WHITE WINE BROCCOLI CASSEROLE

A great make-ahead dish. If you're in a hurry, use frozen chopped broccoli instead of fresh.

4 cups fresh chopped broccoli
4 skinless, boneless chicken breast halves - grilled
2 cups shredded sharp Cheddar cheese
½ cup dry bread crumbs
1 (10.75 ounce) can condensed cream of chicken soup
1 cup white wine
1 cup mayonnaise
2 tablespoons curry powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C0.
  • In a medium bowl, combine the cream of chicken soup, white wine, mayonnaise and curry powder. Mix well.
  • In a lightly greased 9x13 inch baking dish layer the casserole as follows: First, all of the broccoli, then 1/3 of the cheese, then all of the chicken, another 1/3 of the cheese, all of the white wine/soup mixture and, finally, top with the bread crumbs and the last 1/3 of the cheese.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes.

6 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
3 pounds broccoli, cut into spears
1 cup Frascati or other dry white wine
1 tablespoon hot red pepper flakes
Grated zest of 1 lemon
Grated zest of 1 orange

Steps:

  • 1. In a 10- to 12-inch sauté pan, heat the olive oil with the garlic over medium-high heat until just sizzling. Add the broccoli and cook, tossing frequently and gradually adding the wine to keep the garlic from browning until the stalks are tender 8 to 10 minutes. Add the red pepper flakes and zests, and tossing well, serve immediately.

4 cloves garlic, peeled
1 ½ teaspoons salt
1 bunch broccoli, cut into florets
⅓ cup olive oil
¼ cup red wine vinegar
1 tablespoon Dijon mustard
½ cup grated Parmesan cheese, or to taste

Steps:

  • Place garlic in a mortar dish or on a cutting board, and sprinkle with salt. Mash with a pestle, or use the flat side of a knife to mash garlic and salt into a paste. Transfer to a medium bowl, and stir in olive oil, vinegar, and mustard. Add the broccoli, and stir to coat. Chill for 3 hours to marinate, stirring occasionally. Sprinkle with Parmesan cheese before serving.

One-Pot Chicken Broccoli in White Wine Sauce image

A quick, easy and delicious one-pan chicken and broccoli dish that I like to serve over a bed of brown rice or mashed potatoes and sprinkled with fresh snipped parsley. Wonderful! I've been making this for my family and friends for over thirty years, now. Hope you enjoy as much as we do! P.S. 4 boneless skinless chicken breast halves, pounded an even 1/4-inch thick (may use chicken cutlets or tenders)
1 cup Italian seasoned breadcrumbs
1/4 cup olive oil
2 tablespoons butter
1/4 teaspoon fresh ground black pepper
1 -2 cup button mushroom, thickly sliced (optional)
2 teaspoons lemon juice (or fresh lemon zest, chopped fine)
1 cup dry white wine
1/2 cup fresh parsley, minced
8 -10 ounces frozen broccoli florets
fresh lemon wedge, optional to serve

Steps:

  • Wash chicken (no need to pat dry), and dip in breadcrumbs to coat both sides. Reserve leftover breadcrumbs.
  • Heat olive oil in a large skillet over medium-high heat. Add the butter, stir to combine.
  • Brown chicken over medium-high heat, about 4-5 minutes per side. Add leftover breadcrumbs, pepper, mushrooms if using, lemon juice or zest, wine, and most of the parsley (reserve a little to sprinkle on the finished dish).
  • Reduce heat to low and add frozen broccoli florets.
  • Cover and continue cooking another 10-12 minutes or until broccoli is done to your liking.
  • Sprinkle finished dish with the reserved parsley, and serve with white wine sauce and fresh lemon wedges.
  • Great with a side of rice pilaf or creamy mashed potatoes--for an extra yummy indulgence, drizzle my Easy Cheese Sauce over the broccoli. Enjoy!

1 tablespoon red chili pepper flakes (optional)

Steps:

  • In a 12 to 14 inch saute pan, heat the olive oil and garlic until just sizzling.
  • Add the broccoli and cook, tossing regularly for 8-10 minutes, until the stem is tender.
  • Use the wine to slow the cooking down if the garlic begins to brown.
  • When the broccoli is tender, add the chili flakes and zest.
  • Place on platter and enjoy!

Not only is it delicious, but a very attractive dish; the onions take on a purplish color from the wine, which contrasts nicely with the bright green broccoli and black olives. I cook broccoli with a very light hand, so these directions are for somewhat "rare" broccoli... if you like it more done, cook for about 10-15 minutes instead of five.

1 1/2 cups onions, chopped
3 garlic cloves, minced
2 (2 1/4 ounce) cans sliced black olives, drained

Steps:

  • Saute onion and garlic in olive oil in a large skillet until soft. Add broccoli, olives, and red wine. Bring to a boil, then reduce heat, cover and simmer for about 5 minutes, stirring once. Season to taste with salt and black pepper (I like LOTS!) (If you like your broccoli a little more "done", cook for 10 minutes or so).

1/4 cup olive oil
2 large cloves garlic, finely chopped
1 large bunch broccoli, cut into floret
1 1/2 cups Sauvignon Blanc
Salt and freshly ground pepper

Steps:

  • In a heavy skillet, heat oil. Remove from heat and add the finely chopped garlic. Stir for 30 seconds, and return skillet to low heat. Add the broccoli and toss until broccoli is coated with oil. Add the Sauvignon Blanc, and salt and pepper, to taste. Simmer uncovered for 5 minutes. Cover and simmer 15 minutes. Transfer the broccoli to a heated bowl with a slotted spoon. Boil the liquid in the skillet over high heat until reduced to 1/2 cup. Pour liquid over broccoli and serve.
