BROCCOLI, BACON, CHEESE QUICHE
Another of my daughter Andrea's recipes which she is allowing me to publish. For Thanksgiving, she decided to make a quiche just to be a little different. There may be other recipes out there that are similar but I promise that this recipe came out of her own imagination and a bit of discussion with me around the kitchen counter. Tell you what, this turned out great!

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Chop and steam broccoli for 5 minutes.
- 3. Cook the bacon and remove just before it becomes crisp, set aside. Save 2 tablespoons of the bacon grease in the frying pan.
- 4. Saute onions and garlic in the 2 tbs. of bacon grease until onions are soft and translucent.
- 5. Slightly grease the pie pan and place the pie crust inside. Crimp and flute the edge of the crust so it is above the rim of the pie pan.
- 6. Place pie pan on a large cookie sheet. Quiches are notorious for bubbling over and the cookie sheet will save you from having to scrape burned cheese off the bottom of your oven.
- 7. In a medium bowl, mix cheese sauce, half-and-half, beaten eggs, salt, pepper and herbs, set aside.
- 8. Spread the shredded cheddar on the bottom of the pie shell in a single layer.
- 9. Add the bacon on top of the cheese in a single layer.
- 10. Add the garlic and onion spreading it over the beacon as evenly as possible.
- 11. Layer the broccoli on top.
- 12. Pour the cheese/egg/milk mixture over the top until everything is well covered.
- 13. Bake in the oven for 45 to 60 minutes or until a knife inserted in the center comes out clean.
- 14. Let it cool on a wire rack for 15 minutes and serve.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Place pie crust into a 9-inch deep pie dish and prick crust all over with a fork; brush with oil. Place crust onto prepared baking sheet.
- Bake crust in the preheated oven for 8 minutes.
- Place broccoli into a bowl and microwave on high until broccoli is bright green and slightly tender, about 4 minutes. Whisk eggs, milk, Dijon mustard, oregano, salt, pepper, and thyme in a bowl; stir broccoli into egg mixture. Pour mixture into crust and sprinkle quiche with Cheddar and Parmesan cheeses. Place pie dish on the baking sheet.
- Bake until a knife inserted into the middle of the quiche comes out clean, about 40 minutes. Let stand 10 minutes before cutting.

EASY BACON & BROCCOLI QUICHE
Steps:
- Preheat the oven to 350F.
- In a large skillet, cook the bacon until crisp. Remove from skillet and drain on a paper towel.
- Add the broccoli to the same pan, and cook over medium until broccoli begins to soften (a few minutes)
- In a large bowl, combine the cooked bacon and broccoli, and then add the cheese. Mix roughly until well combined.
- Add the bacon, broccoli and cheese to the unbaked pie crust.
- Whisk together the milk, cream, eggs, salt and pepper.
- Pour over the bacon/broccoli cheese into the pie crust.
- Bake for 30 minutes, or until you can't see liquid in the center of the quiche.
- Eat warm, or chill (covered) in the fridge for another day.
- Devour.

- Preheat oven to 400°. In a skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove bacon with a slotted spoon; drain on paper towels. BROCCOLI BACON QUICHE
Steps:
- Preheat the oven to 400°F. Roll your dough into the 9-inch pie plate, pressing it to fit into the plate, and decorate the edges. Line the pie dough with parchment paper, cover the bottom and the sides, then fill with pie weights (I usually use dried beans). Bake with the pie weights for 15 minutes. Remove from the oven and carefully remove the pie weights/beans and parchment paper. Prick the bottom of the pie crust with a fork to prevent bubbling and return to the oven for an additional 5 minutes, or until the bottom is dry. Remove from oven and place on a wire cooling rack while you make the filling.
- In a large skillet, cook the chopped bacon until crisp. Remove and let cool on a paper towel. In the same skillet (you can remove bacon grease), add broccoli and cook over medium heat until broccoli begins to soften (about 5-10 minutes). Set aside to cool.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Sprinkle the chopped bacon, broccoli, and 1/2 cup of cheese on the bottom of the pie crust. Then pour the egg mixture over top. Finish with the other 1/2 cup of cheese.
- Place in oven and bake for 35-40 minutes, or until the center is set and no longer wiggly & the eggs are cooked through. See notes below about crust browning.
- Let it cool for about 15 minutes before slicing, or refrigerate for up to 5 days and enjoy later!

- Preheat oven to 400F and spray 9 inch pie dish with nonstick spray.
- Wash, peel, and cut sweet potatoes into 1/8th inch thickness rounds. Layer around bottom of pie dish, overlapping as you go. Some pieces may need to be cut in half to fill gaps. Layer the side walls as well.
- Bake sweet potatoes in oven for 20 minutes.
- In a large saute pan, heat oil. Once hot, add onion, broccoli, and turkey bacon. Cook about 5-7 minutes or until veggies have softened. Add in garlic, salt, and pepper and cook another 2 minutes. Turn off heat and let cool.
- Meanwhile, whisk eggs and almond milk together.
- Once sweet potatoes are done, remove and turn oven down to 350F.
- Add slightly cooled veggie mixture to egg mixture. Add in cheese. Stir. Pour on top of sweet potato crust. Bake for 40 minutes or until no longer jiggly.
- Let cool at least 20 minutes before serving.
