Creamy Broccoli Pasta image

This creamy broccoli pasta recipe comes together fast and makes a delicious and comforting meatless meal! It's great for a quick and easy yet totally satisfying weeknight dinner.

8 ounces uncooked pasta (I used penne)
3 heaping cups broccoli (cut into small florets)
2 tablespoons butter
1/2 tablespoon flour
1-2 cloves garlic (minced)
1/4 cup chicken or vegetable broth
2 teaspoons lemon juice
1/4 teaspoon Italian seasoning
1 cup heavy/whipping cream
1/3 cup freshly grated parmesan cheese
Salt & pepper (to taste)

Steps:

  • Boil a large, salted pot of water. Cook the pasta al dente according to package instructions. When the pasta is 2-3 minutes away from being done, you will add the broccoli to the water.
  • Add the butter to a skillet over medium-high heat, and once it's melted, stir in the flour and cook for 1-2 minutes.
  • To the skillet, add in the garlic, broth, lemon juice, and Italian seasoning. Let it bubble for a minute or so.
  • Whisk in the cream and let it cook for a few minutes until it's thickened up to your liking, then stir in the parmesan cheese and take the pan off the heat.
  • Drain the pasta and broccoli and add it to the skillet. If the sauce has thickened up too much, add a small splash of the pasta water prior to draining it. Season the pasta with salt & pepper (I'm generous with both) as needed and serve immediately with extra parmesan grated on top if desired.

1/3 cup extra-virgin olive oil
2 cloves garlic, smashed
1/4 teaspoon red pepper flakes
1/4 head broccoli, sliced into very thin florets, stalk peeled and cut into matchsticks
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
Few tablespoons water or pasta cooking water, if needed
2 cups penne pasta, cooked al dente
Parmesan cheese, for garnish

Steps:

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

1/3 cup mayonnaise
1/3 cup plain low-fat yogurt
1 tablespoon pesto sauce
1 1/2 tablespoons lemon juice
2 tablespoons grated parmesan cheese
2/3 teaspoon Dijon mustard
2 cloves garlic, minced
salt
fresh ground black pepper
1 bunch broccoli, cut into pieces
1/2 lb pasta shells
1/3 cup nuts (walnuts, sunflower seeds)
1/3 cup garbanzo beans (optional)

Steps:

  • Prepare dressing first by beating together mayonnaise and yogurt until smooth.
  • Add next seven ingredients.
  • Cover and refrigerate while you prepare the salad.
  • Bring a large pot of water to a boil.
  • Cook pasta as directed, dropping in broccoli pieces in last 2 minutes to blanch.
  • Drain pasta and broccoli, rinse with cold water.
  • Remove as much water from salad as possible.
  • Stir in nuts and garbanzos.
  • Add dressing.
  • Let sit at least 30 minutes before serving; the flavors will come out best if salad is at room temperature.

  • Boil the pasta in salted water as per packet instructions. Meanwhile prepare the broccoli. Cut the stem, then place it on one end on top of a cutting board. Remove the tough outer layer by cutting downwards all the way around. Roughly chop the stem along with the florets.
  • Make broccoli rice by pulsing the chopped broccoli for a few seconds until it starts forming a crumbly mixture (don't overblend and turn it into a paste). It's best to do this in batches to get even crumbs.
  • In a large pan heat up the oil, add the garlic and broccoli, season and cook over a medium heat for 5-6 minutes until softened stirring all the time. Remove from the heat and transfer into a large bowl.
  • To make the sauce heat up the butter, add the flour and whisk until the mixture becomes thick and smooth. Add the milk, increase the heat and cook stirring with a whisk until the sauce thickens and starts bubbling up. Lower the heat then simmer for 1 minute whisking all the time.
