Steps:
- Heat the olive oil in a 10" skillet over medium-low heat.
- Add the garlic and cook for 1 minute.
- Add the broccoli, salt and pepper and toss with the olive oil and garlic until the broccoli turns bright green and becomes tender.
- Remove from the skillet and serve.
BROCCOLI WITH GARLIC AND SOY SAUCE
Steps:
- Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
- For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.
- In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.
SLOW-COOKED BROCCOLI WITH GARLIC & OLIVE OIL

Steps:
- Heat olive oil in a skillet with a tight-fitting lid over medium heat; add garlic and stir until fragrant, about 3 minutes.
- Stir in broccoli stems and cook 2 minutes; add florets and water and cover pan.
- Cook covered 15 minutes; uncover the pan, turn heat up to high and cook just long enough to evaporate any liquid left in the bottom of the pan.
- Sprinkle with lemon juice, salt and pepper, and serve.
- ***The cook time in step 3 seems really long to me -- if you make this please let me know if it's right***.

GARLIC OIL SAUTEED PASTA WITH BROCCOLI

Steps:
- In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
- Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
- Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
- Cook's Note: Use pasta water if the pasta was made fresh.
- Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.
