Categories     Main Course

Time 3h15m

Number Of Ingredients 21

8 cups water
½ cup kosher salt
½ cup brown sugar (packed)
8 cloves garlic (smashed)
1 cinnamon stick
¼ cup sage (fresh)
2 sprigs rosemary
2 lemons
1 orange
4 cups ice
2 medium onions (quartered)
4 cloves garlic (smashed)
5 pound turkey breast (bone in, thawed)
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
8 tablespoon butter (melted)
1 cup chicken broth (low sodium or no sodium added)
pan drippings
¾ cup chicken broth (low sodium or no sodium added, or water)
1 tablespoon cornstarch (or more for a thicker gravy)
1 tablespoon water

Steps:

  • Add the water to a large pot and bring it to a boil. For the orange, peel it using a potato peeler or a knife, then cut it in half. Cut the lemon in half and juice it. Add the remaining brine ingredients to the pot (excluding the ice) and bring to a boil to dissolve all the salt and sugar. Add the lemon halves and orange halves after they've been juiced to the brine as well as the orange peel, lemon juice and orange juice, they will provide more flavor. Remove from heat and cool completely. To speed this up add about 4 cups of ice to the brine. I used my instant pot for this but any big pot that will fit the brine and the breast will work.
  • Once the brine is cooled, place the turkey breast in the brine making sure it's fully submerged in it. You may have to weigh it down with another pot of water. What I did is wrapped the pot with plastic wrap, then placed a plate over it, and then a pot of water over the plate. This worked for me because the brine and turkey came up to the top of the pot. Another option is to use a brick or rock wrapped in plastic wrap. Store it in the fridge overnight or at least for 12 hours, so make sure you have enough room in your fridge.
  • Preheat your oven to 350 F degrees. Remove the turkey breast from the brine solution and pat it dry with paper towels.
  • Place the quartered onions and smashed garlic in a large metal roasting pan then place the turkey breast on top of the onions. Season it generously with salt and pepper on both sides.
  • Brush the turkey with melted butter, keep remaining butter for basting later. Add the chicken broth to the pan.
  • Cover the pan with aluminum foil and place the roasting pan in the oven. Cook covered for 1 1/2 hours, basting with the melted butter (remelt again if necessary) every half hour. After 1 1/2 hours, remove the aluminum foil and roast for another 1 hour or until golden brown. The breast is done when a meat thermometer inserted in the thickest part of the breast registers at 165 degrees F.
  • Transfer the turkey breast to a platter or cutting board and let it rest for a full 15 minutes before slicing into it.
  • Skim some of the fat from the pan drippings if necessary.
  • Place the pan on the stove over medium-high heat. In a little bowl whisk together the cornstarch with the water, then add it to the pan. Whisk everything together. If the gravy is too thin and you prefer a thicker consistency, feel free to add more cornstarch until you reach the desired consistency. Cook for a few minutes, until the gravy thickens a bit. Taste for seasoning and adjust with salt and pepper as necessary.
  • Strain all the liquid into a bowl, then press all the liquid out of the onion and garlic using a spatula, for additional flavor.

GARLIC HERB BUTTER ROASTED TURKEY BREAST

Garlic Herb Butter Roasted Turkey Breast image

RECIPE VIDEO above. An incredible way to roast turkey breast! The garlic herb butter smeared under the skin bastes the breast while it roasts, and creates a butter pan sauce to serve on the side. A meat thermometer will ensure your turkey comes out beautifully juicy. Truly worth using fresh herbs for this recipe, but see notes for dried options.

