This is a baked version of an American favorite. My grandma used to make these for us. It's more like a half sandwich since the ingredients are actually baked on top of a slice of bread.

4 slices white bread
4 slices processed cheese
6 slices bacon, cut in half
1 (15 ounce) can baked beans with pork

Steps:

  • Preheat the oven's broiler.
  • Place bread slices on a broiling pan that has been lined with aluminum foil. Spoon about 1/2 cup of beans onto each piece of bread. Cover each pile of beans with a slice of cheese. Place three half-slices of bacon onto each sandwich so that they are not hanging over the edge.
  • Broil for 5 minutes in the preheated oven, or until the bacon is cooked and cheese is melted. Watch them carefully! I suggest leaving the oven door cracked near the 5 minute mark to allow some of the oven heat to escape.

1 (16 ounce) can maple cured baked beans
1 medium onion, thinly sliced
2 medium tomatoes, cut into 1/4 inch slices
4 slices Cheddar cheese
4 slices bacon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange the English muffin halves on a baking sheet. Place an equal amount of baked beans on each muffin half. Layer beans with onion, tomato, cheese, and bacon.
  • Bake 20 minutes in the preheated oven. Set oven to broil, and continue cooking 1 to 2 minutes, until bacon is crisp. Watch constantly during broiling to make sure bacon does not burn. Serve immediately.

I had some leftover canned refried beans that I wanted to eat, but not cold and not out of the can, so I came up with this truly tasty sandwich!

1 cup refried beans (Old El Paso)
1 teaspoon olive oil
2 garlic cloves, chopped
1 small white onion, coarsely chopped
2 tablespoons canned jalapeno slices, quartered
1 ounce white cheddar cheese
1/8 teaspoon salt
1/4 teaspoon black pepper
4 -8 romaine lettuce leaves, washed and trimmed
1 teaspoon French dressing, per sandwich
4 sandwich buns

Steps:

  • In a medium size skillet, heat the olive oil, saute the onion until slightly cooked, add the garlic, cook 1 minute.
  • Add the refried beans, cook and stir until heated, reduce heat to low.
  • Add the cheese. Stir to melt through.
  • Toss in the jalapeno slices. Leave on low heat until heated through. Meanwhile, toast the sandwich rolls, open faced, under the broiler, until golden.
  • Prepare the lettuce.
  • When time for assembling the sandwich, season the beans with salt and pepper. Spread the bean mixture onto the sandwich roll. Top with lettuce and the French dressing.

White Bean Pesto
1 1/2 teaspoon extra-virgin olive oil
3 cloves garlic, finely chopped
1 (15.5-ounce) can navy beans, drained and rinsed
1 teaspoon finely chopped fresh flat-leaf parsley
1 teaspoon finely chopped fresh rosemary
1 teaspoon fine sea salt
1 teaspoon hot sauce
1 lemon, juice of
Sandwiches
1 eggplant, thinly sliced lengthwise
1 yellow squash, thinly sliced lengthwise
1 zucchini, thinly sliced lengthwise
1 large baguette
1 red onion, thinly sliced
1 tomato, thinly sliced
1 cup baby spinach
Cooking spray

Steps:

  • For the pesto, heat oil in a small nonstick pot over medium heat.
  • Add garlic and cook until lightly browned.
  • Transfer to a food processor and add beans, parsley, rosemary, hot sauce, salt and lemon juice and purée until smooth and creamy. Set pesto aside.
  • Prepare a grill for medium heat.
  • Lightly spray eggplant, squash and zucchini with cooking spray.
  • Grill vegetables until tender, 3 to 5 minutes.
  • Spread half of the reserved pesto evenly over length of one side of the baguette.
  • Layer baguette with eggplant, squash, and zucchini, then top with red onions, tomatoes, and spinach.
  • Spread remaining pesto on the other half of the baguette and arrange it over the vegetables, pressing halves together lightly.
  • Cut into 4 pieces and serve.

Two 15.5-ounce cans dark red kidney beans, drained and rinsed
Two 15.5-ounce cans northern white beans, drained and rinsed
One 15-ounce can tomato sauce
1/2 cup ketchup
1/4 cup brown sugar
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
1 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon smoked paprika
2 cloves garlic, minced
Green onions, for garnish (optional)

Steps:

  • Preheat a grill for cooking at medium-high heat.
  • Place a skillet on the grill. Cook the onions and green peppers with some oil in the skillet for 3 to 4 minutes.
  • Add the beans, tomato sauce, ketchup, brown sugar, mustard, vinegar, cayenne, chili powder, smoked paprika and garlic and stir. Cook with the grill covered, stirring occasionally, for about 15 minutes. Garnish with green onions, if using.
