A good old-fashioned apple pie really takes some beating for comfort. This recipe is both quick and easy a lovely dessert or perfect tea time treat.

For the Pastry:
1 2/3 cups (200 grams) all-purpose flour
Pinch of salt
4 ounces (110 gram) cubed butter, or an equal mix of butter and lard
2 to 3 tablespoons cold water
For the Filling:
1 1/2 pounds (700 grams) cooking apples (peeled, cored and quartered)
2 tablespoons lemon juice
4 ounces (110 grams) sugar
4 to 6 tablespoons cold water
1 teaspoon ground cinnamon, optional
1 ounce (25 grams) butter
1/4 cup milk, more or less, to glaze

Steps:

  • Gather the ingredients.
  • Place the flour, butter and salt into a large, clean bowl.
  • Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs, working as quickly as possible to prevent the dough becoming warm.
  • Add the water to the mixture and using a cold knife stir until the dough binds together, add more cold water a teaspoon at a time if the mixture is too dry.
  • Wrap the dough in clingfilm and chill for a minimum of 15 minutes, up to 30 minutes. Heat the oven to 425 F / 220 C / Gas 7.
  • Gather the ingredients.
  • Simmer the apples with the lemon juice and water in a large pan until soft. Add the sugar and cinnamon to the cooked apples. Remove from the heat and add the butter and leave to cool.
  • Roll out half the pastry and line a 7-inch (18-centimeter) pie dish. Put the cooled, cooked apple mixture into the pastry case.
  • Roll out the remaining pastry to make a lid for the pie. Damp the edges of the pastry in the dish with a little cold water, cover with the lid, press the edges firmly together and crimp to decorate.
  • Brush the top of the pie with milk and bake in the middle of a hot oven for 20 to 25 minutes.
  • Serve hot or cold with cream, ice cream or custard sauce.

3 medium tart apples, peeled, cored and thinly sliced
50g soft light brown sugar (1/4 cup)
1 TBS water
1 tsp lemon juice
1 TBS plain flour
1 TBS white sugar
1/4 tsp salt
1/2 tsp mixed spice (apple pie spice)
1/2 tsp vanilla
1 TBS butter
1 single sheet of ready rolled short crust pastry
1 TBS milk
demerara sugar for sprinkling

Steps:

  • Combine the apples, brown sugar, water and lemon juice in a saucepan. Cook over moderate heat until it starts to bubble, stirring occasionally. Cover and reduce the heat to low and cook for 6 to 8 minutes until the apples are tender, stirring occasionally. Mix together the flour, white sugar, salt and spice. Stir this into the apple mixture and cook until the mixture thickens, stirring constantly. Remove from the heat. Stir in the vanilla and butter. Let stand and cool for 15 to 20 minutes. Take the crust out of the packet and leave it to sit while the filling cools.
  • Preheat the oven to 190*C/375*F/ gas mark 5. Unwrap and unroll the pastry, pressing out any fold lines. (I do this on a sheet of baking parchment.) Spread the filling onto half of the pastry to within half an inch of the edges. (I like to cut out shapes from the other half.) Fold the other half of the pastry over top of the apple filled side. Press together and flute the edges. If you have cut out shapes apply the cut outs now. If you haven't cut some vents in the top of the pastry. Brush with milk and sprinkle with demerara sugar.
  • Transfer the sheet of baking paper holding the pie onto a baking sheet. Bake in the preheated oven for 25 to 30 minutes until golden brown. Allow to cool somewhat or completely before serving.

  • Place all the ingredients for the filling in a pot over medium-low heat. Cook gently, turning the apples by tossing them in the pot every few minutes. Cook until the apples are just starting to become softened, but are still firm and hold their shape. Remove from heat and set aside.
  • Put the flour, salt and butter in a food processor and pulse a few times. Add a little ice water and pulse again until the mixture starts to come together. The pastry is ready; roll out and place into pie dish.
  • With a knife, trim the pastry all along the pie dish, using the edge as a guide, then fill it with the apples.
