- In a large cast-iron skillet or wok, stir-fry carrots in butter for 3 minutes Add the snow peas, shallot and salt; stir-fry 2 minutes longer or until vegetables are crisp-tender. Stir in sherry; heat through.

SNOW PEA AND NAPA CABBAGE SLAW

- In a large pot of boiling water, blanch snow peas 15 seconds, strain and transfer to a bowl of cold water to chill. Drain and slice thin.
- In a large bowl, combine the snow peas, cabbage, carrots, bell pepper, green onions, lemon juice, vinegar and olive oil. Add salt and pepper to taste; toss and serve chilled.

BROCCOLI, SNOW PEA AND CARROT STIR-FRY

- Heat 1 tbsp vegetable oil in a wok, add 1 tsp coriander seeds (crushed) and stir for 1 minute. Add 500g broccoli (cut into florets), 1 carrot (finely sliced), 1 clove garlic (crushed) and 1 tsp ginger (grated). Stir-fry over high heat until carrot is tender and crisp (adding 1 tbsp water if necessary). Add 100g snow peas (trimmed and halved) and stir for 1 minute. Combine 2 tbsp hoisin sauce and 1 tbsp lime juice in a small bowl and pour over vegetables. Toss until well coated and serve sprinkled with 1 tbsp crisp fried onions (available at Asian food stores).

BROCCOLI AND SNOW PEA STIR-FRY

- Cook 2 tablespoons each chopped ginger, scallions and garlic in vegetable oil in a large nonstick skillet over high heat until slightly softened, 1 minute. Add 5 cups broccoli florets (12 ounces) and 1/4 cup water; season with salt. Cover and cook until just tender, about 3 minutes. Uncover, add 1 cup snow peas and cook, stirring, until bright green, about 2 minutes.

I was looking for a fresh broccoli recipe and couldn't find any one I liked. So I thought that I will make my own. It actually was not so bad. :)

- 1. Chop broccoli in 1 inch pieces
- 2. Steam broccoli for 3 minutes,
- 3. Defrost or steam frozen peas and carrots.
- 4. Dice and sauté onion with 2-3 t.s. of butter or oil until soft and slightly brown.
- 5. Mix together cream of chicken soup, shredded cheese, onion, broccoli, carrots and peas.
- 6. Spoon mixture in the casserole dish
- 7. Top with corn flakes.
- 8. Drizzle with the rest of melted butter or oil.
- 9. Bake for 30 to 35 minutes at 350°F
- If you like to have vegetables slightly undercooked, remove casserole 10 minutes earlier. Also, you can add a 1/4 cup of chopped almonds for extra crunch.