Categories     Mains

Time 1h50m

Number Of Ingredients 13

2.5 - 3 kg / 5-6 lb single turkey breast (, skin on, bone in (Note 1), NOT BRINED)
1/2 tsp salt
Black pepper
Small bunch of fresh herbs - 4 rosemary sprigs (, 8 sprigs sage, 10 thyme sprigs)
12 garlic cloves (, smashed with side of knife (see video))
150 g / 5 oz (10 tbsp) unsalted butter, softened
1 1/4 tsp table salt or 1 1/2 tsp kosher salt
1/2 tsp black pepper
4 large garlic cloves (, minced)
1 tbsp finely chopped sage (, fresh)
1 tbsp finely chopped rosemary (, fresh)
1 tbsp fresh thyme leaves (, fresh)
1 tbsp finely chopped parsley leaves (, fresh)

Steps:

  • Remove fridge chill: Take turkey out of the fridge 45 minutes before cooking (or 30 minutes if it's super hot where you are).
  • Preheat oven to 200C / 390F (all oven types). Put rack in the lower middle position. (Note 3)
  • Place garlic and bunch of herbs in the middle of a baking dish. (Note 4)
  • Butter: Mix Butter ingredients together.
  • Loosen skin: Use an upside teaspoon to help loosen the skin from the turkey flesh (easiest to go under the paper thin layer under the surface skin). Video helpful here.
  • Smear butter under skin: Use about 2/3 of the butter, and smear it under the skin on the top half of the breast. Best to smear using hands under the skin (not on surface), to ensure it spreads as evenly as possible.
  • Turn turkey upside down. Reserve about 2 tbsp butter for the surface, smear the rest on the underside.
  • Place turkey in pan on the herbs, skin side up. Now smear skin with remaining butter - you don't want much on the skin because the herb bits burn.
  • STOP HERE for make ahead option - the turkey can be left like this for up to 24 hours. Remove from fridge 45 minutes before serving then proceed.

HERB-ROASTED TURKEY WITH PAN GRAVY

Herb-Roasted Turkey with Pan Gravy image

Combine butter, lemon zest, parsley, and thyme for a flavorful rub for your Thanksgiving turkey. Yes, this perfectly roasted turkey takes some time to make, but while it's cooking you can take some time to daydream about your delicious leftovers.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Turkey Recipes

Number Of Ingredients 11

1 18- to 21-pound fresh turkey, thawed if frozen, giblets and neck removed from cavity and reserved for gravy
6 tablespoons unsalted butter, softened
Grated zest of 1 lemon
3 tablespoons finely chopped fresh flat-leaf parsley
3 tablespoons finely chopped fresh thyme leaves
3 teaspoons coarse salt, plus more for seasoning
1 1/2 teaspoons freshly ground pepper, plus more for seasoning
3 to 4 lemons, each cut into quarters
2 to 3 onions, each cut into 6 wedges
1 cup dry white wine or water
3 cups Giblet Stock or homemade or low-sodium canned chicken stock

Steps:

  • Rinse turkey with cool water, and pat dry with paper towels. Let stand, uncovered, 2 hours at room temperature.
  • Combine butter, lemon zest, parsley, thyme, 1 teaspoon salt, and 1/4 teaspoon pepper in a small bowl. Using your fingers, gently loosen turkey skin from over the breast meat, and smear half the butter mixture under skin.
  • Preheat oven to 450 degrees, with rack on lowest level. Place turkey, breast side up, on a roasting rack set in a heavy metal roasting pan. Fold wing tips under. Sprinkle 1/2 teaspoon each salt and pepper inside cavity. Fill large cavity and neck cavity loosely with as many lemon and onion wedges as will fit comfortably.
  • Tie legs together loosely with kitchen twine. Fold neck flap under, and secure with toothpicks. Rub entire turkey with remaining herb butter, and sprinkle with remaining 1 1/2 teaspoons salt and 3/4 teaspoon pepper, pressing to adhere.
  • Cook 30 minutes, rotating the pan halfway through. Using a pastry brush, baste the turkey with any pan drippings. Reduce oven temperature to 350 degrees, and continue cooking 2 more hours, basting turkey and rotating pan every 30 minutes; if pan gets too full, spoon out some of the juices, reserving them for gravy.
  • After 2 1/2 hours of cooking, insert an instant-read thermometer into the thickest part of the thigh, avoiding the bone. The temperature should reach 160 degrees, and the turkey should be golden brown. (The internal temperature will continue to rise once turkey is out of oven. Ideal done temperature is 165 degrees.) If thighs are not yet fully cooked, baste turkey again, and continue cooking.
  • When fully cooked, transfer turkey to a serving platter, and let rest, about 30 minutes. Meanwhile, make the gravy. Pour the pan juices into a large glass measuring cup; let stand until grease rises to the surface, about 10 minutes, then skim with a large spoon.
  • Meanwhile, place roasting pan over medium-high heat. Add wine or water, and bring to a boil; deglaze pan by scraping up any browned bits from bottom with a wooden spoon. Add stock; stir well, and return to a boil. Cook until reduced by half, about 5 minutes. Add the defatted pan juices, and cook 5 minutes more; you will have about 2 cups. Remove from heat, and season with the salt and pepper. Strain into a warm gravy boat, and serve with turkey.

