1 package medium-size mushrooms
2 small tomatoes
1 medium onion

2 package frozen chopped broccoli
1 container part-skim ricotta cheese
3/4 c. shredded Mozzarella cheese
1/4 c. Parmesan cheese
1/4 tsp. ground black pepper
salt
12 manicotti shells
1 jar marinara or spaghetti sauce

Steps:

  • Thinly slice mushrooms and tomatoes. Chop onion.
  • In 10-inch skillet over medium heat, in 1 tablespoon hot salad oil, cook onion until tender and lightly browned. Remove onion to large bowl; stir in 1 1/2 packages broccoli with ricotta cheese, mozzarella cheese, Parmesan cheese, ground black pepper, and 1 1/4 teaspoons salt; set aside.
  • Prepare manicotti shells as label directs, using 1 teaspoon salt in water; drain. Rinse cooked manicotti shells immediately with running warm water to stop the cooking; drain again.
  • Meanwhile, preheat oven to 375 degrees F. In same skillet over high heat, in 1 more tablespoon hot salad oil, cook mushrooms until tender; stir in marinara sauce, remaining chopped broccoli, and 3/4 cup water; heat through.
  • Using large decorating bag without tube, or using spoon, fill manicotti shells with ricotta mixture. Reserve 1 cup tomato sauce. Spoon remaining tomato sauce into 13" by 9" glass baking dish. Arrange filled manicotti shells in sauce in 1 layer. Tuck tomato slices among manicotti. Spoon reserved tomato sauce over manicotti.
  • Cover dish with foil and bake 25 to 30 minutes until mixture is hot and bubbly. Let stand 10 minutes for easier serving.

FILLING:
2 large eggs, lightly beaten
3/4 cup soft bread crumbs

1/4 teaspoon crushed red pepper flakes

1/8 teaspoon ground nutmeg
4 cups cubed cooked chicken breasts
6 cups frozen chopped broccoli, thawed

Steps:

  • Cook manicotti according to package directions. For sauce, in a saucepan, saute onion in butter. Stir in flour and salt until blended. Gradually whisk in cream and broth; bring to a boil. Cook and stir for 1-2 minutes or until thick and bubbly. Stir in cheeses just until melted., In a bowl, combine the eggs, bread crumbs, parsley, pepper flakes, salt and nutmeg. 1 medium onion, chopped
2 cups finely dicd ham
2 cups finely chopped broccoli (including stems)
1 cup grated cheddar cheese
2 tablespoons mayonnaise
salt and pepper (optional)
garlic (optional)
1 cup grated swiss cheese
10 cooked manicotti
1/4 cup butter
1/4 cup flour
2 cups milk

Steps:

  • Saute onions until tender.
  • Add ham, broccoli, cheddar cheese, and mayo, (I usually add a pinch of salt and pepper and a dash of garlic to taste too) When cheese is melted, remove from heat and cool slightly.
  • Stuff manicotti with ham mixture, dividing between shells evenly, and place in a greased 9x13 inch pan.
  • Melt butter in saucepan.
  • Add flour and cook 1 minute.
  • Add milk and cook, stirring constantly until thickened.
  • Remove from heat and add swiss cheese, stirring until smooth.
  • Pour sauce over manicotti.
  • Bake at 375 degrees for 30 minutes or until sauce bubbles.
  • Perfect supper with a crisp salad and garlic bread!

Steps:

  • Grease a 13 x 9-inch baking dish.
  • Cook the manicotti shells until firm-tender (careful not to overcook, leave fairly firm) drain.
  • In a large bowl, combine the ricotta or cottage cheese (if using) broccoli, 1 cup of mozza cheese, 1/4 cup Parmesan cheese, egg, parsley, onion powder, salt, pepper and garlic powder; mix well to combine and set aside.
  • In a skillet cook the crumbled sausage meat over medium heat until no longer pink; drain fat.
  • Add in the pasta sauce and minced garlic (if using), cook over medium heat for about 5-8 minutes.
  • Spread about 1-1/2 cups of the pasta/sausage mixture in the bottom of prepared baking dish.
  • Stuff the manicotti shells with the broccoli mixture (careful not to overstuff as the shells will tear).
  • Arrange the stuffed shells over the sauce.
  • Top with remaining sauce.
  • Then sprinkle with remaining Parmesan cheese, then top with remaining mozza cheese.

1 1/2 Tbsp olive oil
2 oz reduced fat cheddar cheese, finely shredded ((I usually use 2% reduced fat))
1/8 cup panko breadcrumbs
1/2 tsp black pepper
1/4 tsp kosher salt
bit of vegetable oil cooking spray

Steps:

  • Preheat oven to 500 F degrees. Line a large rimmed baking sheet with foil or parchment paper and set aside.
  • To a large mixing bowl, add broccoli florets and olive oil, giving it a toss with your hands to fully coat the broccoli with the oil. Add pepper and salt and toss again to combine.
  • Transfer broccoli to prepared baking sheet and bake 8 minutes. While broccoli is baking, combine cheese and panko in a small bowl.
  • Remove baking sheet from oven and sprinkle broccoli with cheese/panko mixture. Spray quickly with a little cooking spray and return to oven for 3-5 minutes, until cheese is melted and a bit crispy.
  • Can be served from the baking sheet or alternatively, after broccoli is finished with the first 8 minute bake, transfer broccoli to a large casserole dish. Top with cheese/panko and bake 3-5 minutes and serve directly from the dish. Just make sure the casserole dish is oven safe at 500!
