EASY ONE POT BEEF AND BROCCOLI RAMEN NOODLES

Steps:
- Pat the beef pieces dry and season lightly with salt and pepper. In a small bowl, combine the sauce ingredients, whisking to combine. Set aside.
- In a 12-inch deep skillet or pot, heat the olive oil and sesame oil over medium or medium-high until hot and rippling. Cook the beef in a single layer until browned and mostly cooked through, 3-4 minutes. Repeat if all the beef didn't fit in the first batch. Remove the beef to a plate.
- In the skillet or pot, add the ginger and garlic. If the pot is dry, drizzle in another teaspoon of oil. Cook over medium heat, stirring and mashing the ginger and garlic, for about 30 seconds until sizzling and fragrant (don't let it burn). Add the broccoli and broth.
- Break the bricks of ramen noodles into chunks and add them to the skillet/pot. Bring the mixture to a simmer and cook until the ramen and broccoli are tender, 3-4 minutes, tossing and stirring the ramen while it cooks to help it separate. There should be a bit of liquid left in the bottom of the pot.
- Add the beef back to the pot. Whisk the sauce to recombine and add it to the pot as well. Stir and toss the ingredients to combine. Cook at a gentle simmer for 1-2 minutes to heat through. Serve immediately.

- Using your hands, break the ramen noodles up into smaller pieces. It's ok if some pieces are bigger than others.
- Add the broccoli slaw, ramen noodles, roasted cashews, dried cranberries, and scallions to a large salad bowl.
- Give the dressing another shake and pour it over the salad. Toss to coat. I like to give the salad at least 15-20 minutes to let the noodles soften up a bit, but it's up to you how crunchy you want them. You can eat it right away or let them soften up even longer.

In a medium bowl, whisk together chicken stock, oyster sauce, rice wine vinegar and Sriracha. Heat canola oil in a large skillet over medium heat. - Place the ramen noodles in a large bowl (discard the seasoning packets or save for another use) and pour the boiling water over them. Let sit for 6 minutes, stirring every now and then to break up the noodle blocks. Drain and rinse under cold water. Set aside.
- In a small bowl, combine the garlic, cornstarch, sesame oil, lime juice, and soy sauce. Stir well, then set aside.
- Place the broccoli in a large, microwave-safe bowl and microwave for 1½ minutes, until soft. Set aside.
- Heat 1 teaspoon of olive oil in a large, nonstick pan over high heat. Add the steak to the pan and toss with 2 tablespoons of the reserved sauce. Cook until browned, about 2 minutes. Remove from the pan and set aside.

- Place the beef in a large bowl and sprinkle with 1 ½ teaspoons kosher salt, pepper, garlic powder, and thyme. Set aside.
- Turn a 6-quart or larger electric pressure cooker to sauté. Add the oil and butter. As soon as the butter melts, add the onion and remaining 1/2 teaspoon salt. Cook, stirring often, until the onion begins to soften but does not brown, 3 to 4 minutes.
- Add the beef. Cook, stirring occasionally, until the meat is browned on all sides, about 6 to 8 minutes.
- Add the Worcestershire sauce and bay leaf. Splash in about 1/2 cup of the beef broth. Stir, scraping a wooden spoon or spatula along the bottom of the pot, to ensure you remove any stuck-on bits of food (this will avoid a "burn" warning...also, those browed bits are delicious!). Add the next 4 1/2 cups broth.
- Cover and seal the pressure cooker. Cook on manual (high) pressure for 10 minutes. When the time is up, immediately vent to remove any remaining pressure.
- Carefully open the lid and remove the bay leaf. Then, add the egg noodles. Turn to sauté and bring the mixture to a simmer. Cook until the noodles are tender, about 18 to 20 minutes. Stir the pot every few minutes, and scrape a spoon or spatula along the bottom to prevent the noodles from sticking.
- While the noodles cook, in a small bowl whisk together the cornstarch and water to create a slurry. As soon as the noodles finish cooking, add the slurry and stir to combine. Stir in the peas. If the noodles are thicker than you would like, splash in additional beef broth until you reach your desired consistency. Serve hot, sprinkled with fresh parsley or thyme.
