Time 5m

Number Of Ingredients 8

1 (12-ounce) package broccoli slaw* OR 4 cups shredded broccoli stems + 1 shredded carrot
OR 4 cups combo of shredded cabbage + broccoli slaw (or any slaw mix)
1/2 cup Veganaise (OR your favorite mayo)
1.5 tablespoons honey (OR white sugar)
1 tablespoon fresh lemon juice
1 tablespoon apple cider vinegar
1/4 teaspoon sea salt
a few spins freshly ground black pepper (about 1/8 teaspoon)

Steps:

  • In a medium mixing bowl, whisk together the dressing ingredients. I like to do this in the bowl I plan to serve this in.
  • Add the broccoli slaw mix and gently toss it all together. Be patient and give it a minute if the dressing doesn't look like enough (it is!)-the broccoli will start to release some water and it will all come together into a creamy slaw after a minute or so. Refrigerate until it's time to serve.
  • This slaw is best the day you make it, but it keeps well in the refrigerator (covered), up to 3 days. Cabbage-based slaw keeps in the refrigerator for about two days.

CABBAGE AND BROCCOLI SLAW WITH VINEGAR DRESSING

Cabbage and Broccoli Slaw with Vinegar Dressing image

This broccoli slaw is a light version of a coleslaw because it doesn't have a heavy mayonnaise dressing--but it's still delicious! Best if refrigerated overnight.

  • Wash all of your produce well. Cut broccoli stems from florets. Peel stems with a vegetable peeler. Scrub the carrots (don’t peel). Chop the cilantro and scallions.
  • Fit your food processor workbowl with the julienne slicing blade. Though the narrowest feed tube, push broccoli stems through to slice, then do the carrots. Through the largest feed tube, slice the broccoli florets. As the workbowl fills, place the julienned veggies into a large bowl and continue slicing the cabbages. Dump all the vegetables into the bowl and toss gently to combine. Add the cilantro, scallions, cranberries and almonds.
  • Portion out as much as you need for one meal, approximately 1 cup per person as a side salad or 1 1/2 cups per person if using as an entree salad to be topped with leftover chicken.
  • Whisk together the dressing ingredients and season to your taste with salt and pepper. When dressing, start with a small amount, toss and add more if needed. It is easy to add more but impossible to take too much away.

  • Heat oven to 400°F. Place the broccoli and tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoons oil, salt, and pepper, and toss to coat. Bake for 10 to 15 minutes or until the broccoli starts to brown and the tomatoes soften and start to pop open.
  • In a blender or jar, add the salad dressing ingredients, and either shake well or process until the dressing is very smooth and creamy. Adjust spiciness by adding more or less chili sauce. We like 1 tablespoon and it gives it a nice kick without being very spicy.
  • Shred cabbage and carrots. I use my food processor to finely shred cabbage, but prefer the texture of julienne carrots.
