CHINESE BROCCOLI (GAI LAN) WITH OYSTER SAUCE
Chinese Broccoli (Gai La) with Oyster Sauce is a common dish that you'll find in a lot of Chinese homes or restaurants. If you've ever been to a dim sum place, this is often one of the only the healthy green vegetable dishes that comes around on the carts.

Steps:
- Boil 2 quarts/liters of water in your wok or a large pot, and add the salt and oil directly to the water.
- When the water reaches a good raging boil, carefully add the whole stalks of Chinese broccoli. (Depending on how much you have, you may want to work in two batches.)
- Use tongs or a pair of chopsticks to submerge the veggies completely and cook for 1-2 minutes, until tender but still a bit crunchy. (If you like the veggies soft, leave them in a bit longer.)
- Use a pair of tongs or chopsticks to take the Chinese broccoli out of the water. Carefully shake off excess liquid and arrange on a plate. Once they are all plated, you can drain any excess water that may have pooled on the plate.
- Drizzle a couple tablespoons oyster sauce evenly over the veggies and serve!

BROCCOLI AND MUSHROOMS IN OYSTER SAUCE
I like this best when made with fresh shiitake mushrooms, but regular button mushrooms are just fine too.

Steps:
- Clean broccoli.
- Trim off flowers into bite-size pieces, lightly peel broccoli stalks and slice into diagonal medallions.
- Heat wok on high. Add the oil and when the oil is hot add the broccoli, stir-fry rapidly until the broccoli is covered in oil.
- When the wok is no longer oily, add a splash of water or chicken stock and continue to fry, stirring constantly for 3 minutes, replenishing water/chicken stock whenever wok becomes dry.
- Toss in the prepared mushrooms and the garlic, stir, add half of the oyster sauce, stir, cover and simmer at medium heat two minutes.
- Serve drizzled with the remaining oyster sauce.

- Wash, dry, and cut broccolini into thirds.
- Heat oil over high in a wok or similar type pan.
- Stir fry the stems first for about 3-4 minutes. You may need to turn the heat down to medium high.
- Add the top leaf portion, and cook for another 3-4 minutes.
- Shut off heat and add oyster sauce, stirring to coat. Serve.

- Preheat oven to 375 degrees F.
- Whisk together oil, oyster sauce and vinegar in a large bowl until evenly combined (the mixture will not emulsify). Add broccoli, sprinkle generously with pepper and toss well to evenly coat the broccoli in the sauce.
- Spread on a baking sheet and roast, stirring the broccoli halfway through, until tender and beginning to brown, 10 to 15 minutes.

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water until cooked through yet firm to the bite, about 12 minutes; drain.
- Mix soy sauce, oyster sauce, brown sugar, fish sauce, garlic powder, and ground ginger in a bowl until the sugar dissolves.
- Heat oil in a large skillet or wok over medium heat; cook and stir shrimp in hot oil until they start to change color, 1 to 2 minutes. I would crave their chicken wings, plantains and chicken with broccoli, but my mother was less than happy with my junky leanings.
