GARLIC PARMESAN ROASTED BROCCOLI RECIPE BY TASTY



Garlic Parmesan Roasted Broccoli Recipe by Tasty image

Here's what you need: broccoli, oil, lemon juice, vegetarian parmesan cheese, garlic powder, red pepper flakes, salt, pepper

3 heads broccoli
2 tablespoons oil
1 tablespoon lemon juice
¼ cup vegetarian parmesan cheese
2 teaspoons garlic powder
½ teaspoon red pepper flakes
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 400°F (200ºC).
  • Separate the crowns and snip off any leaves of the broccoli.
  • On a prepared baking sheet, combine broccoli and remaining ingredients. Mix evenly.
  • Bake for 35-40 minutes.
  • Allow to cool for 5 minutes.
  • Enjoy!

This is quick and very addictive. The original recipe came from a magazine, I 'm not sure which one. It's probably from bon appetit. I have so many from that magazine that I've saved. I have tweaked it a little to suit my way of doing things.

1 1/4 lbs broccoli florets, cut into florets (about 8 cups)
3 1/2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup parmesan cheese
1 pinch red pepper flakes

Steps:

  • Preheat oven to 450. Toss broccoli with all the other ingredients. Transfer to a rimmed baking sheet. Spread them out in a single layer. Sprinkle with salt and pepper.
  • Roast 15 minutes. Toss them and turn them over and roast another 8 to 10 minutes until broccoli is browned nicely. Serve immediately. Yum!

Broccoli is loaded with lots of vitamins A and C and several minerals, it is one of the most healthful veggies. This is a spiced up version that is low in fat and not low on flavor. The recipe comes from Williams Sonoma Essentials of Healthful Cooking.

2 tablespoons extra virgin olive oil
2 -4 garlic cloves, sliced crosswise into thin slices
1/4 teaspoon red pepper flakes
1 1/2 lbs broccoli

Steps:

  • In a small skillet over medium-low heat combine the olive oil, garlic and red pepper flakes.
  • Heat, stirring frequently, just until the garlic begins to turn golden on the edges, approximately 1-2 minutes.
  • Remove from heat, strain through a fine-mesh sieve, reserving the oil and garlic in separate containers.
  • Cut the broccoli into florets, trimming the stalks until they are about 1-2 inches long.
  • Place the cut broccoli in steamer basket over boiling water, cover tightly and stem until crisp tender, 4-6 minutes.
  • Place broccoli immediately into a serving dish, sprinkle with garlic flakes and 1 tablespoon of the oil.
  • Serve.
  • The remaining oil can be saved and used in other dishes later.
