For many years, I've made these cheesy broccoli squares for tailgate parties, book club and other events. They're excellent served warm or hot, but we enjoy them cold, too. -Veronica Downen, Crystal Beach, Florida

1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3 large eggs
1 cup 2% milk
4 cups shredded cheddar cheese
3 packages (12 ounces each) frozen chopped broccoli (about 11 cups), thawed and drained
2 tablespoons butter

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, salt and baking powder. In a small bowl, whisk eggs and milk until blended. Add to flour mixture; stir until moistened. Fold in cheese and broccoli., Place butter in a 13x9-in. baking dish; place dish in oven 3-5 minutes or until butter is melted. Carefully tilt baking dish to coat bottom and sides with butter. Add broccoli mixture., Bake, uncovered, 35-40 minutes or until edges are golden brown. Let stand 20 minutes before cutting.

2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (1 ounce) package dry Ranch-style dressing mix
1 head fresh broccoli, chopped
3 roma (plum) tomatoes, chopped
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking sheet.
  • Arrange the dinner roll dough in 4 rectangles on the baking sheet.
  • Bake in the preheated oven 12 minutes, or until golden brown. Remove from heat and allow to cool completely.
  • In a medium bowl, mix the cream cheese, mayonnaise and dry ranch-style dressing mix. Spread evenly on the crescent rolls. Sprinkle with broccoli and tomatoes. Top with Cheddar cheese and serve.

Broccoli cheddar squares are an excellent make-ahead breakfast or appetizer for your next party. Simple ingredients with delicious results.

2 tbsp (1 oz.) unsalted butter, melted
3 large eggs
1 cup milk
1 cup all-purpose flour
1 tsp baking powder
½ tsp sea salt
½ tsp black pepper
1 lb. fresh broccoli florets
½ large onion (white or yellow), diced
2 cups cheddar cheese, freshly grated

Steps:

  • Preheat the oven to 350 degrees F. In a 9x13 baking dish, pour the melted butter evenly over the bottom of the baking dish. Set aside.
  • In a large bowl, beat the eggs before whisking in the milk. Add in the flour, baking powder, salt, and pepper. Whisk well until the mixture is smooth and uniform.
  • Place the broccoli ¾ full in a food processor fitted with an S-blade attachment and gently pulse until the broccoli is broken down into small pieces to make broccoli rice (you may need to do this in batches) *(see first note.)
  • Add the broccoli rice, onion, and cheese to the flour mixture. Using a spatula, combine the ingredients well together.
  • Carefully transfer the mixture to the baking dish, making sure that the mixture is evenly distributed and spread flat on top.
  • Bake for 40-45 minutes until set (firm to the touch) in the middle. Let it cool for 15 minutes before slicing into squares. Can be served warm or room temperature.

1 can (4 ounces) mushroom stems and pieces, drained
1 small onion, chopped
2 cups biscuit/baking mix
2 cups shredded cheddar cheese, divided
1/4 cup grated Parmesan cheese
1/2 cup water
3 cups frozen chopped broccoli, thawed and drained
4 large eggs
1/2 cup milk
1 teaspoon salt
Dash pepper

  • In a large skillet, cook the beef, mushrooms and onion over medium heat until meat is no longer pink; drain. In a large bowl, combine biscuit mix, 1/2 cup cheddar cheese, Parmesan cheese and water until a soft dough forms. , Press dough onto the bottom and 1/2 in. up the sides of a greased 13x9-in. baking dish. These bars are so good. It's another well received dish the folks at Church enjoyed..so easy too! I used mushrooms today, you can leave them out if you prefer...sometimes I add some heat to them by adding red pepper flakes... These can be eaten cold as well as hot, that's what makes them nice to take somewhere. Enjoy!

4 Tbsp butter
1 - 14 oz bag, small frozen broccoli florets thawed ( i use birdseye )
1 small onion, chopped - i used red today
1 c flour
3 eggs
3/4 tsp salt
16 oz cheddar cheese - i used sharp
1 tsp baking powder
1/4 c chopped mushrooms - optional

Steps:

  • 1. Preheat oven to 350 degree F. In a 9 x 13 baking dish, place butter and place in oven to melt.
  • 2. In a large bowl, thoroughly mix all other ingredients together.
  • 3. Spread into pan evenly.
  • 4. Bake for 30 - 35 minutes. Leave cool for a few minutes before cutting.

Steps:

  • Grease a 9x13 baking pan with the butter.
  • Steam broccoli until partially cooked, about three minutes.
  • Cool and press dry.
  • Beat eggs and milk until frothy.
  • Thoroughly mix dry ingredients.
  • Stir into egg mixture.
  • Fold in broccoli, cheese and onion.
  • Spoon into baking dish, spreading evenly.
  • Sprinkle with seasoned salt.

So incredibly good you will not believe how easy they are to make. A family secret recipe that leaves lots of room for interpretation. We eat these a lot in the summer for dinner with a salad and a loaf of good bread. YUM! But be sure that if adding cooked ingredients, allow them to cool a bit before adding milk and eggs so they don't start to scramble. Eat lukewarm for best flavor or warm.

1/8 teaspoon freshly ground black pepper, or to taste
For the assembly
