BROCCOLI CHEESE BAKED POTATOES

Broccoli Cheese Baked Potatoes image

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 1h15m

Yield 6 servings

Number Of Ingredients 9

6 russet baking potatoes
2 heads broccoli, cut into small florets
Vegetable oil, for frying
1 medium onion, thinly sliced
4 tablespoons butter
4 tablespoons all-purpose flour
1 1/2 cups milk
2 cups shredded Cheddar
2 cups shredded pepper Jack cheese

Steps:

  • Preheat the oven to 350 degrees F. Poke a few holes in the potatoes with a fork. Bake until tender, 50 to 60 minutes.
  • Meanwhile, bring a pot of water to a boil and fill a bowl with ice water. Blanch the broccoli by throwing the florets into the boiling water until bright green and still slightly crisp, 1 1/2 to 2 minutes. Immediately drain the broccoli and plunge it into the bowl of ice water to stop the cooking process. Remove it from the ice water and set it aside.
  • In a skillet over medium heat, add 1/4 inch of vegetable oil. Add the onions and fry until browned and crisp, 15 to 20 minutes. Drain on paper towels and keep warm.
  • In another skillet, melt the butter over medium heat. Whisk in the flour and cook for a minute or 2, but do not let the flour brown. Whisk in the milk and cook until it thickens. Turn the heat to low, stir in the Cheddar and pepper Jack and cook until they are melted. Add the broccoli and cook, stirring, until the broccoli is warmed through.
  • Make a slit down the length of each potato using a fork. Push in the ends to open up the potatoes and break up some of the potato inside. Pour a ladle of the cheese sauce over each potato. Garnish with the crispy onions and serve while hot.

Broccoli-Cheddar Baked Potato image

Broccoli roasts on a lower rack while the potatoes are baking here. The charred florets are then teamed with a rich cheese sauce atop the fluffy spuds.

Provided by Martha Stewart

Categories     Food & Cooking     Lunch Recipes

Time 1h25m

Number Of Ingredients 9

4 russet potatoes (about 2 1/2 pounds)
2 tablespoons extra-virgin olive oil, plus more brushing
Kosher salt and freshly ground pepper
4 cups broccoli florets
3 tablespoons unsalted butter
3 tablespoons unbleached all-purpose flour
1 1/2 cups whole milk
1 1/2 cups shredded sharp cheddar
Pinch of cayenne pepper

Steps:

  • Preheat oven to 400 degrees. Thoroughly wash and dry potatoes. Prick each in a few spots with a fork. Brush with oil and season with salt.
  • Place potatoes directly on rack and bake until soft and easily pierced with the tip of a knife, 1 hour to 1 hour, 15 minutes, depending on size. Meanwhile, toss broccoli with oil. Spread onto a rimmed baking sheet; season with salt and pepper. When potatoes are halfway through baking, place sheet on rack in lower third. Cook until broccoli is tender and brown in places, about 20 minutes. Remove from oven and set aside.
  • Melt butter in a saucepan over medium-high heat. Whisk in flour. Cook until golden, about 1 minute. Whisk in milk. Boil, whisking, until thickened slightly, 3 to 4 minutes. Remove from heat. Stir in cheddar, cayenne, and 1/2 teaspoon salt until smooth.
  • Remove potatoes from oven. Grab a hot potato with a clean kitchen towel and bang it down firmly on the counter once to fluff up the flesh. Repeat with remaining potatoes. Cut open and season generously with salt and pepper. Top with broccoli and drizzle with cheese sauce; serve.

ALL-NATURAL BROCCOLI CHEESE SAUCE FOR BAKED POTATOES

All-Natural Broccoli Cheese Sauce for Baked Potatoes image

Creamy, quick and easy Broccoli Cheese Sauce features real cheddar cheese and makes a delicious topping for baked potatoes!

