COUNTRY CHICKEN CASSEROLE
Chicken breast, hash browns, fried onions and cheese. Now that's country cookin' for ya! This is a wonderful easy recipe, especially if want a filling meal, but don't have time to stay in the kitchen. This is my mother-in-law's favorite dish, and it heats up well for leftovers.

- Preheat oven to 375 degrees F (190 degrees C).
- Stir hash browns and 1/2 of the onions together in a 9x13 inch baking dish, then lay cheese slices on top and layer chicken over cheese. In a small bowl, mix soup and milk together and pour mixture over chicken.
- Bake in preheated oven for 30 to 35 minutes, or until chicken is cooked through and juices run clear. Pour corn onto chicken and stir to combine all ingredients, then bake for an additional 20 minutes.
- Sprinkle remaining onions over all and bake for another 5 minutes, or until onions are golden brown. Let sit 5 minutes before serving.

CREAMY CHICKEN AND BROCCOLI CASSEROLE
This casserole is a hit with my whole family. Even my children enjoy eating their broccoli with this homemade meal.

Steps:
- Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, 7 to 10 minutes. Drain, cover, and set aside until needed.
- Melt butter in a saucepan over medium-high heat, and stir in 1 tablespoon olive oil. Add 1 cup broccoli; toss and cook just until tender, about 5 minutes. Sprinkle broccoli with flour, and cook 1 minute. Stir in the chicken broth, and bring to a boil. Pour in the milk, and stir to blend. Season with salt, pepper, and chipotle pepper powder, if desired. Reduce heat to medium, and simmer mixture until sauce thickens, 8 to 10 minutes. Mix in 1 cup Cheddar cheese and stir until melted. Remove from heat.
- Heat the remaining 2 tablespoons olive oil in another large skillet over medium-high heat. Stir in the onion, ground chicken, and remaining 1 cup of broccoli. Cook and stir until chicken is evenly browned and no longer pink, about 10 minutes. Season to taste with salt and pepper. Reduce heat, and cook until liquid is reduced, about 5 minutes.
- Preheat oven broiler to High. Lightly grease 9x13 inch baking dish.
- Toss the pasta with the broccoli sauce until evenly blended. Stir in the sour cream, if desired. Stir the broccoli sauce mixture into the chicken mixture. Spoon into the prepared baking dish. Top with remaining 1 cup Cheddar cheese.
- Cook under preheated broiler until cheese melts and browns around the edges, 3 to 5 minutes.

CREAMY CHICKEN CASSEROLE
Easy Creamy Chicken Casserole Recipe with mushrooms, bacon, and cheese in a cream of chicken soup sauce.

- Cut chicken breast into medium pieces (About 6-7 pieces per chicken).
- Prepare the marinade. Combine the milk, eggs and salt. Place the chicken pieces into the mixture and let marinade 4 hours (or overnight).The longer it marinades, the softer the chicken will become.
- Combine the ingredients for the flour mixture; the flour, paprika, pepper and salt.
- Take the chicken from the marinade and coat generously in the flour mixture. (Discard of the marinade.)
- Add enough oil to the skillet to completely cover the bottom of the skillet, turn on med/high heat. Once the oil is hot, fry 6-8 minutes, until chicken is crispy, turning as needed. Don't crowd the skillet. (Using two skillets works quicker.)
- While chicken is frying prepare the cream mixture; combine cream of chicken soup, sour cream, water, salt, paprika and pepper.
- Once chicken cooks, transfer onto a plate lined with paper towel.
- Cover the bottom of a 9"x13" dish with some of the cream.
- Add the chicken pieces to the casserole dish.
- Completely cover with the remaining cream. (If preparing the night before and will be cooking it the following day, wait for the chicken to cool before covering with the cream.)
- Add half of the cheese. Add the cooked bacon and sauteed mushrooms. Sprinkle remaining cheese.
- Bake 350° for 30 minutes, covered with foil. Remove foil and continue baking another 15-20 minutes until cheese melts and cream bubbles everywhere.

I have not tried this, but the ingredients bring to mind a cool fall day and this cooking in the oven. I can almost smell the aroma! Cooking time does NOT include the overnight soaking of the beans. Hope you enjoy!

- Preheat oven to 325 degrees.
- Cook beans in salted boiling water for 25 minutes.
- Heat the butter and olive oil in a flameproof casserole (dutch oven or large stockpot).
- Add the bacon and chicken.
- Cook for 5 minutes.
- Sprinkle with the flour.
- Add the cider and chicken stock, stirring to prevent lumps.
- Season with salt and pepper.
- Bring to a boil.
- Add the beans and the cover the pot.

- In a frying pan, gently cook the shallots and honey together for about 5 minutes.
- Turn the shallots frequently.

- Bake uncovered for 15 more minutes.
CHEESY BROCCOLI CHICKEN CASSEROLE

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
- Heat vegetable oil in a skillet over medium heat. Sprinkle the chicken breasts with salt, black pepper, and 1 teaspoon of salt-free seasoning, and pan-fry in the hot oil until lightly browned on both sides, about 10 minutes per side. Cut the chicken breasts into bite-size pieces, and set aside.
- Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil. Place the broccoli florets and sweet onion into the steamer basket, cover pan, and steam until broccoli turns bright green and is barely tender, about 3 minutes.
- In a large saucepan, bring 3 1/2 cups of water to a boil, and stir in the margarine until it melts. Pour in the contents of the two packages of rice side dish, and reduce heat to a simmer. Cover and cook until rice is tender, 7 to 10 minutes; turn off heat, and allow to stand covered for 2 minutes.
- Transfer cooked rice into a large mixing bowl, and stir in the chicken, broccoli, and onion. Mix in the cream of chicken soup, mayonnaise, 2 cups of Cheddar cheese, parsley, 2 teaspoons of salt-free seasoning, garlic powder, curry powder, lemon juice, and Dijon mustard until thoroughly combined. Adjust salt and black pepper. Spoon the mixture into the prepared casserole dish, and sprinkle 1/2 cup of Cheddar cheese over the top.
- Bake in preheated oven until the casserole is bubbling and lightly browned, about 30 minutes.
