I never throw out broccoli stems. If I don't use them for pickles or stir-fries, I'll shred them and use them in a delicious slaw like this one.

3 cups shredded broccoli stems (4 to 5 large stems)
Salt to taste
1 red bell pepper, cut in thin 2-inch julienne
1/4 to 1/2 cup chopped cilantro (to taste)
2 tablespoons slivered mint leaves
1 serrano chile, minced
2 1/2 tablespoons seasoned rice vinegar
1 teaspoon Dijon mustard
Salt to taste
2 teaspoons minced or grated fresh ginger
1 small garlic clove, minced or puréed (optional)
1 tablespoon dark sesame oil
3 tablespoons grapeseed or sunflower oil
1 tablespoon black sesame seeds

Steps:

  • Place the shredded broccoli stems in a colander, sprinkle with salt, toss and leave to drain for 15 to 30 minutes. Squeeze out excess water.
  • In a large bowl, combine the broccoli stems, bell pepper, cilantro, mint, and chile and toss together. In a bowl or measuring cup whisk together the vinegar, mustard, salt to taste, ginger, garlic, sesame oil and grapeseed or sunflower oil. Toss with the shredded vegetable mixture. Serve or refrigerate until ready to serve. Sprinkle each serving with black sesame seeds.

Don't even think about throwing out your broccoli stems. Use a mandoline to slice vegetables into planks, then stack and slice crosswise with a knife for a julienned cut.

1/4 cup mayonnaise (preferably Hellmann's)
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons lemon juice (from 1 lemon)
1 teaspoon Dijon mustard
Coarse salt and ground pepper
6 broccoli stems (from 3 pounds broccoli, florets reserved for another use), peeled and finely julienned (3 cups)
3 to 4 ribs celery, finely julienned (1 cup)
1 granny smith apple, cored and finely julienned (2 cups)

Steps:

  • In a small bowl, whisk together mayonnaise, olive oil, lemon juice and mustard. Season with salt and pepper.
  • In another bowl, combine broccoli, celery and apple. Pour over dressing and toss to combine. Season with salt and pepper. Serve.

⅛ teaspoon ground black pepper
3 scallions, sliced
¼ cup dried cranberries

Steps:

  • Place cabbage, broccoli coleslaw mix, and tomatoes in a large bowl.
  • Whisk vinegar, oil, sugar, salt, garlic powder, and black pepper together in a small bowl until combined. Pour over the coleslaw to coat; stir in scallions, cranberries, and almonds. Cover with plastic wrap and refrigerate until flavors meld, 8 hours to overnight.

My Broccoli Stem Slaw is crisp, colourful and totally delicious. I make it from simple, everyday ingredients and yet every bite of this salad is full of texture and bright flavours, all of which complement each other. It is the perfect side dish to serve with a barbecue, alongside a family dinner or to take on a picnic. It is also ideal to serve alongside a burger or in a sandwich.

4 broccoli stems (See Note 1)
1 large carrot (See Note 2)
1 large apple (See Note 2 and 3)
3 tsp lemon juice - freshly squeezed (See Note 3)
1/4 cup dried cranberries
1/4 cup whole egg mayonnaise
1/4 cup plain Greek yoghurt
1 tsp Dijon mustard
2 tsp honey
freshly ground black pepper - to taste
sea salt (add at the last minute) - to taste (See Note 4)

Steps:

  • Wash and peel the broccoli stems, removing the tough, fibrous layer, using either a sharp knife or a vegetable peeler.
  • Cut the broccoli stalks into matchsticks (julienne). First, slice the stem into thin planks. Then stack them together and slice again to make matchsticks. See Note 5.Add the broccoli stem matchsticks to a bowl.
  • Wash the carrot and cut into matchsticks using the same method as for the broccoli stem. Add to the bowl with the broccoli stems.
  • Cut the apple into matchsticks, add to a separate small bowl and toss with the lemon juice. Then, add to the bowl with the broccoli stems and carrot.
  • Using the bowl which contained the apple, combine all the dressing ingredients well. Check that the balance of flavours is to your taste.
  • Add the dressing to the broccoli, carrot and apple and toss well together. See Note 6.Refrigerate for 30 minutes before serving to allow the flavours to blend together.Season to taste just prior to serving.
  • Serve with the dried cranberries sprinkled on top.

1 (12-ounce) package broccoli slaw* OR 4 cups shredded broccoli stems + 1 shredded carrot
OR 4 cups combo of shredded cabbage + broccoli slaw (or any slaw mix)
1/2 cup Veganaise (OR your favorite mayo)
1.5 tablespoons honey (OR white sugar)
1 tablespoon fresh lemon juice
1 tablespoon apple cider vinegar
1/4 teaspoon sea salt
a few spins freshly ground black pepper (about 1/8 teaspoon)

Steps:

  • In a medium mixing bowl, whisk together the dressing ingredients. I like to do this in the bowl I plan to serve this in.
  • Add the broccoli slaw mix and gently toss it all together. Be patient and give it a minute if the dressing doesn't look like enough (it is!)-the broccoli will start to release some water and it will all come together into a creamy slaw after a minute or so. Refrigerate until it's time to serve.
  • This slaw is best the day you make it, but it keeps well in the refrigerator (covered), up to 3 days. Cabbage-based slaw keeps in the refrigerator for about two days.

I always cut the tops off the broccoli and am left with the stems on the counter. It makes me want to put them to good use! The stems are meaty and have a slight mustard flavor, but they can often be tough. Roasting them tenderizes the texture so they can be mixed with the florets for a tasty salad. As a side note, you can also roast the stems even more until completely soft and puree them for a stem pesto. There's a group of flavors in this dish that all work nicely: broccoli, mustard, horseradish and arugula. It's also a vibrant green dish that's great for spring!

4 small heads broccoli with stems
3 tablespoons extra-virgin olive oil, plus additional for drizzling
Kosher salt and freshly ground black pepper
1/4 cup Dijon mustard
1/4 cup extra-virgin olive oil
2 tablespoons creamed horseradish
1 tablespoon lemon zest plus 2 tablespoons lemon juice
2 pinches sugar or a dash of honey
10 to 12 fresh whole tarragon leaves
1 heaping cup baby arugula leaves

Steps:

  • For the broccoli: Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cut the florets into small, fairly even-sized pieces. Trim off the hard bottom of the stems and peel the stems like carrots. Cut the peeled stems into about 1/2-inch rounds. You should have 8 to 9 cups loosely packed broccoli. Arrange the stems and florets in a single layer on the baking sheets, with all of the stems on one sheet. Toss with the olive oil and season with salt and pepper. Roast until the broccoli florets and stems are tender and a little browned, 15 to 20 minutes.
  • For the vinaigrette: In a large bowl, whisk together the mustard, oil, horseradish, lemon zest and juice and a pinch of sugar or honey. If the dressing is too thick, whisk in a splash of water. Add the tarragon.
  • To serve: Toss the broccoli stems in the dressing to coat them fully. Add another pinch of sugar. Add the florets and gently toss to coat. Use scissors to cut the arugula into bite-size pieces into the bowl, add another drizzle of oil and gently toss again.

4 carrots, peeled and julienned on a mandolin
3 celery ribs, julienned
1 red onion, julienned
1 Granny Smith apple, skin on, julienned
1/2 cup julienned cornichons
1 1/2 cups mayonnaise
1/4 cup Dijon mustard
1/4 cup cider vinegar
1 clove garlic, smashed and finely chopped
Kosher salt

Steps:

  • Combine all the ingredients. Season with salt to make sure it is delicious. Let sit for at least 1 hour before serving.
