10 cups frozen broccoli florets (from two 22-oz bags), thawed and drained
2 cans (14.75 oz each) cream style sweet corn
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs, slightly beaten
2 tablespoons butter or margarine, melted
3/4 cup herb-seasoned stuffing

Steps:

  • Heat oven to 350°F. In ungreased 3-quart casserole or 13x9-inch (3-quart) glass baking dish, mix broccoli, corn, salt, pepper and eggs. In small bowl, mix melted butter and stuffing; sprinkle evenly over vegetable mixture.
  • Bake uncovered about 1 hour or until stuffing is golden and vegetables are hot.

2 (15 ounce) cans cream-style corn
2 (10 ounce) boxes chopped broccoli, thawed
2 eggs, beaten
3/4 cup margarine
2 tablespoons chopped onions
2 cups herb stuffing cubes (Pepperidge Farm)

Steps:

  • Melt the margarine.
  • Mix the corn, broccoli, eggs, 1/4 cup melted margarine, and onion and place in a greased casserole dish.
  • Toss the herb dressing with the remaining melted margarine. Sprinkle on top of the casserole.
  • Bake at 350 degrees for 1 hour.

For the breadcrumbs you can either use homemade bread crumbs, store bought breadcrumbs, or crumb-style stuffing mix (as opposed to the cubes).

6 tablespoons butter
2 cups seasoned bread crumbs
2 eggs
20 ounces frozen chopped broccoli
32 ounces canned creamed corn
2 tablespoons chopped onions
1/2 teaspoon salt
1 dash pepper

Steps:

  • Melt butter, and add bread crumbs and toss to coat.
  • Combine eggs, broccoli, creamed corn, onion, salt and pepper. Stir 3/4 bread crumbs into vegetable mixture.
  • Spoon into 9x13 inch (or two 1.5 quart casseroles) and top with remaining crumbs.
  • Bake at 350 degrees for 45 minutes.
  • OAMC: You can freeze this in a kit form, with the vegetable mixture in a large labeled freezer bag (2 gal. for one full recipe, or two 1 gal. bags) and the crumb topping in a smaller bag, taped together. Or you can freeze in a foil lined casserole (thoroughly crimp foil over top, once frozen solid, you can pop this out of the dish, label and stick back in the freezer). Thaw in refrigerator and bake as directed.

This is VERY easy and the ingredients can be kept on hand. I make this when I have to bring a dish somewhere and don't have time to run to the store, or for last minute company. This was my mother-in-laws recipe from the 1970's, not sure where she got it. Simple but so tasty!

1 (14 3/4 ounce) can whole kernel corn, drain
1 (14 3/4 ounce) can creamed corn
1 (10 ounce) box frozen chopped broccoli (break up)
2 1/2 cups crackers, 'Chicken in a Biskit' by Nabisco, coarsely crushed
1/2 cup unsalted butter, melted
salt and pepper

Steps:

  • Mix corn, creamed corn, frozen broccoli, 1 cup of crushed crackers, and salt and pepper in a small casserole dish.
  • Spread the remaining crackers on top.
  • Pour the melted butter evenly over the crackers.
  • Bake uncovered at 350°F for 30 minutes.
  • Baking longer than 30 minutes may burn the crackers so watch carefully at the end.

1/4 cup butter, divided
2 cups corn flakes, crushed down to 1 Cup
2 tablespoons all-purpose flour
1 (16 ounce) can whole kernel corn, drained
1/4 teaspoon salt
2 (10 ounce) packages frozen broccoli spears, thawed and drained
1 1/2 cups milk
1 1/2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350.
  • Melt 2 T. butter in a large saucepan on low.
  • Stir in flour and salt.
  • Add milk gradually, stirring until smooth. Increase heat to medium and cook until bubbly and thickened, stirring constantly.
  • Add cheese, stirring until melted.
  • Stir in 1/4 cup corn flakes and corn and remove from heat.
  • Arrange the broccoli in a 12 X 7 X 2 glass baking dish. (I have used a 9 x 13 and its fine).
  • Pour the cheese sauce over broccoli.
  • Melt remaining butter in small saucepan. Stir in remaining corn flakes.
  • Sprinkle over the casserole.
  • Bake at 350 for 30 minutes.

  • Cook broccoli florets (frozen or fresh). Once cooked, cut them into smaller pieces. In separate skillet, cook onions for 4-5 minutes until cooked through (no need for oil). Set broccoli and onions aside.
  • In a medium bowl, add corn, broccoli, onions, salt, pepper, and garlic powder. Stir these ingredients together until combined. Add a beaten egg to the mixture, and stir until incorporated. NOTE: Add egg AFTER everything else is combined so onions and broccoli have cooled a bit, so the egg won't scramble when added. Spray a 1½ quart oven-safe dish with non-stick cooking spray, and then pour casserole ingredients into dish.
  • Place crackers in a resealable plastic bag, and finely crush them using a rolling pin or mallet. Once crushed well, mix crumbs with melted butter to combine. Sprinkle crumb topping evenly over surface of casserole.
  • Place dish onto the middle rack of a preheated 350°F oven, and bake for 30-35 minutes. When done, crumb topping should be golden brown and casserole should be bubbly around the edges. TIP: If you want topping to be deeply browned, leave the dish on middle rack and turn broiler on for a couple minutes. Keep an eye on it! Remove dish from oven. Place dish on wire rack to cool for 5 minutes before serving. This allows time for the casserole to firm up just a bit after cooking. Serve, and enjoy! Store leftovers (covered) in refrigerator.