HERB ROASTED TURKEY BREASTS WITH PAN GRAVY

Herb Roasted Turkey Breasts With Pan Gravy image

This is the turkey I make for all holiday dinners. Rachael Ray makes it with breasts only, and that's what this recipe follows, but I make it with the whole bird. So moist and tender, and great flavor.

Provided by Chef Jodi Town

Categories     Turkey Breasts

Time 1h5m

Yield 8-10 serving(s)

Number Of Ingredients 15

1 small onion, peeled and coarsely chopped
1 lemon, scrubbed clean
12 fresh sage leaves
1/4 cup fresh flat-leaf parsley
3 tablespoons extra virgin olive oil
olive oil, for oiling pan
1 teaspoon salt, plus more as needed
6 fresh bay leaves
4 tablespoons butter
2 (2 -2 1/2 lb) boneless turkey breast halves, skin on
fresh ground black pepper
3 tablespoons all-purpose flour
1/4 cup apple brandy (recommended ( Calvados)
2 -3 cups apple cider
salt and pepper

Steps:

  • Preheat the oven to 450 degrees F. Oil a roasting pan and set it aside.
  • Put the onion into the bowl of a food processor. Using a vegetable peeler, peel the zest from the lemon in thin strips, being careful not to cut into the bitter white pith. Add the lemon zest to the food processor and reserve the whole lemon for another use. Chop the onion and lemon zest until fine. Add the sage, parsley, olive oil, and 1 teaspoon salt and pulse until it forms a coarse paste.
  • Put 2 of the bay leaves and the butter into a small pan and heat over medium-low heat until the butter is bubbling. Remove from the heat and set aside.
  • Put the turkey breasts on a work surface. Carefully run your fingers between the skin and the flesh from 1 end, being careful not to pull it completely off, creating a pocket. Season the turkey breasts generously with salt and pepper. Stuff half of the herb paste under the skin of each breast, and spread it evenly under the skin. Transfer the breasts to the roasting pan, and slide 2 bay leaves underneath each one. (The heat of the pan will release the bay leaf oils and flavor the breast.) Using a pastry brush, baste the breasts with half of the bay butter.
  • Place the turkey in the oven and immediately decrease the temperature to 400 degrees F. After 20 minutes, baste the turkey breasts with the remaining butter, and roast for an additional 20 to 25 minutes, until cooked through, and a thermometer placed in the thickest part of the breast registers 170 degrees F.
  • Remove from the oven, transfer to a platter, cover, and let rest for 10 minutes before carving while you make the gravy.
  • Put the roasting pan over the burner on medium heat. Sprinkle the flour over the pan juices, and cook, stirring, for a few minutes. Add the apple brandy, and scrape the pan to lift the bits that are stuck to the bottom. Cook for a minute to burn off the alcohol, then, while stirring, pour in the apple cider. Bring to a simmer, and stir until thickened. Season with salt and pepper.
  • Slice the turkey breast on the diagonal, and serve with warm gravy.

