Steps:
- Cut the crusts from the bread, tear bread into pieces, place in a bowl and cover with milk. Let rest 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Butter a 1 1/2 quart baking dish.
- Beat melted butter, sugar, mixed spice and egg together until smooth. Combine with soaked bread and milk. Stir in dried fruit and orange zest. Pour into prepared dish and sprinkle with nutmeg
- Bake in the preheated oven for 45 minutes, or until set.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine bread and milk, and set aside to soak for 5 minutes. Then stir in egg, butter, raisins, mixed fruit, brown sugar, nutmeg, and cinnamon. Mix well. Press the mixture into a 9-inch square baking pan.
- Bake in preheated oven until golden and firm to touch, about 35 minutes. Leave in baking pan to cool, then cut into squares.

BREAD AND BUTTER PUDDING

- Grease an ovenproof dish, about 23x28cm/9x11in in size, with butter. Spread each slice with on one side with butter, then cut into triangles.
- Arrange a layer of bread, buttered-side up, in the bottom of the dish, then add a layer of sultanas. Sprinkle with a little cinnamon, then repeat the layers of bread and sultanas, sprinkling with cinnamon, until you have used up all of the bread. Finish with a layer of bread, then set aside.
- Gently warm the milk and cream in a saucepan over a low heat to scalding point. Do not let it boil. Crack the eggs into a bowl, add three-quarters of the sugar and lightly whisk until pale. Add the warm milk and cream mixture and stir well, then strain the custard into a bowl. Pour the custard over the prepared bread layers, sprinkle with nutmeg and the remaining sugar and leave to stand for 30 minutes.
- Preheat the oven to 180C/160C Fan/Gas 4. Place the dish into the oven and bake for 30-40 minutes, or until the custard has set and the top is golden brown. Serve with extra custard, if desired.

- In a small bowl add raisins and brandy and set aside,
- In a large pot over medium-low heat brown the butter, stirring frequently until it is golden brown and has a nutty aroma. Make sure you watch the butter carefully as the butter can burn easily, check out his post on how to brown butter.
- Arrange the bread slices into a 2 QT size dish, I use an 11" X 8.5" X 2" glass dish. You may need to cut the bread to fit evenly into the pan. Evenly pour the brown butter all over the bread slices and make sure to scrape out all the brown pieces, those are flavor bombs!
- In a large saucepan whisk heavy cream, milk, vanilla, eggs, nutmeg, and sugar until fully combined, you do not want any trace of egg left behind. Place over medium heat and cook on low heat for 3-4 minutes until the mixture has warmed through.
- Pour the raisins and brandy into the warmed custard mixture and mix to combine.
- Pour the cream mixture evenly over the bread slices, the raisins will be sunk to the bottom of the pot so I use my hand to gently scatter them around the bread and in the slices, you don't want too many on top as they can burn while baking. Cover the bread and butter pudding with a wet paper towel and let marinate for 30 minutes.
- Preheat oven to 350F/180C and sprinkle the demerara sugar on top of the pudding, when the oven is heated place pudding into the oven and bake for 30 minutes, or until the top is golden brown, the internal temperature should be a minimum of 170F/77C, the inside of the pudding should be set but still have a slow wobble. Let cool for 10 minutes then serve. Store leftovers covered in the fridge for up to 5 days. Delicious served warm or cold, with custard or ice cream.
BRITISH BREAD AND BUTTER PUDDING
Found for the World Tour 2005 - yet *another* version of Bread & Butter Pudding!! "Very fattening but lovely, and warming too on a cold winter night." He he. I have not made this *yet* so I guesstimated at some of the proportions (butter, brown sugar & fruit) - please adjust to taste.

- Butter the slices all over, both sides and line the dish.
- Sprinkle over the dried fruit or other fruits (fig and banana -- ).
- Sprinkle approximately 2TB brown sugar over that and add a cover of more buttered bread, covering all the fruit.
- Pierce the bread a few times and then slowly pour over the milk, letting it all soak into the bread before adding more. When the bread is really sopping with milk sprinkle about 1TB more brown sugar over the top and then a little cinnamon, ginger and nutmeg.

- Put the oven on to 180C / 170C fan / Gas 4Cut the panettone into 2.5 cm / 1" cubes.
- Melt the butter and then use a pastry brush to butter a deep baking dish. Choose a dish that is about 6" x 8".Next, arrange the cubes of panettone in the dish.
- Put the cream, milk, vanilla extract, eggs and sugar into a bowl. Whisk lightly with a fork to break up the eggs and combine the ingredients. You don't need to work too hard at this!
- Pour the custard mixture over the panettone. Take care to drizzle it evenly over the panettone.
- Use the back of a spoon to lightly press the cubes into the liquid so they absorb it. Do this as gently as possible, because you want them to spring back up. Don't squash them!
- Scatter the chocolate chips over the panettone. Now drizzle the remaining melted butter over any of the bread that is not submerged in the custard mix.
- Pop into the oven and bake for 35 minutes. When the pudding is ready, it will be fluffy and golden, with the custard set.
- Allow your bread and butter pudding to cool a little before you serve. Dust it lightly with icing sugar for a final flourish.

TRADITIONAL BRITISH BREAD AND BUTTER PUDDING
This is my mums recipe which she has been cookin since the early 1950s, I've asked her where she got it from but its been that long she can't remember; I had cravings for this whilst recently pregnant and religiously cooked one on a Sunday which I ate all to myself as DH was on a diet and my daughter decided she didn't like it without trying it (typical 5 yr old!) I usually don't measure the sugar or sultanas which are scattered over the bread and just guess it, it all depends on how sweet your tooth is. Prep time includes standing time.

Steps:
- Cut the buttered bread slices into quarters and arrange half in an ovenproof dish.
- Scatter over half the sultanas and 2 tbsp sugar.
- Repeat with the second layer of bread and scatter over remaining sultanas and 2 tbsp sugar.
- Make the custard by beating the eggs with the 2 oz sugar and milk.
- Pour over the bread.
- Leave to stand for approx an hour.
- Cook at 150 C for approx an hour until the custard is set, make sure the oven isn't too hot as the custard will curdle.
