Everybody's favourite Chinese Beef and Broccoli - with noodles! I make this in a large skillet because it serves 4 so there's too much for a wok. If you scale it down to serve 2 (use scaler by hovering over Servings), you can make this in a wok. See notes for how to make this with CHARLIE, my all purpose stir fry sauce. Recipe VIDEO below.

- Sauce: Place water and cornflour in a bowl, mix. Then add remaining ingredients and mix.
- Beef: Place in a bowl and add 1 1/2 tbsp Sauce. Mix.
- Broccoli & Noodles: Bring a large pot of water to the boil. Add broccoli, cook for 1 minute. Add noodles then after 15 seconds, use a wooden spoon to separate the noodles then immediately drain (don't have the noodles in the water for more than 1 minute).

- Place the ramen noodles in a large bowl (discard the seasoning packets or save for another use) and pour the boiling water over them. Let sit for 6 minutes, stirring every now and then to break up the noodle blocks. Drain and rinse under cold water. Set aside.
- In a small bowl, combine the garlic, cornstarch, sesame oil, lime juice, and soy sauce. Stir well, then set aside.
- Place the broccoli in a large, microwave-safe bowl and microwave for 1½ minutes, until soft. Set aside.
- Heat 1 teaspoon of olive oil in a large, nonstick pan over high heat. Add the steak to the pan and toss with 2 tablespoons of the reserved sauce. Cook until browned, about 2 minutes. Remove from the pan and set aside.
- Heat another teaspoon of olive oil in the pan, then add the onion. Cook, stirring often, until browned, about 4 minutes.
- Add the broccoli and cook until lightly browned, about 2 minutes. Remove from the pan and set aside.
- Add the remaining teaspoon of olive oil to the pan, then add the noodles and the remaining sauce. Cook, stirring constantly, until the noodles soak up the sauce. Return the cooked vegetables and steak to the pan and stir to distribute.
- Transfer the noodles to a serving dish and garnish with green onions, cilantro, and sesame seeds, if using.

- Combine soy sauce, broth, brown sugar, garlic, and ginger in a small mixing bowl. Place half of the mixture in a gallon-sized Ziploc bag, add sliced beef, seal (pressing as much air out as you can), and refrigerate for at least 2 hours.
- Add cornstarch to remaining mixture in bowl and stir until smooth, cover and refrigerate until ready to use.
- Prepare linguini noodles according to package directions. While noodles are cooking, heat 2 teaspoons oil in a large skillet over medium-high heat and add steak slices, discarding excess marinade. Stir-fry until just browned, remove steak from skillet and set aside.
- Add remaining oil to the same skillet and stir-fry peppers, onion, carrots, and broccoli until onions become clear and soft. Add cabbage and beef to the skillet and cook until cabbage becomes soft.
- When noodles are done cooking, drain and toss with beef/vegetable mixture, adding the reserved sauce mixture. Toss until noodles are coated in sauce. Top with sesame seeds and/or red pepper flakes (optional) and serve immediately.

BEEF & BROCCOLI STIR-FRIED NOODLES
There are many variations of beef and broccoli--it can be served with just about any type of sauce. This version is ready quickly and can be made in a skillet instead of a wok. Just be sure to prep all the elements in advance-once you start cooking, there's no time for chopping or slicing! It's kept simple with minimal ingredients and also utilizes ones you may already have in your pantry, like dried ramen noodles. You can swap the NY strip steak for rib eye or sirloin.

- Bring a pot of water to a boil and season generously with salt. It should be as salty as the sea. Prepare an ice bath and season generously with salt. Add the broccoli florets to the boiling water and cook for 2 to 3 minutes until bright green and tender, but still slightly crisp. Remove the broccoli and immediately plunge into the ice bath and set aside, but reserve the boiling water for the noodles later.
- Heat 2 tablespoons of the canola oil in a large saute pan over medium-high heat until it shimmers. Season the steak with salt. Add the steak in batches to the pan and cook, turning occasionally, until brown and crispy, 2 to 3 minutes. Remove the steak from the pan and set aside. Repeat with remaining steak.
- To the same pan, add the remaining 2 tablespoons canola oil. Add the scallion whites, garlic, ginger, onions and rice wine vinegar. Saute for 1 to 2 minutes. Add the oyster sauce, chicken stock and chili paste and stir to combine.
- To the same pot of boiling water, add the noodles and cook according to package directions. Using tongs, remove the noodles and add directly into the saute pan with veggies. Add the broccoli florets and steak and toss to combine, ensuring the noodles, steak and broccoli are fully coated in the sauce. Mix in the broccoli stems. Plate and garnish with reserved scallion greens.

- Put the stock cube into a pan of water, then bring to the boil. Add the noodles, bring the stock back to the boil and cook for 2 mins. Add the broccoli and boil for 2 mins more. Reserve a cup of the stock, then drain the noodles and veg.
- Heat a frying pan or wok, add the sesame oil and stir-fry the mushrooms for 2 mins until turning golden. Add the garlic, chilli flakes and most of the spring onions, cook 1 min more, then tip in the noodles and broccoli. Splash in 3 tbsp of the stock and the hoisin sauce, then toss together for 1 min using a pair of tongs or 2 wooden spoons. Serve the noodles scattered with the cashew nuts and remaining spring onions. Add a dash more sesame oil to taste, if you like.

