BROAD BEAN, FETA & WATERCRESS SALAD
Peppery watercress makes a bold base for this simple side dish, finished with crumbled cheese and crunchy pine nuts

Steps:
- Put the broad beans in a bowl, pour over boiling water from the kettle, then drain and transfer to a bowl of cold water.
- Remove the skins from the broad beans by splitting them with your fingernail and slipping out the bean. Make the dressing by combining the mint and olive oil in a small bowl. Season generously.
- Toss the watercress with the broad beans, feta and the dressing. Scatter with the pine nuts and serve.

Steps:
- Cover the broad beans in boiling water and bring the pan back to the boil.
- Boil the broad beans for 2 minutes and then drain and rinse under cold running water to cool them quickly.
- Double pod the broad beans - once the beans are cool enough to hold in your hands - just use your nail to break a hole in the tough outer skin and squeeze gently to pop out the vibrant green bean within. It's totally worth the effort!
- Take a serving platter - scatter over the rocket leaves and crumbled feta cheese.
- Scatter over the broad beans
- Drizzle over the olive oil and lemon juice - scatter over a pinch of salt, grind of black pepper and the lemon zest.

- Heat a frying pan to a medium heat. Add the quinoa and toast until you can smell it and it starts to pop. Transfer to a pan of boiling water.
- In another pan of boiling water, boil the broad beans for 4 minutes. Drain and refresh in a bowl of cold water. Remove the outer skins to reveal the bright green beans.
- Toss with the quinoa, spring onions, oil, lemon juice and mint. Season and add more lemon juice to taste.