Provided by Samantha Skaggs

Categories     Side Dish

Time 1h20m

Number Of Ingredients 9

8 large baking potatoes
16 ounces frozen broccoli florets (OR 6 cups fresh broccoli florets)
4 tablespoons butter
1/3 cup all-purpose flour
3 cups milk (at room temperature)
16 ounces (4 cups) sharp or extra-sharp cheddar cheese (freshly grated)
1/2 teaspoon garlic salt
1/4 teaspoon chili powder
Freshly ground black pepper (to taste)

Steps:

  • Adjust oven rack to center position. Preheat oven to 425°F.
  • Prepare potatoes by washing, drying, and pricking with a fork. Lightly coat each potato with olive oil (I sprinkle a few drops on top and rub it all over with my hand). If desired, sprinkle oiled potatoes with kosher salt. Place potatoes directly on oven rack, allowing a bit of space between each one. Bake for 45 minutes to an hour or until potatoes are tender all the way to the center when pricked with a fork.
  • Fill a large pot with lightly salted water and bring to a boil over high heat. Cook frozen broccoli according to package directions. (Alternatively, if using fresh broccoli, steam or boil to desired tenderness...but it should be tender enough to puree into the cheese sauce later, if desired.) Drain broccoli and set aside.
  • In the same pot that was used to cook the broccoli, prepare cheese sauce. Place over medium heat and melt 4 tablespoons butter. Use a whisk to stir in flour, whisking continuously until light golden brown, about 2 minutes. Continue to whisk while slowly and gradually adding milk. Whisk until sauce is smooth and thickened, between 5 to 10 minutes. Remove pot from heat. Add grated cheese, 1/2 cup at a time, stirring until completely melted and smooth before adding more. Once all cheese has been incorporated and cheese sauce is smooth, stir in garlic salt, chili powder, and pepper, to taste.
  • Stir half of the cooked broccoli into the cheese sauce. Use an immersion blender (or potato masher) to purée/mash the broccoli until the sauce is smooth. Stir in the remaining cooked broccoli florets. Taste sauce and adjust seasonings, adding additional salt and pepper, if necessary.
  • Immediately slice open baked potatoes and serve broccoli cheese sauce on top.

BROCCOLI MAC AND CHEESE WITH BACON AND POTATO NUGGET TOPPING

Broccoli Mac and Cheese with Bacon and Potato Nugget Topping image

I was feeling adventurous one day and wanted to try a non ooey and gooey kind of mac and cheese. This dish bakes up to be light and airy. Good way to add some veggies for the picky eaters in your family. You can also make it lower in fat by using skim milk and low fat cheeses. If you're feeling adventurous, there are many other things you could toss in here such as ham-diced and browned, left over sliced chicken, more potato nuggets or more bacon, spinach, or other veggies hanging out in the fridge that need to be used up.

Time 1h30m

Yield 8

Number Of Ingredients 12

1 (16 ounce) package elbow macaroni
6 slices bacon
2 teaspoons butter
1 head broccoli, cut into florets
1 small onion, chopped
3 eggs
2 cups milk
salt and pepper to taste
¼ teaspoon adobo seasoning
2 cups shredded Cheddar cheese, divided
2 cups shredded mozzarella cheese, divided
20 frozen bite-size potato nuggets (such as Tater Tots®)

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble the bacon and set aside. Heat 1 teaspoon of butter in a skillet over medium heat. Stir in the broccoli and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Whisk together the eggs, the remaining 1 teaspoon of butter, and milk in a large bowl. Season with salt, pepper, and adobo seasoning. Stir in 1 cup of Cheddar cheese, 1 cup of mozzarella cheese, the broccoli mixture and half of the potato nuggets. Place macaroni into the baking dish and pour the cheese mixture over the pasta, mixing well. Top with the remaining 1 cup of Cheddar cheese, 1 cup of mozzarella, bacon, and potato nuggets. Cover with aluminum foil.
  • Bake in the preheated oven until golden brown, 40 to 45 minutes.

  • Preheat the oven to 400ºF. Take the broccoli out of the freezer and allow it to thaw as the potatoes bake. Once thawed, roughly chop the broccoli into small pieces and then set aside until ready to use.
  • Wash the potatoes well, then dry with paper towel or a clean dish towel. Use a fork to prick several holes in the skin of each potato. Pour the olive oil into a small dish, then use your hands to coat each potato in oil. Place the oil coated potatoes on a baking sheet, and season with a pinch of salt. Bake the potatoes for about 60 minutes, or until tender all the way through.
  • When there is about 15 minutes left in the baking time for the potatoes, begin to prepare the cheese sauce. Add the butter and flour to a medium sauce pot. Place the pot over a medium flame and whisk the butter and flour together as they melt. Allow the mixture to begin to bubble and foam, whisking continuously. Continue to cook for 2 minutes more to remove the raw flour flavor, but do not let the flour begin to brown.
  • Whisk the milk into the butter and flour mixture. Bring the milk up to a simmer, whisking frequently. When it reaches a simmer, it will thicken. Once thick enough to coat a spoon, turn off the heat. Season the white sauce with the salt and garlic powder.
