Barb's Broccoli-Cauliflower Salad image

This is a version of the classic broccoli salad with the addition of cauliflower. It can be prepared the day prior to serving, then served chilled or at room temperature. Pecans can be used instead of sunflower seeds, if desired, and bacon lovers might want to add a few extra slices. . .

1 head fresh broccoli, diced
1 head cauliflower, chopped
½ red onion, diced
¾ cup sunflower seeds
1 cup creamy salad dressing
1 ½ tablespoons white wine vinegar
¼ cup white sugar

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Combine the bacon, cauliflower, broccoli, onion and sunflower seeds or pecans.
  • Whisk together the salad dressing, vinegar and sugar. Pour over salad and toss to coat. Refrigerate and allow to chill before serving.

.75 lbs cauliflower florets (cut into bite sized pieces)
1/4 cup Red onion
1/4 cup Craisins
3 tbsp red wine vinegar
1 cup mayonnaise
1 tbsp Sugar (optional)
1 cup sunflower seeds
1/2 cup crumbled bacon

Steps:

  • Combine the mayonnaise, vinegar, and sugar in a bowl and whisk until smooth.
  • In a large bowl, add the broccoli, cauliflower, onion, craisins and dressing and toss to coat.
  • Add the sunflower seeds and bacon and toss again gently to distribute.
  • Serve chilled. Enjoy!

I love this salad. My daughter got this recipe from her boss. We have made it for several years now. It is a Huge hit at BBQ's, in fact everyone always wants a copy of the recipe.A friend sudgested I make copies of the recipe when I take it to gatherings. Great Idea! The best part about this recipe is you get a lil bit of something in every bite! That is why it is so important to cut your veggie's up into small bite size pieces. I also only use 1/4 to 1/2 cup of fresh green onions

5 cups broccoli (cut up in small pieces the size of a nickle to a quarter. Do not use the stems.)
5 cups cauliflower (do the same as for broccolli)
2/3 cup onion (or green onions)
2 cups cheddar cheese (shredded)
6 pieces cooked bacon
1/4 cup sunflower seeds
1/3 cup raisins
1/2 cup sugar
1 cup mayonnaise
1 tablespoon cider vinegar
1 tablespoon red wine vinegar

  • Mix all the veggies together.
  • You can add the dressing at this time.
  • Add your cheese, bacon,sunflower seeds and raisins just before you serve the dish or atleast within an hour of serving it.

2 cups mayonnaise
1/2 cup sugar
1/3 cup grated Parmesan cheese
2 tablespoons vinegar
2 tablespoons finely chopped onion

1 small head cauliflower, cut into florets
1 can (8 ounces) sliced water chestnuts, drained
1/2 pound bacon, cooked and crumbled
2/3 cup slivered toasted almonds

  • In a small bowl, combine mayonnaise, sugar, Parmesan cheese, vinegar, onion and raisins; refrigerate several hours or overnight. Just before serving, combine broccoli, cauliflower, water chestnuts, bacon and almonds in a large bowl. Pour dressing over and toss to coat.

½ cups mayonnaise
¾ cup whole milk yogurt
2 tablespoons honey
2 tablespoons red wine vinegar (white wine vinegar would also work)
2 teaspoon of lemon juice
½ teaspoon kosher salt (more to taste)
¼ teaspoon ground black pepper
4 cups broccoli florets (cut into small bite size pieces)
4 cups cauliflower florets (cut into small bite size pieces)
½ cup red onion (chopped)
1/2 cup sunflower seeds
½ cup raisins
6-8 slices of bacon (I used turkey bacon)
1 cup of Colby Jack or cheddar cheese (shredded or cubed)

Steps:

  • To make the dressing, place all ingredients in a bowl and whisk together until fully combined.
  • Preheat the oven to 400 F degrees. To cook the bacon, place each slice on a sheet pan. Bake for 12 minutes. Flip the bacon and cook for another 5 minutes or until it is crispy. Allow them to cool and cut into small pieces.
  • To assemble the salad, place broccoli, cauliflower, red onion, sunflower seeds, raisins, and bacon in a large bowl. Drizzle with the dressing, cover it with plastic wrap, and let it rest in the fridge for 30 minutes or upto 4 hours.
  • Sprinkle with the cheese and serve.

I try to watch calories so I usually use Splenda, fat-free Miracle Whip and fat-free cheese. It looses nothing with these substitutions.

1 pound broccoli (cut into small (1-inch) florets (about 1 medium head))
1 pound cauliflower (cut into small (1-inch) florets (about 1 very small or 1/2 large head))
½ cup pecan halves
4 slices thick-cut bacon (diced)
1 tablespoon Dijon mustard
2 tablespoons sherry vinegar or red wine vinegar
1 teaspoon kosher salt (divided)
1/2 teaspoon black pepper
½ cup non-fat plain Greek yogurt
1 tablespoon honey
4 medium green onions (thinly sliced (about 2/3 cup))
½ cup dried cranberries
4 ounces 1/4-inch diced sharp cheddar cheese (I like a white cheddar) (about 2/3 cup)

Steps:

  • Blanch the vegetables: bring a large pot of salted water to a boil (I like to do this when I'm prepping the vegetables, as it takes my water a long time to boil). Place a large bowl of ice water beside it and keep a colander handy. Add the broccoli and cauliflower florets to the boiling water. Let cook for 30 seconds. With a slotted spoon, immediately transfer to the ice bath to stop the vegetables' cooking. Drain into the colander, shaking off as much excess water as you can. Set aside.
  • Heat a medium to large skillet over medium heat. Add the pecans in a single layer and let sit for 15 seconds. Stir and toast, until the pecans are crisp and smell fragrant, about 3 to 4 minutes. Stir often to avoid hot spots and do not walk away. Immediately transfer to a cutting board. Roughly chop.
  • Return the skillet to medium heat. Add the bacon pieces in a single layer and cook, stirring occasionally, until the bacon is crisp and the fat has rendered, about 10 minutes. Drain all but 1 1/2 tablespoons bacon fat from the skillet (leave the bacon in the skillet).
  • Return the pan to the stove and turn off the heat. Working quickly, stir in the Dijon, vinegar, 1/2 teaspoon of the salt, and pepper. Let cook in the warm skillet for 30 seconds. Remove from the hot burner and set aside to cool for 2 minutes.
  • To a small mixing bowl, add the Greek yogurt, honey, and remaining 1/2 teaspoon salt. Whisk to combine.
  • Scrape the bacon and all of the drippings in the skillet with it into the bowl with the Greek yogurt. Whisk to combine.
  • Shake the broccoli and cauliflower once more (you want to remove as much water as possible so that the salad isn't soggy, then transfer to a large mixing bowl (to save dishes, I wipe out the bowl I was using for the ice bath).
  • To the bowl with the broccoli mixture, add the green onions, cranberries, cheddar, and chopped pecans.
  • Pour the bacon dressing over the top, then stir gently to combine. Taste and add more salt and pepper if you like. Enjoy immediately or refrigerate until ready to serve (this tastes even better after it's sat in the refrigerator for an hour or so). Just before serving, give the bowl a big stir to reincorporate any dressing that has sunk to the bottom. Serve cold or at room temperature.

2 Tbsp red wine vinegar
1 Tbsp granulated sugar

8 oz bacon ((about 8 slices), diced and sauteed until crisp and drained)
1 1/4 cups small cubed Colby Jack cheese ((6 oz))

  • In a medium mixing bowl, whisk together all dressing ingredients. Cover and chill until ready to use.