Time 8h15m

Yield 8 servings

Number Of Ingredients 37

1 gallon water
1/2 ounce ground cloves
1/2 ounce ground ginger
4 ounces cracked black peppercorns
12 bay leaves
1 pound kosher salt
24 ounces honey
24 ounces maple syrup
One 10-pound whole fresh turkey, giblets and neck removed and reserved for stock
1 stick butter, room temperature
2 teaspoons chopped garlic
1 teaspoon chopped fresh rosemary leaves
2 teaspoons chopped fresh sage leaves
2 apples, quartered and cored
1 onion, peeled and quartered
2 rosemary sprigs
3 sprigs sage
Olive oil, for drizzling
1 cup cubed carrots
1 cup cubed celery
1 cup cubed onions
1/2 cup white wine
1/2 cup Madeira wine
4 cups Turkey Stock, recipe follows
1 sprig thyme
2 sprigs parsley
Beurre manie (2 ounces butter mixed with 2 ounces flour until it forms a soft dough)
Salt and pepper
Giblets and neck from 1 turkey
2 tablespoons olive oil
1/2 cup port wine
1 cup roughly chopped onions
1/2 cup roughly chopped carrots
1/2 cup roughly chopped celery
2 sprigs rosemary
5 peppercorns
Water, to cover

Steps:

  • In a large stockpot, bring the water, cloves, ginger, black peppercorn, bay leaves and salt to a boil. Lower to a simmer and stir in the honey and maple syrup until well blended. Turn off heat and allow to cool to room temperature.
  • Rinse the turkey inside and out with cold tap water. Reserve the neck and specialty meats for pan gravy. Set the turkey in the brine, making sure that the turkey is fully immersed in the brine. Place a weight on top of the turkey to make sure it is always covered with brine. Marinate for at least 4 hours to overnight, depending on the weight of the turkey, in the refrigerator.
  • Preheat oven to 325 degrees F.
  • In a shallow roasting pan, place the carrots, celery and onions. Remove turkey from brine.
  • Mix together the butter, garlic, chopped rosemary, and sage to make a compound butter. Using your hands, loosen to the skin from the breast by gently inserting your fingers between the skin and the flesh. Rub the compound butter underneath the skin. Insert the apples, onions, and whole rosemary and sage into the cavity of the turkey.
  • Place the turkey over the vegetables, breast-side up, in the roasting pan. Tuck the wings back and under the turkey. Using kitchen twine, tie the legs together. This will make a compact shape and will create a great presentation. Drizzle the turkey with olive oil and rub it into the skin. Roast the turkey to at least 165 degrees F in the breast, about 2 1/2 hours. If the skin gets too dark during roasting, tent with foil.
  • Transfer turkey to a platter and allow to cool. Meanwhile, prepare the pan gravy.
  • Tilt the pan and skim as much fat as possible off the juice with a spoon. Set the pan on 2 burners set on medium heat. Deglaze roasting pan with white wine and Madeira. Scrape the bottom of the pan to loosen any brown bits. Reduce until only a quarter remains. Add the Turkey Stock, thyme and parsley. Bring to a boil and strain into a saucepan. Bring back to a boil, skim and lower to a simmer. Whisk in the beurre manie until well incorporated and continue to cook until gravy has thickened. Season, to taste, with salt and pepper.
  • Heat a saucepan over high heat. When the pan is hot, add the olive oil and heat. Add the neck and giblets and cook until browned all over, about 7 minutes. Remove the pan from the heat and deglaze with the port. Return the pan to the heat and cook until the port is almost completely evaporated, about 10 minutes.
  • Add the carrots, onions, celery, rosemary and peppercorns. Cover with cold water by 4-inches. Bring to a boil. Reduce heat to a simmer, and simmer for 2 hours, adding a little more water, if necessary. Skim any scum that rises to the surface of the stock and discard.
  • Strain the stock. Use immediately, or cool and refrigerate for up to 4 days.

BRINED AND ROASTED WHOLE TURKEY

Brined and Roasted Whole Turkey image

No dish has more riding on its success than the holiday turkey. Brining locks in a turkey's natural juices, so it won't dry out during the roasting process, ensuring the perfect centerpiece for a flavorful feast.

