on each side, and let rest for up to 10 minutes, tented with foil.
