You can substitute ground beef in this meatloaf recipe, if you wish. But you save the calories by using ground chicken. This recipe has a great flavour, texture and aroma!

Steps:
- Preheat oven to 350 degrees.
- Combine chicken and bread crumbs in large bowl.
- Set aside.
- Cut the carrot& onion into chunks and add to blender.
- Add the remaining 7 ingredients to the blender.
- Process in blender until carrot is very fine.
- Pour blender mixture over meat mixture.
- Mix very well using your hands.
- Form mixture into a loaf and place in lightly greased 9" X 13" pan.
- Cover with foil and bake for one hour.
- Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.

- Preheat oven to 350 degrees. Set a steamer basket or colander in a large saucepan filled with 2 inches water; bring to a boil, then reduce to a simmer. Place broccoli florets and stems in basket, cover, and steam until bright green and just tender, 4 to 6 minutes. Remove basket from pan; let cool slightly.
- Brush a 5-by-9-inch loaf pan with oil. In a food processor, pulse onion, carrot, and celery until finely chopped; transfer to a large bowl. Pulse broccoli in food processor until finely chopped. Transfer to bowl.
- Add breadcrumbs, chicken, egg, 1 tablespoon mustard, Parmesan, dill, and salt to bowl. Season with pepper. Using two forks, mix until combined. Transfer mixture to prepared loaf pan.
- Stir together ketchup, remaining 2 teaspoons mustard, and brown sugar in a small bowl until smooth; brush evenly on top of loaf. Set loaf pan on a rimmed baking sheet and bake until glaze is caramelized and a thermometer inserted in center of loaf registers 160 degrees, about 1 hour. Let cool 20 minutes before serving.
CHICKEN MEATLOAF

- Gather the ingredients. Preheat the oven to 350 F. Line a rimmed baking sheet with aluminum foil.
- In a large bowl, combine the ground chicken, breadcrumbs, milk, eggs, onion, parmesan cheese, parsley, ketchup, Worcestershire sauce, salt, garlic powder, dried oregano, and black pepper. Use your hands to mix together until everything is evenly distributed. Do not overwork.
- Shape into 8 x 4-inch loaf on the prepared baking pan.
- In a small bowl, combine the ketchup, brown sugar, and ground mustard.
- Spoon the glaze mixture over the loaf.
- Bake, uncovered, for 35 to 40 minutes or until the meatloaf reaches an internal temperature of 165 F.
- Let stand 10 minutes before slicing and serving.

Steps:
- Heat over to 220 C and roast the peppers for 30 min.
- Cool and peel the roasted peppers.
- Drain and chop the peeled peppers.
- Cut the broccoli head into florets.
- Peel the garlic cloves and chop roughly.
- Put the chicken mince, semoline, egg and mustard into a large bowl.
- Squezze the garlic cloves into the bowl and mix well.
- Add the broccoli florets and roasted peppers, season and mix again.
- Cover a tin by a parchment paper and spoon the meatloaf mix into the tin.
- Flip the overhanging parchment paper over the top.
- Heat the oven to 175 C and bake the meatloaf for 1 hour.
- Cool in the tin for 10 min, then drain off any excess liquid and turn out onto a board.
- Cut into thick slices and serve warm or cold.

- In a large bowl, combine the eggs, milk, ketchup, bread crumbs, 1/2 teaspoon salt, pepper and oregano. - Heat oven to 350°F.
- Mix meat, bread crumbs, onions and 2 Tbsp. steak sauce just until blended.

- Sprinkle chicken with seasonings.
- Heat oil in a skillet over medium-high heat. Add the chicken to the pan and cook 2 minutes or until browned. Flip over and cook an additional 2 minutes.
- Add broth to the pan, scraping up any browned bits. Add broccoli to the pan and cover. Cook covered about 3-4 minutes or until tender crisp and chicken is cooked through (165°F).

- Preheat air fryer to 350 degrees F according to manufacturer's instructions.
- In a large bowl, combine beef, bread crumbs, Parmesan, milk, egg, ketchup, Worcestershire sauce, Italian seasoning, salt, paprika, onion powder and garlic powder.
- Create a sling using a large piece of foil, roughly 2-3 inches wide that will extend beyond the sides of the meatloaf so you can lift it out after. Lightly grease the top and place the sling into the basket of the air fryer.
- Shape the meatloaf mixture into a log shape (about 6 inches long by 3-4 inches wide and 1.5-2 inches deep) and place on the sling in the air fryer.
- Cook for 30-40 minutes, checking and covering the top with foil partway through if necessary to prevent burning (this is a bigger problem with smaller air fryers, as the element is closer to the meat). Cook until the internal temperature is a minimum 160 degrees F.
- Meanwhile, stir together the ketchup and brown sugar.
- Open the air fryer, brush on the glaze on top and cook for 2 more minutes.
- Remove from the air fryer and let rest for 5-10 minutes before slicing (the longer it rests, the easier it will slice).

- Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.
- Melt butter in a skillet over medium heat. Add onion and garlic and cook until softened, about 4 minutes. Transfer to a large bowl.
