Steps:
- Preheat oven to 350 F, fill round cake pan or pie pan with 1/2 inch boiling water.
- Steam broccoli florets until tender.
- Melt butter in medium sauce pan.
- Add flour to melted butter until smooth.
- Slowly stir in milk.
- Once mixture is smooth add onion, nutmeg and cheese.
- Add broccoli to mix.
- Whipp egg whites into soft peaks.
- Slowly fold in cheese mixture, do not stir.
- Pour egg and cheese mixture into round csserole dish with high sides, approx 1 1/2 quart.
- Place dish in pan with water, bake for 50-60 minutes.

On the day before Thanksgiving I got a frantic call from my best friend. She needed Paula Deen's Broccoli Casserole recipe! I looked on Zaar and couldn't find it so I am posting it now. She says it is the BEST broccoli casserole. I have to take her word for it since I haven't made it.

- Preheat oven to 350°F
- Spray a 13 x 9 inch baking dish with cooking spray.
- In a large bowl, combine broccoli, mayonnaise, cheese, soup and eggs.
- Mix well.
- Place the mixture in pan.
- Top with crushed crackers and pour the melted butter evenly over crackers.
- Bake for 35 minutes or until set and browned.

- Preheat oven to 400 degrees F. Spray a 2-quart baking dish with olive oil.
- Place the broccoli florets in a large microwave-safe bowl. Add 2 tablespoons water. Cover and microwave on high until tender-crisp, about 3 minutes.
- Meanwhile, in another large bowl, prepare the creamy sauce. Mix together the mayonnaise (or sour cream), Dijon mustard, kosher salt, black pepper, garlic powder, cayenne pepper and half of the grated cheddar cheese. Add a little water to thin out the mixture, about 1 tablespoon.
- Drain the broccoli well and add it to the creamy sauce. Gently toss to coat.
- Transfer the coated broccoli to the prepared baking dish. Lightly spray the top with olive oil. Evenly sprinkle the remaining cheddar on top.
- Bake the casserole until golden brown and bubbly around the edges, 15-20 minutes. Let it rest for 5 minutes before serving.

- Pour mixture into a greased baking dish. In a regular bread type pan like the one in the picture this took 1 hour and 10 minutes to bake. If you want to cook it in 45 minutes or less use a pie pan type pan.

- Separate eggs; let stand at room temperature for 30 minutes. Grease a 2-1/2-qt. souffle dish with 1 tablespoon butter; set aside., Cut broccoli into florets; peel and chop stems. Place broccoli in a steamer basket; place in a Dutch oven over 1 in. of water. Bring to a boil; cover and steam for 4-6 minutes or until crisp-tender., In a large saucepan, melt remaining butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add 1-1/2 cups cheese and mustard; stir until cheese is melted., Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Stir in broccoli. - Preheat oven to 350 degrees. Cook chopped broccoli then set aside. Melt butter in saucepan, stir in flour and cook over high heat for 2 minutes. Remove from heat. Add milk, whisk vigorously. Return to heat, stirring until thick and smooth, continue to stir while adding cheese and spices. Remove from heat and add beaten egg yolks little by little -- do not boil or mixture will curdle. Add drained broccoli and set the mixture aside. Beat the cream of tartar with the egg whites with until they are stiff. Fold in 1/3 of the whites to the broccoli mixture. Fold in the remaining egg whites.

This is one of my personal favorites. It is easy to make and an impressive soufflé. A wonderful side dish and great for holiday meals.

- 1. Cook broccoli and drain well then mash.
- 2. Beat egg whites to stiff peaks.
- 3. Combine all ingredients.
- 4. Pour into a greased casserole dish.
- 5. Set casserole dish in a pan of hot water and place in the center of oven.

- 7. Note: Use Miracle Whip not mayonnaise.
