BROCCOLI AND GOAT CHEESE MUFFIN QUICHE



Broccoli and Goat Cheese Muffin Quiche image

Number Of Ingredients 13

Nonstick cooking spray, for spraying muffin cups
1 teaspoon olive oil
1 cup chopped broccoli
Kosher salt
Freshly cracked black pepper
1 teaspoon thinly sliced shallots
2/3 cup heavy cream
3 eggs
1 egg yolk
1/2 teaspoon chopped fresh marjoram
Pinch ground nutmeg
1/2 cup crumbled goat cheese
1/2 cup grated Swiss cheese

Steps:

  • Preheat the oven to 315 degrees F. Spray 6 cups of a muffin tin lightly with nonstick cooking spray.
  • Heat the olive oil over high heat in a saute pan until it begins to smoke slightly. Add the broccoli and caramelize; season with salt and freshly cracked pepper. After about 3 minutes, add the shallots and quickly saute. Cool completely on a tray lined with a paper napkin.
  • Combine the cream, whole eggs and yolk in a bowl and whisk in the marjoram and nutmeg. Season with salt and freshly cracked pepper.
  • Add 2 tablespoon of the vegetable filling to each muffin cup. Sprinkle on a layer of goat cheese and grated Swiss. Divide the egg custard mixture evenly among the muffin cups. Top with any leftover vegetables and cheese.
  • Bake until an inserted skewer comes out clean, with no wet custard clinging to it, about 25 minutes. If necessary, bake in additional 5-minute increments. The tops should be golden brown.

Healthy, easy, and always ready when you're on the go! I like to make these muffins at the beginning of the week, so they're always on hand in the fridge or freezer. (Naturally gluten-free)

Yield 16-18 regular sized muffins

Number Of Ingredients 14

12 large eggs
½ cup heavy cream
¼ cup milk
2 TBSP fresh parsley, chopped
2 TBSP fresh basil, chopped (or other herb)
¼ tsp. salt
¼ tsp. pepper
1 cup broccoli, cut into teeny tiny florets
1 cup fresh spinach, roughly chopped
1 red bell pepper, chopped small
¼-1/2 cup onion, diced fine
1 jalapeno pepper, seeds and veins removed, diced fine (optional)
1½ cups cheddar, gruyere, mozzarella, or other cheese, divided
1 lb. bacon, sausage, or other meat, fully cooked

Steps:

  • If using meat (bacon, sausage, etc.), cook it fully first. Set it aside to cool, then cut into small pieces.
  • Preheat oven to 375 degrees F., and thoroughly grease (butter, coconut oil, or non-stick spray) a muffin tin. (NOTE: I recommend using a non-stick muffin tin for even easier removal.)
  • In a large bowl, whisk together the eggs, cream, milk, parsley, basil, salt, and pepper. Set aside.
  • Get all your veggies diced up and ready to go. Optionally, you can saute your onion with a bit of olive oil to soften it up and take away some of its bite. Set aside and allow to cool.
  • Add all the veggies to the bowl with the egg mixture, and stir to combine. Stir in half of the cheese, and all of the meat, if using.
  • Using an ice-cream scoop or ¼ cup measure, scoop the mixture into the prepared muffin pan. Fill to about ¼ inch from the top, then sprinkle a small amount of reserved cheese over each. Place in the oven, and bake for 20-25 minutes, or until the egg is fully set and the cheese has just started to turn golden on top.
  • Remove from the oven and let cool for 5-10 minutes before running a butterknife around each muffin, and gently removing from the pan. Enjoy while warm, or let cool completely before storing in an airtight container in the fridge. Leftovers can be reheated for several seconds in the microwave (time will vary depending on your microwave), or a few minutes in a preheated oven or toaster oven.

1 cup chopped broccoli floret
1 medium onion, chopped
1/2 cup diced cooked ham
1/2 cup grated parmesan cheese
6 eggs
1/2 cup vegetable oil
1 1/4 cups flour
1 tablespoon baking powder
1 teaspoon oregano
1 teaspoon dried parsley flakes
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon thyme

Steps:

  • Combine the broccoli, onion, ham, and cheese; set aside.
  • In a mixing bowl, beat eggs until frothy. Add oil; mix well.
  • Combine dry ingredients; add to the egg mixture just until moistened. Fold in the broccoli mixture.
  • Fill greased muffin cups (NO paper liners!) two-thirds full. Bake at 375F for 20 minutes. Cool for 10 minutes; remove to a wire rack.
  • These freeze very well.

¼ cup whole milk

¼ teaspoon Private Selection™ Black Pepper, plus more to taste
1 pre-made pie crust, chilled
½ cup Private Selection™ Handpicked Broccoli Florets
4 strips Private Selection™ Center Cut Bacon, cooked
3 tablespoons red onion, diced
½ cup Private Selection™ Vermont Extra Sharp White Cheddar Cheese Bar
2 tablespoons fresh chives, minced

Steps:

  • Preheat the oven to 350°F (180°C). Grease a silicone 24-cup mini muffin tin with nonstick spray.
  • In a large bowl, whisk together the eggs, heavy cream, milk, Himalayan Pink Salt, and Black Pepper until smooth. Pour into a spouted liquid measuring cup.
  • Unroll the pie crust and punch out circles the same size as the bottom of the muffin cups. Place the circles in the muffin tin and press down slightly.
  • Chop the Handpicked Broccoli Florets and divide evenly between the muffin cups.
  • Chop the Center Cut Bacon and divide evenly between 8 of the muffin cups. Add the diced red onion to another 8 muffin cups, leaving the remaining 8 cups with just broccoli.
  • Pour the egg mixture into each of the muffin cups until just filled.
  • Top each muffin cup with a sprinkle of Vermont Extra Sharp White Cheddar Cheese.
  • Bake the mini quiches for 40 minutes or until the edges just start to turn golden and the centers are set. Remove from the oven and let cool completely.
  • Pop the mini quiches out of the muffin tin. Garnish with the chives and season with Himalayan Pink Salt and Black Pepper before serving.
  • Enjoy!

4 large eggs
1/2 cup melted butter
1 1/2 cups shredded cheddar cheese
1 (8 ounce) package corn muffin mix
1 (10 ounce) package frozen chopped broccoli, cooked and drained
1/2 cup chopped scallion (optional)

Steps:

  • In a large bowl, beat eggs with an electric mixer until light colored.
  • Add butter and cheese and mix on low.
  • Add muffin mix, broccoli and scallions and mix at low speed for another minute.
  • Coat a 12 cup muffin pan with cooking spray; divide batter among muffin cups.
  • Bake at 375 degrees for 15 minutes until light golden brown.
  • Cool on a rack before turning muffins out of pan.
