1 bunch broccoli, cut into spears
4 teaspoons minced garlic
2 tablespoons olive oil
1/4 teaspoon salt
Dash pepper
1 cup shaved Asiago cheese

Steps:

  • Place broccoli in a large skillet; cover with water. Bring to a boil. Reduce heat; cover and simmer for 5-7 minutes or until broccoli is tender. Drain well. Remove and keep warm., In the same skillet, saute garlic in oil for 1 minute. Stir in the broccoli, salt and pepper. Top with cheese.

2 tablespoons vegetable oil or 2 tablespoons olive oil, divided
4 boneless chicken breasts, cut into 1-inch squares
table salt & fresh ground pepper
1 medium minced onions or 1 cup minced onion
3 medium garlic cloves, minced
1/4 teaspoon dried oregano
1/8 teaspoon red pepper flakes
8 ounces ziti pasta or 2 1/2 cups ziti pasta
2 3/4 cups water, divided
1 2/3 cups low sodium chicken broth
12 ounces broccoli florets or 4 cups broccoli florets
1/2 cup heavy cream
1 ounce asiago cheese, grated, plus extra
asiago cheese, grated, for serving or 1/2 cup asiago cheese
1 tablespoon fresh lemon juice

Steps:

  • Heat 1 tablespoon of the oil in a 12-inch nonstick skillet over medium-high heat until just smoking.
  • Add the chicken pieces in a single layer and cook for 1 minute without stirring.
  • Stir the chicken and continue to cook until most, but not all, of the pink color has disappeared, and the chicken is lightly browned around the edges, 1 to 2 minutes longer.
  • Transfer the chicken to a clean bowl and set aside.
  • Add the remaining tablespoon of oil, onion, and 1/2 teaspoon salt to the skillet.
  • Return the skillet to medium-high heat and cook, stirring often, until the onion is softened, 2 to 5 minutes.
  • Stir in the minced garlic, oregano, and red pepper flakes, and cook until fragrant, about 30 seconds.
  • Add the ziti, 2 cups of the water, and the broth.
  • Bring to a boil over high heat and cook until the liquid is very thick and syrupy and almost completely absorbed, 12 to 15 minutes.
  • Add the broccoli and the remaining 3/4 cup water.
  • Cover, reduce the heat to medium, and cook until the broccoli turns bright green and is almost tender, 3 to 5 minutes.
  • Uncover and return the heat to high.
  • Stir in the cream, Asiago cheese, and reserved chicken with any accumulated juices and continue to simmer, uncovered, until the sauce is thickened and the chicken is cooked and heated through, 1 to 2 minutes.
  • Turn off the heat, stir in the lemon juice and season with salt and pepper to taste.
  • Serve.

1 head cauliflower, cut into 1-inch pieces
¼ cup dry white wine
2 bay leaves
1 clove garlic, diced
1 (8 ounce) package cream cheese, softened
4 ounces diced Asiago cheese, or more to taste
salt and ground black pepper to taste
1 tablespoon chopped fresh rosemary
2 teaspoons fresh thyme leaves

Steps:

  • Bring chicken broth to a boil in a large pot. Cook cauliflower, white wine, and bay leaves in the boiling broth over medium-high heat until cauliflower is tender, 10 to 15 minutes.
  • Mix garlic, cream cheese, and Asiago cheese together in a bowl.
  • Strain cauliflower from broth with a slotted spoon and add to the cheese mixture. Remove bay leaves from stock and discard.
  • Mash cauliflower and cream cheese mixture with a potato masher until well mixed; season with salt and black pepper.
  • Stir cauliflower mixture into the broth until smooth. Season with rosemary, thyme, salt, and black pepper.

This easy asiago & broccoli shells dish is the perfect weeknight vegetarian dinner - the whole thing can be on your dinner table in 20 minutes!

2 cups medium shells (measured uncooked, about 180 grams of pasta)
⅓ cup olive oil
3-5 cloves garlic, minced (to taste)
¼ tsp red pepper flakes (plus more for serving if desired)
1.5 cups finely chopped broccoli (just the ends (the crumbly green bits))
3 tbsp reserved pasta water (make sure there's salt in your pasta water)
¾ cup asiago, shredded (parmesan can work too )
salt and pepper (to taste)
diced red onion (adding a small handful along with the broccoli is optional but so delicious)

Steps:

  • Cook your medium shells according to package directions in a large pot of salted water. While the water comes to a boil, chop your broccoli bits (into small pieces since they're not cooking for long), mince your garlic, and chop your red onion if you're using it.
  • While your pasta is cooking, add the olive oil, red pepper flakes, and minced garlic to a large sauce pan on medium-low heat. Stir gently, and let it cook for at least five minutes.
  • When there's just a few minutes left for the pasta to cook, add your chopped broccoli bits (and red onion, if using) and salt and pepper (to taste) to the olive oil mixture. Stir well and turn the heat to medium.
  • Before you drain your pasta, reserve three tablespoons of the salty pasta water and set aside.Once you've drained the pasta, add it to the broccoli mixture and stir well. Then, add the reserved pasta water and the shredded asiago and stir for at least another minute, until the liquid is mostly absorbed and the cheese is melted. I serve mine topped with a bit more asiago, red pepper flakes, and ground black pepper. Sometimes I'll add an extra splash of olive oil too. Dig in and enjoy!

  • Simmer broccoli in 1/2-inch boiling, salted water in a shallow covered skillet for 6 or 7 minutes, until tender. Drain broccoli and remove from pan. Return pan to stove top over medium heat.
