Broccoli-just like pasta-makes a tasty pairing with sharp Cheddar. Here, we've combined all three ingredients in a homey casserole that's baked in a cast-iron skillet. Replacing some of the pasta in the dish with vegetables makes it more nutritious and helps you cut down on carbs.

- Preheat oven to 425°F.
- Bring a large saucepan of water to a boil. Add pasta and cook according to package directions, adding broccoli for the last minute of cooking. Drain.
- Wipe the pot dry and place over medium-low heat. Add butter and swirl until melted. Sprinkle flour over the butter; whisk until smooth. Slowly add milk, salt and smoked paprika; cook, whisking constantly, until the mixture bubbles and thickens, about 5 minutes. Remove from heat and stir in 1 cup Cheddar and Parmesan. Add the drained pasta and broccoli, stirring to coat well.
- Transfer the mixture to a 10-inch cast-iron skillet and sprinkle with panko and the remaining 3 tablespoons Cheddar. Bake until the cheese is melted and starting to turn golden, 15 to 20 minutes.

Steps:
- Preheat broiler
- Bring a large pot of water to a boil for the pasta
- Salt water and cook pasta to al dente, according to package directions (about 10-12 minutes total, depending on the brand)
- When the pasta has been cooking a couple of minutes, add broccolini or broccoli to the water and finish cooking everything together, 8 minutes more
- Meanwhile, melt butter in a saucepot over medium heat
- Add garlic and cook 2-3 minutes
- Whisk in flour and cook 1 minute then whisk in stock and milk
- Let sauce thicken to coat the back of a spoon, stir in 2 cups of cheese and season with salt and pepper
- Drain pasta and broccoli, and toss with the sauce
- Adjust seasoning to taste
- Place in a large casserole dish and top with the remaining cheese and chives or scallions
- Place under the broiler to bubble and brown the top

- Preheat the oven to 350 degrees F. Butter a baking dish.
- Bring a pot of water to a boil. Cook the macaroni according to the package instructions until still firm. Drain and set aside.
- Meanwhile, melt the butter in a pot over medium heat. Add the celery, broccoli and onion and cook, stirring, until the vegetables soften, 4 to 5 minutes. Use a wooden spoon to mash some of the broccoli. Sprinkle on the flour and dry mustard and stir to coat the vegetables. Pour in the milk, broth and half-and-half and cook, stirring, to allow it to warm up.
- Add the Cheddar, processed cheese, 1/2 cup of the Parmesan and some salt and pepper and stir to melt the cheese. Add the macaroni and stir. Taste and check for seasoning. Pour into the prepared baking dish. Combine the breadcrumbs and remaining 1/2 cup Parmesan in a small bowl and sprinkle over the dish. Bake until bubbly, about 25 minutes.

- Boil the pasta: Heat 4 quarts of water with 2 tablespoons salt in a large pot on high heat (for pasta). When the water comes to a boil, add the pasta and cook uncovered at a rolling boil for 2 minutes less than the time given on the pasta package instructions. (You want to cook the pasta al dente because it will continue to cook with the cheese mixture.) Rinse quickly in cold water to stop the cooking, drain and set aside.

ONE-POT BROCCOLI MAC AND CHEESE
In the time it takes to make boxed macaroni and cheese, you can have a homemade version that's creamy with lots of sharp Cheddar, studded with broccoli and doesn't require making a roux. Instead, the sauce is thickened by the pasta's starch: As the noodles cook in milk, the milk thickens to the consistency of cream and the pasta absorbs the seasonings. Here, that's garlic powder, but you could also use mustard powder, ground cayenne or grated nutmeg like in traditional mac and cheese. The broccoli pieces end up soft and sweet, but if you want more bite, add them halfway through cooking.

- In a large pot or skillet, combine the macaroni, broccoli, milk, salt and garlic powder. Add 3 cups of water, and stir to combine. (The pasta may not be fully submerged. That's OK!) Bring to an active simmer over medium-high. Reduce the heat to medium to gently simmer. Cook, stirring often to ensure even cooking and to keep things from sticking to the bottom of the pot, until the pasta is tender, and the liquid resembles heavy cream and coats the noodles, 8 to 12 minutes. If the liquid evaporates so much that you don't see any between noodles, add 1/2 cup water. Adjust the heat as needed to maintain a gentle simmer.

- Heat the oven to 200°C, gas 6. Cook the macaroni in a large pan of salted water for 5 mins. Cut the broccoli into small florets add to the pan and cook for a further 3 mins until the macaroni and broccoli are just tender. Drain, and turn into the ovenproof dish.
- To make the sauce: melt the butter in a pan, stir in the flour and cook, stirring over a medium heat for 1 min. Remove from the heat and gradually add the milk, stirring well after each addition. Return to the heat and bring to the boil, and cook, stirring, until the sauce thickens.
- Remove from the heat, add the mustard if using and season with salt and pepper. Add three quarters of the cheese, stir until the cheese has melted.
- Add the sweetcorn and pour into the dish, fork the sauce through the pasta and broccoli. Scatter the remaining cheese on top, then bake in the oven for 20 mins until the dish is bubbling and the top is golden.
