We love onions and caramelized is one of our favorite ways to have onions with meat! This recipe was out of Taste of Home magazine and instantly became a hit with my family! I hope you enjoy it as well.

1 large sweet onion, thinly sliced
1 teaspoon sugar
2 teaspoons olive oil
1 (1 lb) pork tenderloin
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet, cook onion and sugar in oil over medium-low heat until onion is tender and golden brown, about 30 minutes, stirring occasionally.
  • Place the pork in a 13 x 9 x 2 baking dish coated with nonstick cooking spray.
  • Sprinkle with salt and pepper.
  • Top with onion mixture.
  • Bake, uncovered, at 350 degrees for 40-45 minutes or until a meat thermometer reads 160 degrees.
  • Let stand for 5 minutes before slicing.

Pork loins can also vary in size and thickness. So cooking times will vary greatly, particularly if you bought the tenderloin, which cooks much faster. Cook the loin roast or pork tenderloin longer if it's large or thick. If you are unsure on how long to cook your particular roast, cook the pork loin until it reaches an internal temperature of 140°F in its thickest part. As it rests it will still continue to cook and should reach an ideal internal temperature of 145°F. The higher the temperature, the drier the loin will be, so don't go past 140°F while in the oven too much if possible.

2 pounds pork loin roast
2 Tablespoons vegetable oil
4 cloves garlic (, minced)
1 teaspoon yellow mustard
2 Tablespoons Worcestershire sauce
6 Tablespoons unsalted butter
1 Tablespoon dried herb mix (( basil, oregano and/or thyme))
kosher salt ( or sea salt , to taste)
fresh cracked black pepper (, to taste)
1 large onion (, diced)
1/4 cup flour
2 cups broth ((beef, chicken or vegetable))
salt to taste
black pepper to taste

Steps:

  • Preheat oven to 350°F. Rinse and pat dry pork loin, and then season with salt and pepper.
  • MAKE THE PORK LOIN: Heat a large oven-safe skillet on medium-high heat. Add oil and then sear the pork loin on all sides until a crust forms, about 1 minute per side. Remove pork loin from the pan and set it aside. Coat the pork loin with dried herbs by patting it onto the loin.
  • Turn off heat and remove pan from the heat. In same hot pan add butter, garlic, Worcestershire sauce, and mustard. Stir the sauce until the butter is completely melted. Place the pork loin back in the skillet and spoon some sauce over the pork loin.
  • Cover the pork loin with foil and roast for 30 minutes. Remove foil, spoon some more sauce over the loin and cook for about another 30 minutes or until the interior temperature reaches about 140°F.
  • Remove cooked pork loin skillet from oven. Remove the pork loin from the skillet and cover the pork with foil to let it rest for about 15 minutes (make the gravy while the pork is resting). (Don't clean the skillet, you'll need it for the next step in making the gravy.)
  • MAKE THE GRAVY: Heat the same skillet with the pork drippings on medium-high heat. Skim off any crust chunks in the drippings. Add onions and cook until golden and caramelized, about 5 minutes.
  • Whisk in the flour, whisking to remove lumps. Gradually whisk in the broth until incorporated and well combined. Season with salt and pepper, to taste (the saltiness and flavors will concentrate some when it reduces down).
  • Reduce heat to medium, stirring often, simmer until thickened, about 5 minutes depending on your preferred thickness. Check for seasoning and salt again if needed. Slice pork loin and serve hot with the onion gravy.

6 cups water
½ cup salt
½ cup dark brown sugar
2 bay leaves
2 sprigs fresh rosemary
1 teaspoon ground black pepper
1 teaspoon dried thyme
1 (4 pound) boneless pork loin roast
1 tablespoon olive oil
1 cup chopped Granny Smith apple
2 tablespoons minced shallots
5 ounces spinach, chopped
¾ cup chopped walnuts
1 egg
1 tablespoon crumbled goat cheese, or to taste
salt and freshly ground black pepper to taste

Steps:

  • Mix water, salt, and brown sugar in a saucepan, stirring to dissolve salt and sugar. Add bay leaves, rosemary, 1 teaspoon black pepper, and thyme; bring to a boil. Reduce heat to low and simmer brine for 5 minutes. Let brine cool to room temperature.
  • Place pork roast into a large nonreactive bowl, pour brine over pork, and cover; marinate in refrigerator for 12 to 24 hours.
  • Heat olive oil in a skillet over medium heat; cook and stir apple and shallots into hot oil until shallots are soft, about 5 minutes. Remove from heat, let cool to room temperature, and mix spinach, walnuts, egg, and goat cheese into apple mixture. Season stuffing with salt and black pepper.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Remove pork from brine and discard used brine. Cut roast lengthwise down the center to within about 1 1/2 inches of the bottom and open the roast like a book. Spoon apple stuffing onto one side of meat and fold the other half over the stuffing. Tie the roast closed in 4 or 5 places with kitchen twine. Set roast on a rack placed into a roasting pan.
  • Roast in the preheated oven until an instant-read thermometer inserted into the center of the stuffing reads 145 to 150 degrees F (63 degrees C to 65 degrees C), about 1 hour and 15 minutes.