Time 13h20m

Yield 10

Number Of Ingredients 8

1 cup Morton® Coarse Kosher Salt
1 cup sugar
2 gallons cool water
1 (12 pound) fresh, whole, bone-in skin-on turkey, rinsed and patted dry
5 tablespoons unsalted butter, softened
½ teaspoon ground black pepper
3 tablespoons unsalted butter, melted
1 cup white wine, chicken broth or water

Steps:

  • Overnight Brine: Combine Morton®Kosher Salt and sugar in cool water in a large, clean stockpot until completely dissolved. Place the whole turkey in the brine until completely submerged. Remove the turkey from the brine, rinse inside and out under cool running water for several minutes to remove all traces of salt; pat dry with paper towel.
  • 4-5 hour Brine: To brine your turkey in less time (4-5 hours), use 2 cups of Morton®Coarse Kosher Salt and two cups of sugar. Cover and refrigerate for 4 to 5 hours.
  • To Roast: Mix the softened butter with the pepper. Place turkey on rack in roasting pan. Rub the seasoned butter under the skin. Brush the skin with the melted butter. Pour the 1 cup liquid (wine, broth or water) over the pan bottom to prevent drippings from burning. Roast turkey at 450 degrees F for 25 minutes, baste and then rotate the roasting pan. Continue roasting until the skin turns golden brown, an additional 25 minutes; baste again. Reduce oven temperature to 325 degrees F; continue to roast, basting and rotating the pan once about halfway through cooking, until the minimum internal temperature reaches 165 degrees F. Remove the turkey from the oven. Let stand 20 minutes before carving.

THE ULTIMATE MOIST TURKEY: BRINED HERB BUTTER ROASTED TURKEY AND GRAVY

The Ultimate Moist Turkey: Brined Herb Butter Roasted Turkey and Gravy image

Number Of Ingredients 20

1 1/2 gallons water
1 quart apple juice or 1 bottle sweet white wine like a Riesling
6-8 sprigs fresh rosemary
3 sprigs fresh thyme
2 medium onions, sliced thinly
6 cloves garlic, smashed with back of knife, then minced
1-1/2 cups coarse salt, like kosher salt
2 tablespoons peppercorns
5 whole Bay Leaves
1 quart ice water
1 turkey (preferably fresh, frozen turkeys contain an injected salt solution)
1 stick butter, room temperature, divided
2 teaspoons each minced fresh thyme, sage and rosemary, chopped finely
4 cups low-salt chicken broth, heated
Pan drippings from turkey
3 cups turkey stock (preferably made from giblets but you may used store-bought stock)
6 tablespoons flour
1/4 cup dry white wine (optional)
1/2 teaspoon each fresh thyme and sage, finely chopped
Salt and pepper to taste

Steps:

