Sunday Brunch Casserole image

A hearty bacon, egg, and hash brown casserole for the bacon lover in all of us. Feel free to use turkey bacon rather than pork!

1 ½ pounds thick sliced bacon
½ cup chopped sweet onion
½ cup chopped red bell pepper
12 eggs
1 cup milk
1 (16 ounce) package frozen hash brown potatoes, thawed
1 cup shredded Cheddar cheese
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon dried dill

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserving 2 tablespoons drippings in the skillet. Crumble bacon and set aside.
  • Cook and stir onion and bell pepper over medium heat in reserved drippings until tender, about 5 minutes; remove with slotted spoon.
  • Whisk eggs and milk in a large bowl. Fold hash browns, Cheddar cheese, salt, pepper, dill, onion mixture, and crumbled bacon into egg mixture; transfer to prepared baking dish.
  • Bake in preheated oven until a knife inserted near the center comes out clean, 35 to 45 minutes.

2 tubes (4 ounces each) refrigerated buttermilk biscuits
3 cartons (8 ounces each) egg substitute
7 ounces Canadian bacon, chopped
1 cup shredded reduced-fat cheddar cheese
1 cup shredded part-skim mozzarella cheese
1/2 cup chopped fresh mushrooms
1/2 cup finely chopped onion
1/4 teaspoon pepper

Steps:

  • Arrange biscuits in a 13x9-in. baking dish coated with cooking spray. In a large bowl, combine the remaining ingredients; pour over biscuits. , Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean.

British Brunch Bake image

This is great for a weekend breakfast. I have leftovers the next day and it tastes great as well. I found this on the internet as 'exported for Mastercook'. I used cheddar cheese instead of Swiss and omitted the 2 teaspoons of horseradish since we don't care for it. You could also use cooked bacon instead of the ham and I think next time I may throw in some chopped green peppers and/or onions as well. I hope you give it a try. A fantastic brunch dish or if you have guests staying over.

2 English muffins, split and toasted
1 large tomatoes, sliced in 4
1 cup cheddar cheese, shredded
1/2 cup skim milk
3 tablespoons all-purpose flour
6 large eggs, beaten
2 teaspoons chives, minced
1/2 teaspoon salt
1/4 teaspoon pepper
3 ounces cooked ham, diced

Steps:

  • Preheat oven to 325. Generously grease an 8 x 8 x 2" baking dish.
  • Arrange English muffin halves in bottom of baking dish.
  • Place a tomato slice on each muffin half.
  • Divide the cheese over top of each tomato.
  • Divide the ham over top of each muffin.
  • In a medium bowl beat milk and flour until smooth.
  • Add eggs, chives, salt and pepper to the flour mixture; stir until blended.
  • Pour the egg mixture around the English muffin halves.
  • Bake 35 to 40 minutes or until golden and centre is set.
  • Cut into serving sizes to serve.

SAUSAGE BRUNCH BAKE

This is a great recipe for a holiday breakfast or a brunch. Make sure you drain the sausage well so the casserole isn't greasy! If you'd like you can add some chopped green onions, mushrooms or bell peppers to this, just cook them first so they don't make the casserole too liquidy.

1 (8 count) can crescent rolls
1 tablespoon Grey Poupon mustard
1/2 cup cheddar cheese, shredded
1/2 cup mozzarella cheese, shredded
1 1/2 lbs bulk pork sausage, cooked and crumbled
8 eggs
2 cups milk
1/3 cup cheddar cheese, shredded
1/3 cup mozzarella cheese

Steps:

  • Grease an 8x11 inch baking pan lightly. Line the prepared pan with the crescent roll dough.
  • Brush the dough with the mustard. Bake at 350 degrees for 10 minutes.
  • Remove from oven and layer with 1/2 cup cheddar cheese, 1/2 cup mozzarella cheese and sausage.
  • Combine the eggs and milk in a mixing bowl. Beat until frothy. Pour evenly over the sausage.
  • Sprinkle with 1/3 cup cheddar cheese and 1/3 mozzarella cheese.
  • Bake at 350 degrees for 35 or 40 minutes or until set.

4 ounces Swiss cheese shredded (1 cup)
1/2 cup heavy cream
3 tablespoons almond flour
6 eggs large, beaten
2 teaspoons horseradish prepared

1/2 teaspoon salt
1/4 teaspoon black pepper
3 ounces ham smoked cooked, cut in small strips
2 bacon roses (see below)
Parsley sprigs

Steps:

  • 1. Preheat oven to 325°. Generously grease an 8 x 8 x 2-inch baking dish.2. Arrange muffin halves in bottom of baking dish. Cut tomato into four 1/2 -inch thick slices place a slice on each muffin half. Sprinkle 1/4 cup of the cheese over each tomato.3. In a medium bowl, beat heavy cream and flour until smooth. Add eggs, horseradish, chives, salt and pepper stir until blended. Pour around muffin halves. Sprinkle ham over egg mixture.4. Bake for 35 to 40 minutes or until golden and center is almost set.5. To serve, garnish with bacon roses and parsley. Cut into squares and serve hot, 6. Bacon Roses: In a large skillet over medium-high heat, fry two bacon strips until brown. While still warm, coil each into a rose shape, secure with a wooden pick cool completely. Remove picks.

  • The first thing to do is grill your bacon, that will take the longest and grilling it under 200 degrees, turning it occasionally will make sure it cooks evenly on both sides.
  • Next you need to start frying your bread. Fried bread is one of the English breakfasts dirty little pleasures because its so greasy, but fried bread is brilliant with a fried egg on top and makes your breakfast deliciously crunchy.
  • Once your fried bread is done, now start frying your tomatoes and mushrooms. They only need to be lightly fried before being put on the hot plate with your fried bread to await breakfast assembly.
  • Now start cooking your sausages and black pudding, you can fry them in the same pan and they need to be fried evenly and well to make sure they are both cooked inside and out.
  • Before your sausages are done cooking, put the other two pieces of bread in the toaster or under the grill. When they are toasted, put them on the hotplate with the other waiting ingredients.
  • When you put your toast in is a good time to start cooking your baked beans, they usually just need to be heated up and you can do that in 2 minutes in a microwave or in a small pan on the stove.
  • When your sausages and black pudding are ready, assemble all of the ingredients on their final plates for serving. Plates should be large enough to hold all the ingredients of a full English breakfast comfortably without everything feeling cramped.
  • Serve the breakfast with lots of fresh tea and coffee, together with a glass of fresh orange juice, its also nice to serve a glass of water with breakfast too.
  • Make sure there is a selection of jam, butter and marmalade for the toast on the table, as well as salt, pepper, tomato sauce and HP Brown sauce if you can get it.
  • Enjoy your breakfast! After all of that preparation you have earned it and this is the point where the newspapers are consumed, they are best when nobody has read them before you.
