BROILED SALMON WITH LEMON AND DILL
I love salmon. Oftentimes it's so smothered in things. I wanted to make a broiled recipe that let the salmon shine on its own.

Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Rub salmon down in olive oil. Cut your lemon in half and set 1 half off to the side. Cut the other half into 1/4-inch thick slices. Lay them on a broiler pan and lay the salmon on top of them. You just need enough to cover the bottom of the salmon so it's not touching the pan. Sprinkle with dill, garlic powder, salt, and pepper. Lightly squeeze the remainder of the lemon over the whole salmon; not too much, you don't want your seasoning to run off.
- Cook in the center of the preheated oven on a low broil until easily flaked with a fork but still juicy, 15 to 20 minutes.

Steps:
- Mix butter, chopped herbs and fresh lemon juice in small bowl to blend. Season to taste with salt and pepper.
- Preheat broiler. Place fish fillets on rimmed baking sheet; brush with olive oil and sprinkle with salt and pepper. Broil just until opaque in center, about 3 minutes. Spoon butter mixture over fish; broil just until butter melts, about 1 minute longer. Transfer fish to plates, spooning melted butter from pan over fillets. Garnish with dill sprigs and lemon wedges and serve.
BROILED FISH WITH LEMON BUTTER
I made this with flounder fillets and it is surprisingly easy and good. Don't cut the lemons too thin (I did in my Cuisinart). It makes a nice presentation, too.

- Arrange lemon slices in a small roasting pan and drizzle with olive oil. Broil 8" from the heat until lightly browned. Mix together melted butter and lemon juice.
- Scatter thyme sprigs on top of browned lemons; top with fish fillets. Drizzle with butter/lemon juice mixture. Broil fish 4" from the heat for 10 to 12 minutes, or just until fish flakes easily when tested with a fork.
- Refrigerate leftovers.

BROILED FISH WITH LEMON CURRY BUTTER
Broiled fish fillets topped with a little butter and a squirt of lemon is a quick, easy weeknight staple. But when the butter is spiked with plenty of garlic, a jolt of curry powder and piquant fresh ginger, then brightened with fresh herbs, it becomes a superb, company-worthy dish that still cooks in under 10 minutes flat. RED SNAPPER WITH GARLIC-LEMON-DILL BUTTER
Robust ocean fish seeks tangy, buttery garnish for epicurean adventure. This garnish works well on most types of fish, but it was hatched using red snapper because I had a lemon and a single sprig of dill that needed to be used and the red snapper was the best looking fresh fish in the case. I've done Alaskan sockeye salmon the same way to good effect. Pairs well with pasta or rice, shown with my go-to Fettuccine with Sweet Pepper-Cayenne Sauce from this site, and fresh vegetables.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Place red snapper filets on the prepared baking sheet, skin side down.
- Melt butter in a small saucepan over medium-low heat and saute garlic in the melted butter until softened, about 3 minutes. Squeeze lemon juice on top, straining out the seeds.
