Breakfast casserole recipe from Taste of Home, so you know it's good! Feel free to add some sliced, canned mushrooms or some sliced black olives for a change!

Number Of Ingredients 6

1/2 lb bulk pork sausage
1 cup chopped fresh broccoli
2 cups shredded sharp cheddar cheese
3 eggs
1 1/4 cups milk
1/2 cup baking mix (such as Bisquick)

Steps:

  • In a skillet, cook sausage over medium heat until no longer pink; drain and set aside.
  • Add 1 inches of water and broccoli to a saucepan; bring to a boil. Reduce heat. Cover and simmer for 5-8 minutes or until crisp-tender; drain.
  • In a greased 9-in. pie plate, layer the sausage, cheese and broccoli.
  • In a bowl, combine the eggs, milk and biscuit mix. Pour over broccoli.
  • Bake at 350° for 25-30 minutes or until a knife inserted near the center comes out clean.

I make this easy meat and veggie bake often because it provides plenty of delicious leftovers for later. My fiance and I love broccoli, so this hearty recipe pleases us both. it would go over big as a featured entree for a brunch buffet.

Number Of Ingredients 8

3 cups frozen chopped broccoli
1 pound bulk Italian sausage
3 cups seasoned salad croutons
2 cups shredded sharp cheddar cheese
4 large eggs, lightly beaten
1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1-1/3 cups whole milk
1 can (2.8 ounces) french-fried onions

Steps:

  • Cook broccoli according to package directions; drain and set aside. In a large skillet, cook sausage over medium heat until the meat is no longer pink; drain. Add the broccoli, croutons and cheese. , Transfer to a greased 2-qt. baking dish. In a large bowl, combine the eggs, soup and milk. Pour over sausage mixture. , Bake, uncovered, at 375° for 25 minutes. Sprinkle with French-fried onions. Bake for 3-5 minutes longer or until a knife inserted in the center comes out clean.

This is great for a light dinner or a weekend brunch! You can use the small breakfast pork sausages in place of the Italian sausages if you are making this for brunch, also a 10-ounce package frozen broccoli cuts, thawed may be subbed for the fresh broccoli.

3/4 lb Italian sausage, casings removed
3 green onions, chopped (or use a small yellow onion)
2 cups fresh broccoli florets, cooked and drained
1 1/2 cups cheddar cheese, shredded and divided
8 large eggs, lightly beaten
1 pinch cayenne pepper
1 cup ricotta cheese
1/4 cup milk
seasoning salt (or use white salt)
black pepper
1/3 cup grated parmesan cheese
2 firm plum tomatoes, thinly sliced

Steps:

  • Set oven to 350 degrees.
  • Butter an 11 x 7-inch baking dish or a medium-size oval casserole dish.
  • In a skillet cook the sausage meat with onions over medium-high heat, stirring until the sausage is browned; drain fat and transfer to a large bowl.
  • Add in cooked broccoli and 3/4 cup shredded cheese; toss to combine, transfer and spread into bottom of prepared baking dish.
  • In another bowl combine the eggs with 3/4 cup shredded cheddar cheese, cayenne, ricotta cheese and milk, then season with salt and pepper; pour over the broccoli/sausage mixture.
  • Sprinkle with grated Parmesan cheese (or you can use cheddar in place of the Parmesan) then arrange the tomato slices over the top.
  • Bake covered for about 30 minutes; remove from oven and uncover.
  • Bake for another 15 minutes.
  • Let stand for 10 minutes before serving.
