BLISSED-OUT CRISPY CHEESY BROCCOLI GRATIN
Limited surface area. This is the problem with a broccoli gratin made in a casserole-style baking dish, meaning the ratio of crispy-cheesy-crumb-y topping to soft, tender broccoli is just way under optimal balance. With a sheet pan, however, every single morsel of broccoli gets an ample coating of crunch. You know what else is awesome? With a preheated sheet pan (see note), the time it takes to roast the broccoli is minimal-I'm talking 15 minutes, tops, for caramelized edges and florets. Meaning you can hit broccoli bliss in under 20 minutes. Are you in?

- Adjust one oven rack to the upper-middle position and another rack to the position. Place a rimmed sheet pan on the middle rack and preheat the oven to 400°F.
- Toss the broccoli florets with the olive oil and salt in a medium-size bowl. Turn the broccoli out onto the hot sheet pan (it should sizzle!) and roast until the bottom of the florets are nicely browned, about 15 minutes.
- Meanwhile, combine the butter and garlic in a ramekin and place it in the oven until the butter melts, 5 minutes. (Alternatively, combine them in a microwave-safe bowl and microwave on high power in 15-second increments, swirling between each, until the butter melts, 45 seconds to 1 minute.)
- Place the bread crumbs in a medium-size bowl, add the butter-garlic mixture, and toss with a fork. Add the Cheddar and Parmigiano Reggiano cheeses and toss to combine.
- Remove the sheet pan from the oven and sprinkle the broccoli with the cheesy bread crumb mixture. Turn the broiler to high and place the sheet pan on the upper rack. Broil until the cheese is melted and browned, 1 to 2 minutes (watch the bread crumbs closely as broiler intensities vary and you don't want them to burn). Remove from the oven, transfer to a platter-making sure to scrape up all of the crispy, crunchy cheesy bits-and serve.
CHEESY BACON PASTA BAKE WITH BROCCOLI CRUMBLE
Farfalle pasta, mixed with a creamy and savory sauce, is topped with a riced broccoli crumble and baked as a casserole for a quick, easy, and delicious dinner.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
- Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon grease in the skillet. Let bacon cool enough to handle, about 5 minutes; crumble and set aside. Drain cooked pasta and set aside.
- Heat 2 tablespoons bacon grease in a medium saucepan over medium heat. Saute onion and garlic in the hot grease for 2 to 3 minutes. Add crumbled bacon, heavy cream, and 1 tablespoon butter; continue cooking until sauce becomes thick and creamy, 5 to 7 minutes. Mix in gouda cheese and stir until melted. Season with salt and pepper. Remove from heat and mix pasta into the cream sauce. Pour mixture into the prepared casserole dish.
- Melt remaining 2 tablespoons butter in a medium, microwave-safe bowl in a microwave for 20 seconds. Mix in panko bread crumbs and riced broccoli; stir very well to coat in butter. Spread mixture on top of pasta.
- Bake in the preheated oven for 15 minutes. Remove from the oven.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Continue to bake in the preheated oven until crumble is browned, about 5 minutes more.

BROCCOLI CASSEROLE
A favorite of my husband and daughter. A few reviewers have mentioned the number of pans used. This is how I avoid that being a problem. After I cook & drain the broccoli, I place it in the casserole dish while I use the same pan to make the sauce. I then pour the broccoli back into the pan to coat it and return it all to the casserole dish. Rinse the saucepan out, it doesn't need to be 'clean' just rinsed, and then use the same pan to make the melted butter and bread crumb mixture. If you use the microwave to cook your broccoli, just use the casserole dish to cook it in. Hope that helps!

- Cook broccoli until tender, drain.
- In saucepan, heat mushroom soup and grated cheddar cheese, until cheese melts.
- Add cooked broccoli and stir.
- Put in baking dish.
- Melt margarine in pan and add seasoned bread crumbs.
- Stir until moist with margarine and put on top of broccoli.
- Bake at 350 F until bubbly, about 25-30 minutes.

THREE GREENHORNS CRUMBED BROCCOLI
This recipe is from a Vancouver restaurant called "The Three Greenhorns". It was a very "In" place to go when it opened about 35 years ago. Their menu was very different from other placed and although this recipe does not seem like much now it was "IN" then. Still very tasty.

- Sauté the crumbs and shallot in the butter until they are golden; sprinkle on the egg & set aside. Steam the broccoli for approx 10 minutes or until the broccoli is brilliant green and still crunchy. Place broccoli in a baking dish.
- Sprinkle crumb mixture over the broccoli evenly.
- Place in a 450°F oven for 2 minutes to heat the broccoli through.
- Serve.