  • Instructions for the brine:
  • Combine all ingredients in a large pot, except turkey and ice water. Bring to a boil, stirring to make sure salt is dissolved. Remove from heat, and let cool for about 30 minutes, adding ice water to speed the process.
  • When the liquid has cooled completely, pour into a large brining bag or pot, and add the turkey. Seal the bag or cover the pot, and put in the refrigerator for at least 12 hours, preferably 24 hours.
  • When ready to roast the turkey, take it out of the brine and rinse in cold water. Submerge turkey in cold water in the sink or pot for 10-15 minutes. Remove turkey and pat dry.
  • Preheat oven to 425 degrees.
  • Instructions for the herb butter and roasting turkey:
  • Mix 1 stick of butter with the thyme, rosemary and sage in a bowl. Add salt and pepper.
  • Gently make a small opening in between skin and meat of turkey breast, and rub herb butter under the skin, hand between skin and breast meat to loosen skin. Rub it over the skin as well. Put turkey in a roasting pan (one with a rack inside). (If you are feeling adventurous, you can also roast the turkey upside down for the first hour, just make sure there is herb butter on the backside as well. This will make an even moister turkey). Stuff turkey, or season cavity with salt, pepper herbs and butter if you aren't stuffing it. Make sure turkey legs are tied and wings tucked under.
  • Put turkey on the lowest rack, and roast 30 minutes. Open oven door to release some heat, and reduce temperature to 350°. Roast turkey for 30 more minutes, opening up oven to baste in pan drippings and adding hot broth (and to flip turkey over if you started your turkey upside down- use silicone gloves so you don't burn your hands). Cover with foil loosely or with pan lid (if using a lid, make sure there is a small opening at the top of lid for steam to escape, or put lid on slightly crooked. This will ensure that your turkey isn't "steamed").
  • Roast turkey until thermometer inserted into thickest part of thigh registers 165°F, basting with pan drippings and adding hpt broth every hour. Depending on the size of the turkey, you will need to roast an additional 2 1/2 - 3 hours longer (a stuffed turkey will take longer). For a 14 pound turkey like ours, we are roasting it bout 3 1/2- 4 hours.
  • Since the turkey is brined, the pan drippings will be salty, making for a salty gravy. You can pour juices into a fat separator and use the juices sparingly for a delicious gravy (see recipe below).
  • Transfer turkey to platter and let stand about 30 minutes before carving (internal temperature will rise 5 to 10 degrees). Carve and serve.
  • Instructions for the roasted turkey gravy for a brined turkey:
  • Pour all the drippings from the roasting pan into a fat separator cup. Let sit until juices settle to the bottom and the fat rises.
  • Once the juices have settled, take 4 tablespoons of the fat from the cup and add it back to the roasting pan. Put the roasting pan across two burners set at medium.
  • Sprinkle flour into the pan, and use a wooden spatula to mix with the fat. Pour a few tablespoons of the juices into a saucepan with 1/2 cup of the new turkey broth and whisk it really well to combine.
  • Keep adding broth 1/2 cup at a time, whisking constantly, until the gravy reaches the desired consistency. Bring the gravy to a simmer (you may add the wine at this time if you'd like) for 5-10 minutes.
  • Strain gravy through a fine sieve and add chopped sage and thyme.
  • Season with salt and pepper to taste.

BRINED ROAST TURKEY BREAST WITH HERB PAN GRAVY

Brined Roast Turkey Breast with Herb Pan Gravy image

Categories     main-dish

Time 9h55m

Yield Serves 6 to 8

Number Of Ingredients 15

1 cup kosher salt
1 cup sugar
1 1/2 gallons water
1 whole bone-in, skin-on turkey breast (6 to 7 pounds)
1/4 cup (1/2 stick) unsalted butter, room temperature
1 teaspoon very finely chopped fresh sage
1 teaspoon very finely chopped fresh thyme
Freshly ground black pepper
3 celery stalks, chopped
3 carrots, cut into chunks
3 onions, preferably Vidalia, quartered
2 1/2 cups homemade chicken stock or reduced-fat, low-sodium chicken broth, plus more if needed
2 tablespoons all-purpose flour
Coarse salt
Pear and Cranberry Chutney, recipe follows, optional

Steps:

