JUICY BROILED HAMBURGERS
Cooking burgers under the broiler is so easy, and they come out wonderfully juicy and flavorful.

- Preheat your broiler on high. Position an oven rack directly (3-4 inches) below the heating element.
- Sprinkle the Kosher salt, pepper, garlic powder, onion powder, and smoked paprika on the meat. Work the spices gently and evenly into the meat.
- Divide the seasoned meat into four equal 4-oz portions and gently shape them into four patties, 3.5 inches in diameter and 1/2 inch thick.
- Arrange the patties in a cast-iron skillet. Push down on the center of each patty to create a dimple. This will help the burgers stay flat as they cook.
- Broil the burgers to medium, about 3 minutes per side.
- Turn the oven off, top each burger patty with sauteed onions and with cheese, and return the pan to the still-warm oven for just a few seconds, until the cheese is melted. Serve immediately.

- Place the three slices of bread onto a baking sheet. Stir together the luncheon meat and Cheddar cheese in a bowl. Press the meat and cheese mixture on top of each slice of bread.
- Broil in the preheated oven until the sandwiches are hot and the topping is beginning to brown on top, 3 to 5 minutes.

It was probably created during World War II as a new way to prepare SPAM®, which was widely used in that time of shortages and rationing. - Heat oven to broil and set the oven rack to the upper-middle position.
- Line a grill or sheet pan with foil.
- Divide the meat into 4 (4 ouncportions. Very gently, and without overworking the meat, form each portion into 4 loose balls. Place one ball on a dessert plate or other flat surface and gently press it down to make a disc about ½-¾ inch thick (your personal choice). Now gently turn the disc around while slightly pressing an indentation around the edge (kind of like a moat right inside the burger's edge). This will keep the burger from developing a mound in the middle and your burger will remain flat while cooking. Place the burger on the prepared pan and repeat the process with the remaining portions of beef.
- Season both sides of each burger generously with kosher salt and freshly ground black pepper, and place the burgers in the oven.
- Broil 4 minutes or until the top has browned and beginning to char.
- Flip the burgers over and broil until the center reads 155°F internally, about 3-4 minutes longer.
- Top each burger with a slice of your favorite cheese, if desired, and cook just until the cheese melts.
- Transfer the burgers to a cooling rack and tent with foil to allow time for the internal temperature to reach 160°F.
- Serve the burgers on toasted buns and top with the condiments of your choice.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Sprinkle with cornstarch; stir until blended. Stir in the tomatoes, oregano, salt and onion salt. Cook, uncovered, for 5 minutes or until slightly thickened. HOT HAWAIIAN BURGERS (SPAM, PINEAPPLE, SWISS, AND SRIRACHA MAYO) RECIPE
It's time to board a small charter flight to Polynesia, the land of Spam and pineapples. Why Spam and pineapple? Because it's a delicious combo that hits the rich/fresh/sweet flavors and the crisp/moist textures. Who wouldn't want that on a burger? Add a couple of slices of Swiss cheese along with a nice spoonful of sriracha-mayonnaise and the burger explodes with spice and goo-which is why a toasted English muffin and all its juice-catching nooks is such a great choice here (though regular burger buns would be mighty tasty too).

- Divide meat into four even piles and shape into burger patties about 1/2-inch wider than English muffins. Season generously with salt and pepper and set aside.
- Combine mayo and sriracha in a small bowl. Set aside.
- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate.
- Place burgers directly over hot side of grill and cook, turning occasionally, until well charred and internal temperature registers 125 to 130°F on an instant read thermometer for medium-rare, about 5 minutes total, or 135°F to 140°F for medium, about 6 minutes total. Top each burger patty with 1 slice cheese, then transfer to a large plate and tent with aluminum foil.
- Place spam and pineapple slices on hot side of grill and cook, turning occasionally, until heated through and well charred. Place 1 slice cheese on top of each Spam patty. Transfer Spam and pineapple to cool side of grill.
- Toast English muffins on grill. Place bottom buns on a cutting board. Top with a slice of pineapple. Add burger patty. Top with SPAM. Top with sriracha mayo, then close burger. Serve immediately.
