GRANDMA'S PORK AND BEAN SANDWICHES
This is a baked version of an American favorite. My grandma used to make these for us. It's more like a half sandwich since the ingredients are actually baked on top of a slice of bread.

Steps:
- Preheat the oven's broiler.
- Place bread slices on a broiling pan that has been lined with aluminum foil. Spoon about 1/2 cup of beans onto each piece of bread. Cover each pile of beans with a slice of cheese. Place three half-slices of bacon onto each sandwich so that they are not hanging over the edge.
- Broil for 5 minutes in the preheated oven, or until the bacon is cooked and cheese is melted. Watch them carefully! I suggest leaving the oven door cracked near the 5 minute mark to allow some of the oven heat to escape.

- Preheat oven to 350 degrees F (175 degrees C).
- Arrange the English muffin halves on a baking sheet. Place an equal amount of baked beans on each muffin half. Layer beans with onion, tomato, cheese, and bacon.
- Bake 20 minutes in the preheated oven. Set oven to broil, and continue cooking 1 to 2 minutes, until bacon is crisp. Watch constantly during broiling to make sure bacon does not burn. Serve immediately.

I had some leftover canned refried beans that I wanted to eat, but not cold and not out of the can, so I came up with this truly tasty sandwich!

- In a medium size skillet, heat the olive oil, saute the onion until slightly cooked, add the garlic, cook 1 minute.
- Add the refried beans, cook and stir until heated, reduce heat to low.
- Add the cheese. Stir to melt through.
- Toss in the jalapeno slices. Leave on low heat until heated through. Meanwhile, toast the sandwich rolls, open faced, under the broiler, until golden.
- Prepare the lettuce.
- When time for assembling the sandwich, season the beans with salt and pepper. Spread the bean mixture onto the sandwich roll. Top with lettuce and the French dressing.

- For the pesto, heat oil in a small nonstick pot over medium heat.
- Add garlic and cook until lightly browned.
- Transfer to a food processor and add beans, parsley, rosemary, hot sauce, salt and lemon juice and purée until smooth and creamy. Set pesto aside.
- Prepare a grill for medium heat.
- Lightly spray eggplant, squash and zucchini with cooking spray.
- Grill vegetables until tender, 3 to 5 minutes.
- Spread half of the reserved pesto evenly over length of one side of the baguette.
- Layer baguette with eggplant, squash, and zucchini, then top with red onions, tomatoes, and spinach.
- Spread remaining pesto on the other half of the baguette and arrange it over the vegetables, pressing halves together lightly.
