1 Large Head Cauliflower, any variety, core removed, chopped
1 Large Bunch Broccoli, any variety, core removed, chopped
3 cloves Fresh Garlic, minced
1/4 cup Extra Virgin Olive Oil
1 tsp Salt
1/2 tsp Pepper
1 large Lemon, juiced
Zest of lemon
1/3 cup Parmesan

Steps:

  • Preheat oven to 450° and line a large sheet pan with parchment paper.
  • Add the broccoli, cauliflower and garlic to the sheet pan.
  • Drizzle with olive oil.
  • Using a spatula, toss the veggies to evenly coat with the olive oil.
  • Season with salt and pepper, then squeeze the lemon juice over the veggies.
  • Toss again.
  • Bake for approximately 20 minutes or until the veggies begin to get a little crisp on the top.
  • Remove from the oven and add the grated Parmesan and lemon zest.
  • Serve with your favorite protein!

Steps:

  • Preheat oven to 425 degrees. Combine broccoli and cauliflower in a large bowl.
  • In a small bowl stir together olive oil, salt and pepper, garlic powder (or minced garlic) Italian seasoning, and lemon juice, Pour mixture over veggies and toss to coat well.
  • Spread veggies out on a large baking sheet making sure the veggies are in one layer and not overlapping or piled on each other. (You can add lemon slices here if you like for added lemon flavor and garnish). If using parmesan cheese, sprinkle over veggies now.
  • Cook in preheated oven for 15-20 minutes until veggies are fork-tender and begin to brown on the edges. Serve immediately.

A whole head of garlic is roasted along with broccoli florets and cauliflower, basically making your appetizer and side dish in the same pan. Now, do not be alarmed when you get to the part where the foil comes off and you look at the very dark colored broccoli...after the final 30 minutes of roasting, the veggies are so tender and delicious. I normally only like my broccoli to be crisp tender and bright green, but in this recipe I thought the taste made up for its less attractive color. 1 small head cauliflower, cut into florets (2 pounds)
1 lb broccoli, cut into florets (fresh)
1 head garlic
3 tablespoons extra virgin olive oil
1/2 teaspoon salt
1 loaf French bread (baguette style)

Steps:

  • Preheat the oven to 375 degrees F.
  • Place cauliflower and broccoli into a 9 X 13 inch baking dish, toss with the about 2 Tbsp of olive oil, and sprinkle with salt.
  • Cut a bit of the top and sides off the unpeeled whole garlic head, exposing as many of the cloves as possible.
  • Tuck the garlic head into one corner of the same pan and drizzle the head with the remaining 1 Tbsp olive oil (I also pick out any slivers of garlic from the parts I trimmed off and toss them into the pan with the veggies).
  • Cover the dish with foil and bake for 1/2 hour.
  • Remove the cover, stir just the florets and cook for 30 minutes more, until vegetables are tender and nicely browned (yes, the broccoli will be a very dark green).
  • Meanwhile, slice baguette bread into thin bias-cut ovals.
  • Toast in a toaster oven until lightly toasted (to your liking).
  • When the veggies are ready, serve the florets in a serving dish, and place the garlic head onto a plate surrounded by your toasted bread ovals; remove some of the garlic using a butter knife and spread on slices as a paste.

1/4 cup (4 tablespoons) extra virgin olive oil, divided
1 3/4 teaspoons kosher salt, divided

1 cup reserved pasta cooking water

  • Preheat oven to 475ºF, and bring a large pot of water to a boil on the stove.
  • On a parchment-lined baking sheet, toss the broccoli florets with 2 tablespoons olive oil, 3/4 teaspoon salt, and 1/8 teaspoon pepper, making sure the oil and seasonings are evenly distributed. (If you prefer, you can toss the ingredients together in a bowl and then dump the broccoli mixture out onto the baking sheet.) Sprinkle the parmesan, lemon juice, garlic, and remaining 1/4 teaspoon salt evenly over the pasta mixture, stirring as you do so to make sure they are evenly distributed throughout the pasta and not concentrated in one spot. Loosen as desired with reserved pasta cooking water (we usually use about 1/2 - 3/4 cup). Taste and adjust the pasta water, lemon juice, and salt as needed. Serve immediately.

3 tablespoons olive oil
3 cups 1-inch broccoli florets (about 1 medium broccoli crown)
3 cups 1-inch cauliflower florets (about 1/2 medium head)

1 lemon, optional

Steps:

  • Heat the butter and 2 tablespoons of the oil in a large skillet over medium-high heat.
  • Add the broccoli and cauliflower in a single layer, sprinkle with 1/2 teaspoon salt and cook, undisturbed, until the undersides are browned in spots, 3 to 4 minutes. Continue to cook, stirring every 1 to 2 minutes, until browned all over and crispy and tender, about 5 minutes more.

  • Put 2 tablespoons of the olive oil in a large skillet over medium heat. Add the garlic, if using, and cook, stirring occasionally, until it is golden, about 3 minutes. Add the drained vegetable and turn the heat to high. Cook, stirring only when necessary-you don't want the broccoli to fall apart-until the vegetable begins to brown; add the lemon zest and cook for another minute or two.
  • Add the remaining olive oil and the lemon juice, taste and adjust the seasoning, and serve hot or at room temperature.

  • Skip step 1. In step 2, start with 1/4 cup olive oil (and, if you like, add a dried chile). Thirty seconds after adding the garlic, add the broccoli or cauliflower and 1/4 cup water. Cover the pan. Cook, uncovering and stirring occasionally, until the vegetable is tender, 10 to 15 minutes. Taste and adjust the seasoning and serve.
