ONE POT CHICKEN WITH TORTELLINI
This one pot chicken with tortellini is a family friendly meal that's ready in no time! It's packed full of golden brown chicken, veggies and tortellini, all in a creamy parmesan sauce.

Steps:
- Heat the olive oil in a large pan over medium-high heat.
- Add the chicken to the pan and season to taste with salt and pepper.
- Cook, stirring occasionally, until chicken is browned and just cooked through, 4-5 minutes.
- Remove the chicken from the pan; cover with foil to keep warm.
- Add the butter to the pan and melt; whisk in the flour and cook for 1 minute.
- Stir in the chicken broth and cook 2 minutes or until slightly thickened.
- Add the tortellini to the pan and bring to a boil; cook for 4 minutes, stirring occasionally to make sure tortellini is coated with liquid.
- Stir in the cream and parmesan and cook for 1 more minute.
- Add the chicken back to the pan along with the spinach. Cook for 2-3 minutes, or until spinach is wilted.
- Fold in the tomatoes. Sprinkle the parsley over the top and serve.

- In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add chicken; cook 3 to 4 minutes or until no longer pink; remove from skillet, and keep warm.

BROCCOLI AND CHICKEN WITH CHEESE TORTELLINI #RECIPE
1 package of Cheese tortellini (dried. Refrigerated or frozen) I used a 12 ounce bag of Barilla dried 3 cheese tortellini found in the pasta aisle 12 ounces of fresh or frozen broccoli florets 1 pound of chicken breast½ cup all purpose flour 2 tablespoons canola or vegetable oil 2 cloves garlic 1 cup chicken broth 1 cup heavy cream ¼ cup grated Parmesan cheese Salt

- Bring a large stock pot of water to boil.
- Add 1 tablespoon of salt to the water and boil the tortellini for 7 minutes.
- Add the broccoli florets to the pasta water and continue to boil for 3 additional minutes. Drain and set aside. (You may have to adjust cooking time according to the type of tortellini used.)
- Save a cup of pasta water after you finish cooking thee tortellini. You may need it to thin out the sauce.
- While waiting for the pasta water to boil start working on the chicken.
- Slice chicken breasts into strips about 2 inches long by ½ inch wide.
- Put flour and 1 teaspoon of salt into a plastic bag, add the chicken strips and toss to coat.
- Shake off excess flour and sauté the chicken in oil over medium heat.
- Lightly brown the chicken on each side, cooking for 5 minutes. If the chicken isn't completely done it will finish cooking in the sauce. Cook the chicken in batches.
- Remove the chicken from the pan and sauté the garlic over low heat for about 30 seconds. Add the chicken broth and cream into the pan and boil to reduce until thick, about 7 minutes.
- Stir in the chicken, tortellini broccoli and Parmesan cheese, simmer for 2-3 minutes. (The flour we tossed the chicken in earlier will help to thicken the sauce). Add salt to taste.
- If your sauce is too think, thin it out with a little of the reserved pasta water. Don't add the entire cup at once. add just enough to get the consistency you need

- Boil tortellini in a large pot of water according to package directions. Add the broccoli to the water during the last minute of cooking. Drain tortellini and broccoli and set aside.
- In the same pot, heat olive oil over medium high heat. Add the cut up chicken breast, salt, and onion powder. Cook until slightly browned and cooked through, about 8 minutes. Remove from pot and set aside.
- In the same pot over medium heat, add the butter, garlic, and flour, whisking until the mixture is lightly browned, about 3 minutes. Continue whisking and pour in the milk. Increase heat until milk lightly bubbles and sauce thickens. Lower the heat and stir in the cheeses until they melt. Add in the tortellini, broccoli, and chicken. Serve warm.

- Heat water in a pan and bring to water to a boil. Add the broccoli and cook for 2 to 3 minutes or until fork tender. Remove with a slotted spoon and set aside.
- Cook the tortellini according to the directions on the package.
- While the tortellini is cooking prepare the sauce for the dish. In a large skillet melt the butter. Add the garlic and basil cook for a minute or two until the garlic softened.

- Preheat the oven to 425°F.
- Bring a large pot of salted water to a boil. Cook the tortellini according to package directions. 2 minutes before the tortellini finishes cooking, add the broccoli to the pot.
- As the tortellini cooks, prepare the chicken and alfredo sauce. Melt half of the butter in a large skillet over medium-high heat. Season the chicken generously with salt and pepper. Add the chicken to the skillet and cook until well-browned all over and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

- CASSEROLE: Preheat the oven to 375 degrees. Cut the broccoli into small pieces (no need to cook beforehand if you chop it small). Chop the chicken into small pieces. Add both to the bottom of a 9x13-inch baking dish. Add the frozen (not thawed and not cooked) tortellini on top. Toss everything to combine.
- SAUCE: Melt 3 tablespoons butter in a small pot over medium heat. Once melted, gradually add in flour, while whisking constantly, until a thick paste forms. Whisk for one minute to cook out the raw flour taste and then gradually add in 1/3 cup of the milk while whisking constantly. Gradually add 1/3 cup chicken stock or broth while continuing to whisk. Add in another 1/3 cup milk, another 1/3 cup stock, last remaining 1/3 cup milk, and last remaining 1/3 cup stock. Whisk after each addition until completely smooth and sauce is thickened. Add in 1 cup of sharp Cheddar cheese and 1/2 cup Parmesan cheese and whisk until completely smooth. Add in sour cream and whisk again until smooth. Stir in the chicken bouillon powder, Dijon mustard, dried parsley, garlic powder, granulated onion, and salt and pepper to taste. (I add 1/2 teaspoon salt and 1/4 teaspoon pepper; add to taste preference -- the Parmesan cheese does add a good amount of saltiness as well.)
- ASSEMBLE AND BAKE: Pour the sauce over everything in the casserole dish and toss ingredients to coat evenly. Make sure the tortellini is covered with the sauce. Sprinkle remaining 1/2 cup Parmesan cheese over top of the casserole. Cover with foil and bake for 30 minutes. Meanwhile, in a saucepan over medium-high heat, melt the 2 tablespoons butter for the topping. Add the panko crumbs and toast, stirring constantly, until panko is light brown and toasted. After casserole has baked for 30 minutes, remove and then sprinkle the topping evenly over the cheese. Bake, uncovered, for another 8-10 minutes or until warm and bubbly. Remove and serve hot.

- Fill a pot with water and place over high heat. Bring to a roiling boil.
- In a microwave-safe dish, combine oil, garlic, chicken broth, and lemon juice. Add chicken and microwave on high for 1 minute and 30 seconds.
- When water boils, add tortellini to pot and stir. When water returns to a gentle boil, add broccoli and stir. Stir occasionally until tortellini is done, approximately 8-11 minutes Drain tortellini and broccoli in a colander. Do not rinse.
