1 (10 ounce) can cream of chicken soup
1 cup water
4 ounces Velveeta cheese, cubes
2 cups broccoli
12 manicotti
1 lb boneless chicken strips
1/4 cup parmesan cheese

Steps:

  • Preheat oven 400 degrees.
  • Mix soup, water, and velveeta.
  • Micowave to melt.
  • Pour 1/2 soup mixture on bottom of 13x9 dish.
  • Add broccoli to remaining soup mixture.
  • Stuff manicotti with chicken.
  • Pour remaining soup on top.
  • Sprinkle with parmesan cheese.
  • Cover with foil.
  • Bake 40 - 50 minutes.

8 ounces manicotti shells
1 (32-ounce) container ricotta cheese
1 1/2 cups (6 ounces) shredded mozzarella chesse, divided
1/4 cup grated Parmesan cheese
1 egg
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (10-ounce) package frozen chopped broccoli, thawed and well drained
2 cups spaghetti sauce

Steps:

  • 1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. 2. Cook manicotti shells according to package directions; drain, rinse, and drain again. 3. In a large bowl, combine ricotta cheese, 1 cup mozzarella cheese, the Parmesan cheese, egg, salt, and pepper. Add broccoli; mix well. 4. Fill each manicotti shell with about 1/3 cup cheese mixture (see Notes) and place in prepared baking dish. Pour spaghetti sauce over stuffed shells and sprinkle with remaining mozzarella cheese. 5. Bake 35 to 40 minutes, or until hot and bubbling.

What an interesting change from tradtional manicotti! You'll love the creamy texture of the cheese sauce! Note: if you slightly undercook the manicotti they will be easier to stuff.

Number Of Ingredients 12

1 medium onion, chopped
2 cups finely dicd ham
2 cups finely chopped broccoli (including stems)
1 cup grated cheddar cheese
2 tablespoons mayonnaise
salt and pepper (optional)
garlic (optional)
1 cup grated swiss cheese
10 cooked manicotti
1/4 cup butter
1/4 cup flour
2 cups milk

Steps:

  • Saute onions until tender.
  • Add ham, broccoli, cheddar cheese, and mayo, (I usually add a pinch of salt and pepper and a dash of garlic to taste too) When cheese is melted, remove from heat and cool slightly.
  • Stuff manicotti with ham mixture, dividing between shells evenly, and place in a greased 9x13 inch pan.
  • Melt butter in saucepan.
  • Add flour and cook 1 minute.
  • Add milk and cook, stirring constantly until thickened.
  • Remove from heat and add swiss cheese, stirring until smooth.
  • Pour sauce over manicotti.
  • Bake at 375 degrees for 30 minutes or until sauce bubbles.
  • Perfect supper with a crisp salad and garlic bread!

1 carton (15 ounces) reduced-fat ricotta cheese
1 small onion, finely chopped
1 large egg, lightly beaten
2 tablespoons minced fresh parsley
1/2 teaspoon pepper
1/4 teaspoon salt
1 cup shredded part-skim mozzarella cheese, divided
1 cup grated Parmesan cheese, divided
4 cups marinara sauce
1/2 cup water
1 package (8 ounces) manicotti shells
Additional parsley, optional

Steps:

  • Preheat oven to 350°. In a small bowl, mix the first 6 ingredients; stir in 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese. In another bowl, mix marinara sauce and water; spread 3/4 cup sauce onto bottom of a 13x9-in. baking dish coated with cooking spray. Fill uncooked manicotti shells with ricotta mixture; arrange over sauce. Top with remaining sauce., Bake, covered, 50 minutes or until pasta is tender. Sprinkle with remaining 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese. Bake, uncovered, 10-15 minutes longer or until cheese is melted. If desired, top with additional parsley.

1 1/2 cups cooked chicken, shredded
1 cup frozen broccoli, chopped, thawed and drained
1/4 cup breadcrumbs
1 egg, beaten
1 (10 1/2 ounce) can cream of mushroom soup
1 cup milk
1 (8 ounce) package manicotti, cooked and cooled to handle

Steps:

  • Preheat oven to 350 degrees.
  • Combine 1c. cheese, chicken, broccoli, bread crumbs, and egg. Mixing well.
  • Fill pasta shells and set aside.
  • Mix soup and milk together.
  • Cover bottom of 9x13 baking pan with 1/2 the soup mix.
  • Place stuffed pasta in a single layer on the soup mix.
  • Pour the rest of the soup mix on top of the pasta.
  • Cover with foil and bake for 25-30 minutes until bubbly.
  • Uncover, sprinkle with the remaining 1c. shredded cheese and bake uncovered for an additional 5-7 minutes.