  • Dissolve the kosher salt and sugar in the water in large, clean bucket or stockpot. Set the turkey breast in the brine, making sure it is submerged. Cover and refrigerate for at least 8 hours or up to overnight.
  • Remove the turkey breast from the brine. Pat dry and set aside. Place the butter in a bowl; add the sage and thyme. Season the butter well with pepper and stir to combine. Set aside.
  • Twenty minutes before roasting, preheat the oven to 450 degrees F.
  • Place the turkey on a clean work surface. Using a chef's knife, remove the remaining portion of the neck and reserve it for the stock and gravy. Remove the wishbone to make carving easier; set it aside with the neck for the gravy. With your hand, carefully release the skin on both breasts to form two pockets. Rub the seasoned butter under the released skin. If there is any extra butter, massage it on the outside of the skin.
  • Put the celery, carrots, and onions in a large roasting pan. Pour 1/2 cup of the chicken stock into the pan bottom to prevent the drippings from burning. Place the prepared turkey, skin side up, on top of the vegetables. Place the pan in the oven with the wide neck end toward the rear of the oven. Roast for 15 minutes, then rotate the pan back to front. Roast for 15 minutes more, until skin turns golden. Decrease the oven temperature to 325 degrees F and continue to roast, rotating the pan once more about halfway through the cooking, until the internal temperature in the thickest part of the breast registers 160 degrees F to 165 degrees F, 30 to 45 minutes.
  • Remove the pan from the oven and transfer the turkey breast to a cutting board, preferably with a moat. Cover the turkey loosely with aluminum foil. Pour the remaining 2 cups chicken stock into a saucepan. Add the reserved neck and wishbone and bring to a boil. Decrease the heat to simmer.
  • Place the roasting pan over medium-high heat. Add the flour to the pan drippings and stir until well combined. Strain the warmed stock over the flour-vegetable combination and bring to a boil. Decrease the heat to simmer and cook until thickened, 5 to 7 minutes. Strain the mixture into a saucepan (the saucepan that held the stock is fine to use), pressing on the vegetables to get every drop and all the flavor. Check and make sure the sauce is thick enough to coat a spoon; if not, continue simmering the sauce until the correct consistency is achieved. (If it's too thick, add a little water or additional stock.)
  • Carve the turkey breast and plate on a warm platter. Add any juices that run into the moat to the gravy. Taste and adjust for seasoning with salt and pepper and serve with the gravy on the side.
  • Combine 3 cups cranberries and 3/4 cup sugar in a saucepan over medium heat. Cook, stirring occasionally, until the berries release their juices, about 8 minutes. Add the juice of 2 oranges (about 1/2 cup), 1/2 cup golden raisins, 1 cinnamon stick, and 1 star anise. Season with salt and freshly ground black pepper. Increase the heat to medium-high and bring to a boil, stirring occasionally. Peel 3 firm pears, then core and cut into 1/2-inch dice and add to the chutney with the finely grated zest and juice of 1 lemon. Decrease the heat to medium-low and cook until the mixture thickens and the pears are tender, about 10 minutes. Transfer to a bowl and cool completely. Store in an airtight container in the refrigerator for up to 2 weeks.

BRINED ROAST TURKEY WITH PAN GRAVY

Brined Roast Turkey With Pan Gravy image

This recipe is courtesy of Wolfgang Puck. It is the most delicious and moist turkey I've ever eaten. Although it is a rather involved recipe, it is well worth the effort!

Categories     Whole Turkey

Time 4h15m

Yield 8 serving(s)

Number Of Ingredients 36

1 gallon water
1/2 ounce ground cloves
1/2 ounce ground ginger
4 ounces cracked black peppercorns
12 bay leaves
1 lb kosher salt
24 ounces honey
24 ounces maple syrup
1 (10 lb) fresh whole turkey, giblets and neck removed and reserved for stock
1/2 cup butter, at room temperature
2 teaspoons garlic, chopped
1 teaspoon fresh rosemary leaf, chopped
2 teaspoons fresh sage leaves, chopped
2 apples, quartered and cored
1 onion, peeled and quartered
2 rosemary sprigs
3 sage sprigs
olive oil, for drizzling
1 cup carrot, cubed
1 cup celery, cubed
1 cup onion, cubed
1/2 cup white wine
1/2 cup madeira wine
1 sprig thyme
2 sprigs parsley
2 ounces butter, mixed with
2 ounces flour, until it forms a soft dough (Beurre manie)
salt and pepper
turkey giblets, and neck, from 1 turkey
2 tablespoons olive oil
1/2 cup port wine
1 cup onion, roughly chopped
1/2 cup celery, roughly chopped
2 sprigs rosemary
5 peppercorns
water, to cover

Steps:

