1/4 cup butter
2 minced green onions
1/4 cup sliced almonds
2 teaspoons fresh squeezed lemon juice
salt and pepper

Steps:

  • Cook broccoli, drain and keep warm.
  • Heat butter until melted, then add green onions and almonds and stir over medium heat for about 2 minutes.
  • Add lemon juice, salt and pepper and pour the sauce over the broccoli.

1 bunch broccoli
1 beef bouillon cube
3/4 cup water
4 tablespoons butter
4 tablespoons flour, i use wondra for smooth sauce
1 cup light cream
2 tablespoons dry sherry
2 tablespoons lemon juice
1/4 teaspoon white pepper
1/2 cup parmesan cheese, grated
1/4 cup gouda cheese, grated
1/4 cup almonds, toasted

Steps:

  • Cook broccoli til tender.
  • Drain& put in 2 quart casserole dish.
  • Dissolve bouillon cube in water.
  • In 1 quart saucepan, melt butter& add flour.
  • Cook, stirring constantly 1-2 minutes.
  • Pour in cream& bouillon, beating vigorously with wire whisk.
  • Bring sauce to boil& stir til thick& smooth-about 3-5 minutes.
  • Remove from heat& add sherry, lemon juice& pepper.
  • Pour sauce over broccoli& sprinkle with cheeses and almonds.
  • Bake@ 350 for 20 minutes.

  • Steam or boil broccoli until tender, approximately 4 to 8 minutes. Drain.
  • In a small saucepan, melt butter over medium low heat. Remove from heat. Stir in lemon juice. lemon zest, and almonds. Pour over hot broccoli, and serve.

10 ounces green beans, trimmed
3 tablespoons butter
2 cloves garlic, minced
2 tablespoons keto friendly sweetener such as monkfruit or swerve
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
1/2 cup sliced almonds
salt and pepper to taste
Optional: additional lemon wedges for garnish

Steps:

  • Bring a large saucepan of water to a boil. Add the trimmed green beans and cook until al dente, about 6 minutes. Drain the green beans and immediately immerse into an ice bath.
  • In a large pan bring melt the butter over medium heat. Add the garlic, sugar substitute, apple cider vinegar, lemon juice and almonds. Cook over medium low heat for 4-5 minutes until almonds are toasted.
  • Add the drained green beans, tossing to coat. Add salt and pepper to taste and cook for 6-7 minutes until heated through.
  • Serve with additional lemon wedges for garnish.

1 large head broccoli, stalks trimmed
4 tablespoons butter
2 cloves garlic, thinly sliced in rounds
1 teaspoon salt
1/4 cup slivered almonds

Steps:

  • Cut stalk of broccoli from florets. Peel the stalk and cut the stalk into 1/4-inch rounds. Cut head of broccoli into florets.
  • In a large saute pan, toast almonds until golden, about 4 minutes. Remove from pan. Add butter and when melted, add garlic and sliced stalks. Saute, until garlic turns golden and stalks start to brown, 2 to 3 minutes. Add the florets and continue cooking another 2 minutes. Add 1/4 cup water and cover pan. Cook broccoli until crisp tender, about 3 minutes more. Season with salt. Stir in toasted almonds and serve.

This is an easy broccoli casserole. Great for brunches and potluck dinners.

1 pkg frozen broccoli (chopped or florets) 1 lb. bag
1 stick margarine or butter, melted
1 can(s) cream of mushroom soup, undiluted
1/4 c almonds, chopped
3-4 dash(es) oregano, dried

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Pull out a 2 qt. casserole dish. Open the frozen broccoli and pour it into the casserole. Break up the frozen broccoli. Sprinkle with oregano.
  • 3. Pour melted margarine over the broccoli. Top with the chopped almonds.
  • 4. Open the can of soup and pour it over the broccoli mixture. Use a spatula to spread it evenly over the broccoli/almond mixture.
  • 5. Bake for 30 minutes at 350 degrees.
  • 6. Notes: This can be expanded into a complete dinner. Just add a layer of skinless, boneless chicken breasts in the bottom of the dish. Make the rest of the recipe as directed. Bake for 45 minutes, to be sure that the chicken has completely cooked. Add-ins: sliced mushrooms, onions, Swiss cheese.
