1 medium head broccoli (, cut into bite-size florets (about 5 cups))
1/4 cup finely diced red onions
1/4 cup shredded red cabbage
3 Tbsp grated carrots
3 Tbs roasted sunflower seeds
2 Tbs sliced almonds
2 Tbs chopped pecans
cooked and chopped bacon
no sugar-added cranberries or raisins
2 Tbsp compliant avocado oil mayo (we like Primal Kitchen) ( OR dairy-free plain yogurt (we like Kite-Hill))
3 Tbsp sunflower seed butter (, (can also sub with 2 tbsp tahini))
3 Tbsp apple cider vinegar
1/2 tsp garlic powder
1/2 tsp fine sea salt
Pinch of black pepper
water (, only as needed to thin out dressing )

Steps:

  • Wash, drain and cut your broccoli into florets.**
  • Add to a large bowl with diced onions, cabbage, carrots and half of the seeds and nuts.
  • Whisk together dressing ingredients. Taste and adjust as needed.
  • Pour half of the dressing over salad and toss well to coat. Chill for at least 40 minutes.
  • Add remaining sunflower seeds and chopped nuts then drizzle on remaining dressing then toss again before serving.

1/2 Cup Sun-dried tomatoes in olive oil, , roughly chopped (75g) (oil squeezed out)
1/2 Cup Pitted Kalamata olives,, halved
1/3 Cup Red onion,, diced
1/4 Cup Roasted salted sunflower seeds
2 Cups Plain, non-fat Greek yogurt
Zest and juice of 1 large lemon
4 1/2 tsp Monkfruit, (or granulated sweetener of choice)
1 3/4 tsp Dried oregano
1 1/2 tsp Fresh garlic,, minced
1 1/2 tsp Dried ground basil
1 1/2 tsp Dried ground thyme
1 tsp Sea salt
Pepper
2 Tbsp Oil from the jar of sun-dried tomatoes

Steps:

  • In a large bowl, mix together ALL of the salad ingredients.
  • In a medium bowl, stir together all of the dressing ingredients,
  • Pour the dressing over the broccoli and stir to coat well. Cover and refrigerate for at least 2 hours, up to overnight, so that broccoli can absorb the dressing and develop the flavor.

Steps:

1 cup mayonnaise
2 teaspoons cider vinegar
½ cup white sugar
2 pounds fresh broccoli, broken into florets

1 cup roasted cashews

As a result, my kids love it- want it in their lunchboxes, etc... It is easily modified by using optional raisins, real sugar instead of artificial sweetener, using peanuts instead of cashews.

1 lb fresh broccoli florets
6 slices bacon, cooked crisp and chopped coarse
1/3 cup cashews, cut coarse
1/2 cup mayonnaise, Best Foods, Hellmanns Mayonnaise
1/4 cup heavy cream
3 (1 g) packets Splenda sugar substitute
1/2 cup raisins (optional)
salt and black pepper

Steps:

  • In a good size pot (6 quart or larger) of boiling water, place the florets of broccoli and cook until water just reaches a boil again. This will result in tender-crisp broccoli.
  • Once water reaches a boil, remove broccoli from heat and dump into a colander.
  • Douse with cold water to stop the cooking.
  • In a bowl, mix the mayo, cream and Splenda.
  • Stir in the nuts and bacon (and optional raisins).
  • Lightly toss in the broccoli.
  • Taste and adjust seasonings, adding salt and pepper, a little extra mayo, Splenda or cream if needed.
  • Refrigerate.
