I make this easy meat and veggie bake often because it provides plenty of delicious leftovers for later. My fiance and I love broccoli, so this hearty recipe pleases us both. it would go over big as a featured entree for a brunch buffet.

Number Of Ingredients 8

3 cups frozen chopped broccoli
1 pound bulk Italian sausage
3 cups seasoned salad croutons
2 cups shredded sharp cheddar cheese
4 large eggs, lightly beaten
1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1-1/3 cups whole milk
1 can (2.8 ounces) french-fried onions

Steps:

  • Cook broccoli according to package directions; drain and set aside. In a large skillet, cook sausage over medium heat until the meat is no longer pink; drain. Add the broccoli, croutons and cheese. , Transfer to a greased 2-qt. baking dish. In a large bowl, combine the eggs, soup and milk. Pour over sausage mixture. , Bake, uncovered, at 375° for 25 minutes. Sprinkle with French-fried onions. Bake for 3-5 minutes longer or until a knife inserted in the center comes out clean.

1/2 pound bulk pork sausage
1 cup chopped fresh broccoli
2 cups shredded cheddar cheese
3 large eggs, lightly beaten
1-1/4 cups 2% milk
1/2 cup biscuit/baking mix

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. Add 1 in. of water and broccoli to a saucepan; bring to a boil. Reduce heat. Cover and simmer for 5-8 minutes or until crisp-tender; drain., In a greased 9-in. pie plate, layer with sausage, cheese and broccoli. In a large bowl, combine the eggs, milk and biscuit mix. Pour over broccoli. , Bake at 350° for 25-30 minutes or until a knife inserted in the center comes out clean.

2 fully cooked Italian sausage links (about 1/2 pound), sliced
4 fully cooked andouille sausage links (about 1/2 pound), sliced
4 fully cooked bratwurst links (about 1/2 pound), sliced
1 medium onion, chopped
1 medium sweet red pepper, chopped
1 serrano pepper, seeded and finely chopped
6 large eggs
1 cup heavy whipping cream
1 teaspoon hot pepper sauce
Rye bread, toasted

Steps:

  • Preheat oven to 350°. In a large skillet, cook and stir sausages over medium heat until browned, 6-8 minutes. Remove with a slotted spoon to a greased 11x7-in. baking dish., In same skillet, cook and stir onion and peppers over medium heat until tender, 5-6 minutes. Sprinkle over sausages. Whisk together eggs, cream and hot sauce; pour over top. Bake, uncovered, until golden brown and set, 35-40 minutes. Serve with toasted rye bread. , Make-Ahead: Refrigerate, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake as directed.

1 medium bulb fennel, trimmed, halved lengthwise and sliced into thin wedges
3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
4 sweet Italian sausage links (about 12 ounces), casings removed, crumbled into pieces
1 small bunch broccoli rabe (about 12 ounces), tough ends trimmed
1 clove garlic, thinly sliced
1/4 teaspoon red pepper flakes

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with parchment paper. Place the fennel on the prepared baking sheet and toss with with 1 tablespoon olive oil and 1/2 teaspoon salt. Move to one side of the baking sheet and roast until the fennel begins to soften, about 20 minutes.
  • Remove from the oven and place the crumbled sausage in an even layer in the center of the baking sheet. In a medium bowl, toss the broccoli rabe with the sliced garlic, red pepper flakes, remaining 2 tablespoons of olive oil and 1/2 teaspoon salt and spread into an even layer on the empty side of the pan.
  • Roast until the fennel and broccoli rabe are tender and charred in spots and the sausage is completely cooked through, about 15 minutes more. Toss vegetables and sausage with the accumulated juices on the tray before serving.

1 bunch broccoli rabe
1/2 pound Italian sweet sausage
3 tablespoons extra-virgin olive oil
3 cloves garlic, minced
Salt and freshly ground black pepper to taste
1 pound orecchiette pasta Freshly grated Italian pecorino romano

Steps:

  • Rinse the broccoli rabe well and chop it in relatively small pieces. Set it aside. Remove the sausage from its casing and mash it.
  • Heat the oil in a large, heavy skillet. Add the sausage and cook it, mashing and stirring it, until it loses its redness. Add the garlic and saute another minute or two. Add the broccoli rabe and sprinkle with a little salt. Cook over medium heat, stirring, until the broccoli rabe is thoroughly wilted. Season with salt and pepper. Cover the skillet and remove it from the heat.
  • Bring a large pot of salted water to a boil. Add the orecchiette and cook until al dente, 8 to 10 minutes. Drain very well and transfer to a warm serving bowl.
  • Reheat the contents of the skillet and spread over the orecchiette. Toss, then serve with a dusting of pecorino.

This is great for a light dinner or a weekend brunch! You can use the small breakfast pork sausages in place of the Italian sausages if you are making this for brunch, also a 10-ounce package frozen broccoli cuts, thawed may be subbed for the fresh broccoli.

3/4 lb Italian sausage, casings removed
3 green onions, chopped (or use a small yellow onion)
2 cups fresh broccoli florets, cooked and drained
1 1/2 cups cheddar cheese, shredded and divided
8 large eggs, lightly beaten
1 pinch cayenne pepper
1 cup ricotta cheese
1/4 cup milk
seasoning salt (or use white salt)
black pepper
1/3 cup grated parmesan cheese
2 firm plum tomatoes, thinly sliced

Steps:

  • Set oven to 350 degrees.
  • Butter an 11 x 7-inch baking dish or a medium-size oval casserole dish.
  • In a skillet cook the sausage meat with onions over medium-high heat, stirring until the sausage is browned; drain fat and transfer to a large bowl.
  • Add in cooked broccoli and 3/4 cup shredded cheese; toss to combine, transfer and spread into bottom of prepared baking dish.
  • In another bowl combine the eggs with 3/4 cup shredded cheddar cheese, cayenne, ricotta cheese and milk, then season with salt and pepper; pour over the broccoli/sausage mixture.
  • Sprinkle with grated Parmesan cheese (or you can use cheddar in place of the Parmesan) then arrange the tomato slices over the top.
  • Bake covered for about 30 minutes; remove from oven and uncover.
  • Bake for another 15 minutes.
  • Let stand for 10 minutes before serving.