  • Brine:.
  • In a large stockpot, bring the water, cloves, ginger, black peppercorn, bay leaves and salt to a boil.
  • Lower to a simmer and stir in the honey and maple syrup until well blended.
  • Turn off heat and allow to cool to room temperature.
  • Rinse the turkey inside and out with cold tap water.
  • Reserve the neck and specialty meats for pan gravy.
  • Set the turkey in the brine, making sure that the turkey is fully immersed in the brine.*.
  • Place a weight on top of the turkey to make sure it is always covered with brine.**.
  • Marinate for at least 4 hrs to overnight, depending on the weight of the turkey, in the refrigerator.
  • Turkey:.
  • Preheat oven to 325 degrees F.
  • In a shallow roasting pan, place the carrots, celery and onions.
  • Remove turkey from brine.
  • Mix together the butter, garlic, chopped rosemary, and sage to make a compound butter. Using your hands, loosen to the skin from the breast by gently inserting your fingers between the skin and the flesh. Rub the compound butter underneath the skin.
  • Insert the apples, onions, and whole rosemary and sage into the cavity of the turkey.
  • Place the turkey over the vegetables, breast-side up, in the roasting pan.
  • Tuck the wings back and under the turkey. Using kitchen twine, tie the legs together. This will make a compact shape and will create a great presentation.
  • Drizzle the turkey with olive oil and rub it into the skin.
  • Roast the turkey to at least 165 degrees F in the breast, about 2 ½ hours. If the skin gets too dark during roasting, tent with foil.
  • Transfer turkey to a platter and allow to rest. Meanwhile, prepare the pan gravy.
  • Gravy:.
  • Tilt the pan and skim as much fat as possible off the juice with a spoon.
  • Set the pan on 2 burners set on medium heat.
  • Deglaze roasting pan with white wine and Madeira.
  • Scrape the bottom of the pan to loosen any brown bits. Reduce until only a quarter remains.
  • Add the turkey stock, thyme and parsley.
  • Bring to a boil and strain into a saucepan. Bring back to a boil, skim and lower to a simmer.
  • Whisk in the beurre manie until well incorporated and continue to cook until gravy has thickened.
  • Season, to taste, with salt and pepper.
  • Turkey stock:.
  • Heat a saucepan over high heat. When the pan is hot, add the olive oil and heat.
  • Add the neck and giblets and cook until browned all over, about 7 minutes.
  • Remove the pan from the heat and deglaze with the port.
  • Return the pan to the heat and cook until the port is almost completely evaporated, about 20 minutes.
  • Add the carrots, onions, celery, rosemary and peppercorn.
  • Cover with cold water by 4-inches. Bring to boil. Reduce heat to a simmer, and simmer for 2 horus, adding a little more water, if necessary.
  • Skim any scum that rises to the surface of the stock and discard.
  • Strain the stock. Use immediately, or cool and refrigerate for up to 4 days.
  • * I use a bright orange, new, 5-gallon painters bucket with lid from hardware store.
  • **I use a well-scrubbed brick that has been baked at 350 degrees in an oven for 30 minutes. After thoroughly cooled, wrap with foil and place in a zip-lock bag, removing all the air.

SMOKED TURKEY BRINE

Smoked Turkey Brine image

With a soak in this earthy and citrusy brine, your smoked turkey will have the edge it needs to champion the dinner table.

Provided by Mike Lang

Categories     Entree     Dinner

Time P2DT2h

Number Of Ingredients 8

1 gallon water, divided
1 cup (225g) kosher salt
1 bunch Italian parsley, approximately 15 stems
1 yellow onion, sliced
1 head of garlic, cut in half crosswise
2 oranges, halved
1/4 cup black peppercorns, crushed with heavy pan or pulsed in spice grinder
1 (12- to 18-pound) whole turkey, neck, giblets, heart, and liver removed

Steps:

  • Cool the brine: Add 1/2 gallon (9 1/2 cups) of cold water to the hot brine to help it cool down faster. You can also replace the water with ice to help it cool even faster. Cool the brine to room temperature. Then refrigerate it until chilled.
  • Prepare for drying: Set a wire rack over a baking sheet.
  • Remove turkey from brine: Remove the turkey from the brine and place it on the prepared baking sheet. With a paper towel, remove any residual salt and brine ingredients from the turkey. Pat the turkey dry.
  • Dry the turkey: Transfer it to the refrigerator, uncovered, and let it air dry for 24 hours. This will help crisp up the skin when you cook the turkey.
  • Cook the turkey: Once a turkey has been brined and air dried you can follow whichever cooking method you prefer to either roast, smoke, or fry the turkey.
