Easy Cauliflower Broccoli Fritters image

Easy to make cauliflower broccoli fritters that are crispy, savory, and can't-stop-at-one good! Low carb and keto friendly fritters!

One head of cauliflower
One head of broccoli
5 eggs
1 cup almond flour
1 cup mozzarella cheese
1 tsp parsley
1 tsp garlic powder
Pinch of salt

Steps:

  • Chop cauliflower into pieces and boil until softened, then drain.
  • Chop broccoli into pieces and boil until softened, then drain.
  • In a large bowl, mash together cauliflower and broccoli.
  • In a separate bowl, beat eggs, then add mozzarella, almond flour, and seasoning and mix together.
  • Form mixture into patties and fry in olive oil over medium-high heat until golden brown.

1 bunch broccoli, cut into florets
2 eggs, lightly beaten
2 egg whites, lightly beaten
1/3 cup grated Parmesan cheese
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
2 tablespoons canola oil
Salsa, optional

Steps:

  • Place broccoli in a steamer basket; place in a small saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-4 minutes or until crisp-tender. Coarsely chop broccoli and set aside., In a large bowl, combine the eggs, egg whites, cheese, flour, salt, garlic powder and pepper. Stir in broccoli., Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Drop batter by 2 heaping tablespoonfuls into oil; press lightly to flatten. Cook in batches for 3-4 minutes on each side or until golden brown, using remaining oil as needed. Drain on paper towels. Serve with salsa if desired.

1/2 lb fresh broccoli florets
1/2 lb fresh cauliflower floret
2 cups boiling water
2 large eggs, beaten
1 small onion, diced
1/2 cup chopped pecans, toasted
1/2 cup self-rising flour
salt and pepper
vegetable oil

Steps:

  • Add water to a saucepan and bring to a boil.
  • Add broccoli and cauliflower florets and cook 10-12 minutes or until very tender; drain.
  • Transfer florets to a large bowl.
  • Mash florets with a fork or potato masher (doesn't have to be a completely smooth consistancy, I leave in a few clumps of vegetables) Add in eggs, onion, pecans, flour, and salt and pepper to taste; stir to mix well.
  • In an electric skillet, pour oil to a depth of 1/4 inch; heat to 350 degrees.
  • Drop vegetable mixture by tablespoonfuls into the oil.
  • Cook in batches for 1 to 2 minutes on each side or until they become lightly browned.
  • Transfer to a papertowel lined plate to drain; keep warm.
  • Serve immediately.

6 cups cauliflower florets
½ cup all-purpose flour
3 extra large eggs
1 teaspoon baking powder
1 (.7 ounce) package dry Italian-style salad dressing mix
½ cup olive oil for frying, or as needed

Steps:

  • Process cauliflower in a food processor finely minced; transfer to a large bowl.
  • Stir flour, eggs, baking powder, and Italian dressing mix into cauliflower.
  • Heat enough olive oil to cover the bottom of a frying pan over medium heat.
  • Drop heaping tablespoons of cauliflower mixture into the hot oil; fry until golden brown, about 3 minutes per side.
