GRILLED FIGS WITH GOAT CHEESE AND PROSCIUTTO

Grilled Figs with Goat Cheese and Prosciutto image

Grilled figs with goat cheese and prosciutto are a wonderful summer treat! So the next time you see figs for sale, snap them up and make this appetizer.

Provided by Kate Morgan Jackson

Categories     Appetizer

Time 20m

Number Of Ingredients 5

12 good-sized fresh figs
1/4 cup cheese, room temperature
12 thin slices prosciutto
1 tablespoon honey
1 tablespoon balsamic vinegar

Steps:

  • Heat grill to medium high.
  • Cut a slit in the side of each fig and gently pull the fig open. Push a spoonful of goat cheese into each fig.
  • Wrap each fig securely with a piece of prosciutto, making sure the prosciutto covers the opening where the cheese is. You can use a toothpick to secure the prosciutto if you want to be extra sure it stays in place...if you do, use wooden ones (not plastic) and soak them in some water ahead of time so the grill doesn't make them catch fire.
  • Grill the figs about 1-2 minutes per side until the prosciutto starts to get a little crispy.
  • Mix the vinegar and honey together, drizzle over the grilled figs and serve!

FRESH GRILLED FIGS WITH GOAT CHEESE WRAPPED IN BACON

Fresh Grilled Figs with Goat Cheese Wrapped in Bacon image

Fresh Grilled Figs with Goat Cheese Wrapped in Bacon

Provided by Peggy Gilbey McMackin

Categories     Appetizers

Time 50m

Yield 6

Number Of Ingredients 5

18 fresh figs, stem removed, then sliced lengthwise three quarters down the center keeping the whole fig still intact
5 ounces plain goat cheese, around a 3/8 inch thick piece, enough to just fill the fig
9 slices smoked bacon, thin-cut variety, approximately, cut into halves or 2/3 pieces depending on the size of the fig
An alternative to Bacon: ¼ pound Prosciutto, approximately, enough cut to fit around each stuffed fig following the same procedure
18 round toothpicks (Dale recommends round as they are sturdier for securing the stuffed wrapped fig rather than the flat, thinner variety)

Steps:

  • Preheat grill to medium temperature
  • Set cut figs onto a platter or a baking sheet
  • Stuff goat cheese into each fig
  • Wrap bacon around the entire fig encasing the stuffed fruit
  • Secure through with a round toothpick
  • Grill stuffed figs on medium heat to prevent flare-ups or the cheese melting and oozing out
  • Cook around five minutes each side, approximately, until bacon is fully cooked all around

GRILLED FIGS WITH GOAT CHEESE

GRILLED FIGS WITH GOAT CHEESE image

Categories     Fruit     Appetizer

Number Of Ingredients 8

8 ripe figs
1/4 cup fresh, soft goat cheese
1 teaspoon mixed minced fresh thyme and rosemary, or any combination of fresh herbs
Salt and freshly ground black pepper
8 fig or grape leaves, or 8 6-inch squares of aluminum foil
8 rosemary-twig skewers or toothpicks
1 teaspoon soy sauce
1 teaspoon Banyuls or balsamic vinegar.

Steps:

  • 1. Pinch figs apart slightly from their stem ends, forming four sides surrounding a central pocket. Into this pocket, spoon a small amount of goat cheese. Sprinkle each with a tiny bit of herb mix and a pinch of salt and pepper. From the bottom up, use a leaf or sheet of foil to form a cup around each fig; skewer leaf or foil through fig so that it holds securely. 2. Grill figs, open side up, just until they brown slightly and cheese softens. Remove, sprinkle with a few drops each of soy sauce and vinegar, and serve. Yield: 4 servings