BROCCOLI STIR FRY WITH KELP NOODLES

- Rinse kelp noodles and place them in a bowl of warm water and set them aside.
- Stir fry garlic and onions in sesame oil over medium heat, until brown. Add in broccoli & spinach to saute.
- Add kelp noodles and a few dashes of coconut aminos, then pour in the vegetable broth.
- Add pink salt and coconut aminos to taste, stir until the noodles soften.
- Serve hot topped with sesame seeds and crushed red pepper flakes.

BROCCOLI TOFU RAMEN NOODLES
Tastes like takeout style broccoli and tofu ramen noodles stir fry! Made with simple ingredients and a homemade stir fry sauce!

- Drain the tofu blocks and place between a dish towel. Place something heavy on it for a few minutes to drain out excess moisture.
- Dice tofu into chunks
- Next, start cooking the tofu. I used an air fryer, and misted the tofu chunks with olive oil spray. Also, mist the bottom of the air fryer basket before adding the tofu. This is my favorite way to make tofu as it is SUPER crispy, just check/shake every 5 - 10 minutes, and set to the highest heat, until crispy on all sides. It should take between 20 - 30 minutes. (see notes at the bottom for alternate ways to cook the tofu if you do not have an air fryer).
- While the tofu is cooking, mince the garlic and ginger. Chop up the green onions and fresh broccoli florets
- To a large skillet, add 2 tablespoons of sesame oil, ginger, garlic, broccoli, and green onions
- Cook on medium heat for 10 minutes, stirring often
- Shake together a batch of the 3 ingredient stir fry sauce recipe
- Add half of the stir fry sauce to the skillet, and cook an additional 10 minutes
- Boil the water to cook the ramen noodles, and discard the flavor packets
- Cook the ramen noodles according to package instructions
- Once the broccoli is done (should still have some texture and not mushy), add the cooked ramen noodles and finished tofu to the skillet, along with the last half of the stir fry sauce
- Stir and heat an additional 5 minutes, until everything is coated in sauce
- Serve and enjoy. We love it both with and without sweet chili sauce on top!

- Prepare the stir fry sauce by adding all of the ingredients together and whisking sauce until mixed well. Set aside.
- Place ramen noodles in bowl of hot water and let sit for 3 minutes. Then drain hot water and rinse in cold water. Set aside.OPTIONAL: Put your cut up broccoli in some hot water so it will start to soften while you are cooking the chicken.
- In a large skillet, over medium heat, add oil. Season chicken pieces with salt and pepper and add to skillet. Cook chicken until done and no longer pink. Remove chicken from pan and set aside. Cover chicken with foil to keep warm.
- Drain broccoli (if you had it sit in hot water). Add cut up broccoli along with 1 tbsp. of water to the skillet you cooked the chicken in. Let it cook/steam until it turns bright green and begins to soften. Cook broccoli to your liking. Add chicken back into the pan.
- Take your prepared sauce and whisk it again to make sure everything is mixed well. Pour sauce into the pan over the chicken and broccoli. Mix well, making sure the sauce covers it all.
- Add your drained ramen noodles and mix well. Let the saucen thicken a bit, then remove from heat.
- Top with chopped green onions (or you can put green onions on each individual serving). Serve immediately.
SIMPLE MUSHROOM BROCCOLI STIR FRY NOODLES

- Prepare the sauce first, so it's ready to go when needed. In a small bowl stir together the soy sauce, toasted sesame oil, chili garlic sauce, brown sugar, water, and cornstarch until the cornstarch is dissolved. Set the sauce aside.
- Cook the noodles according to the package directions, then drain in a colander. The wide rice noodles I used needed to be boiled for about 7-8 minutes.

- Bring 3 quart water to boil in a large pot.
- While water heats, whisk together soy sauce, sugar, sesame oil, cornstarch and vinegar until smooth and set aside.
- When water boils add soba noodles and cook 8-10 minutes.
- Meanwhile, warm vegetable oil in a wok or large skillet over medium heat. Add garlic and cayenne and cook, stirring constantly, until garlic turns golden (less than a minute).
- Stir in broccoli, water and sake; cover and cook 3-4 minute.

STIR FRY CHINESE BROCCOLI NOODLE

- In a bowl combine the rest of chicken broth with 3 tablespoon of soy sauce, 2 tablespoon of oyster sauce, 1/2 tablespoon of sugar, Shaohsing and 2 tablespoon of Yoshida sauce set aside.
- Heat 1 tablespoon of oil in a wok add half of the garlic fry until brown then add beef cook until almost done (the color not red) take out set aside
- Add 1 tablespoon of oil add broccoli with ¼ cup of chicken broth stir until the broccoli almost tender, take it out set aside
- Now add the last tablespoon of oil to the wok then last half of garlic stir fry until brown add noodle, stir fry with the rest of the sauce, mix it quickly, add the meat and broccoli back to the wok, stir fry until the noodle is hot and the flavor come together.
- Turn the heat off garnish with roasted sesame seeds

BROCCOLI STIR FRY WITH NOODLES

- Bring water to a boil. Place rice noodles in a large mxing bowl, pour boiling water over them and let them soften, about 15 minutes. When soft, drain and cut the noodles with kitchen scissors into 2-inch lengths and set aside.
- In a bowl combine ketchup, oyster sauce, lime juice, red pepper flakes, sugar and chicken broth.
- Heat oil in a large skillet or wok, over high heat. Add the garlic and stir fry for 10 seconds. Add broccoli and stir fry until it turns bright green, about 1 minute. Add ketchup mixture and bring to a simmer. Add cut soaked rice noodles and stir the ingredients together. Cover and simmer until broccoli is barely tender, 2 to 3 minutes.
- Season with salt and serve immediately sprinkled with cilantro and peanuts; serve with lime wedges.