⅓ cup maple syrup
3 cloves garlic, crushed
3 tablespoons chopped fresh ginger

1 (2 1/2 pound) boneless pork loin roast
salt and freshly ground black pepper
1 tablespoon vegetable oil
2 tablespoons maple syrup

Steps:

  • Mix water, salt, 1/3 cup maple syrup, garlic, ginger, rosemary, black pepper, and red pepper flakes in a large bowl. Place pork loin in brine mixture and refrigerate for 8 to 10 hours.
  • Remove pork from brine, pat dry, and season all sides with salt and black pepper.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat vegetable oil in an oven-proof skillet over high heat. Cook pork, turning to brown each side, about 10 minutes total.
  • Transfer skillet to the oven and roast until pork is browned, about 40 minutes.
  • Mix 2 tablespoons maple syrup and Dijon mustard together in a small bowl.

1/2 cup coarse salt
1/2 cup (packed) golden brown sugar
1 tablespoon fennel seeds
1 tablespoon coriander seeds
1 tablespoon whole black peppercorns
3 bay leaves
1 center-cut boneless pork loin roast (about 4 pounds)
1 tablespoon olive oil
2 teaspoons chopped fresh sage
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
2 teaspoons chopped fresh marjoram
Onion, Raisin, and Garlic Compote

Steps:

  • Combine first 7 ingredients in heavy large pot. Bring to simmer over medium heat, stirring to dissolve salt and sugar. Remove from heat. Cool to room temperature. Transfer brine to very large bowl. Add pork (weight pork with plate to keep below surface). Cover; refrigerate over-night. Drain pork. Return pork to bowl; cover with water (weight pork with plate). Soak at room temperature 2 hours.
  • Position rack in top third of oven and preheat to 350°F. Drain pork. Pat dry. Transfer to rack set in large roasting pan. Rub pork all over with oil. Sprinkle with fresh herbs, pressing to adhere. Sprinkle with pepper. Roast until thermometer inserted into center of pork registers 150°F, about 1 hour 40 minutes. Transfer pork to cutting board; tent with foil. Let stand 10 minutes.
  • Cut pork into 1/4- to 1/2-inch-thick slices. Serve with compote.

CIDER-BRINED PORK ROAST WITH POTATOES AND ONIONS

1 cup (packed) light brown sugar
1 cup kosher salt plus more
8 bay leaves, divided
3 tablespoons coriander seeds, divided
1 teaspoon black peppercorns plus more freshly ground
1 quart unfiltered apple cider
1 8-bone pork loin roast (about 5 pounds), chine bone removed, rib bones frenched, tied with kitchen twine
6 Yukon Gold potatoes (about 2 pounds), unpeeled, quartered
4 medium red and/or yellow onions, halved, stem ends intact
5 tablespoons olive oil, divided

Steps:

  • Bring brown sugar, 1 cup salt, 2 bay leaves, 1 tablespoon coriander seeds, 1 teaspoon peppercorns, and 2 cups water to a boil in a medium saucepan. Reduce heat and simmer, stirring occasionally, until sugar and salt dissolve, about 4 minutes. Transfer brine to a large bowl and add cider and 2 cups ice. Let cool.
  • Place pork and brine in a large (2-gallon) resealable plastic bag. Seal bag and chill at least 8 hours.
  • Remove pork from brine and pat dry with paper towels. Let sit at room temperature 1 hour.
  • Toss potatoes and onions with 4 tablespoons oil in a large roasting pan or on a large rimmed baking sheet; season with salt and pepper and set aside.
  • Place rack in lower third of oven and preheat to 425°F. Using the side of a chef's knife, crush remaining 2 tablespoons coriander seeds. Season pork with salt and pepper and rub all over with crushed coriander. Heat remaining 1 tablespoon oil in a large skillet over medium-high heat. Cook pork until browned on all sides, 8-10 minutes.
  • Transfer pork to roasting pan and nestle in among vegetables. Tuck remaining 6 bay leaves under kitchen twine over top of pork. Wrap bone tips with foil to prevent burning and roast, turning vegetables halfway through, until an instant-read thermometer inserted in the center of pork registers 140°F, 60-75 minutes.
  • Remove foil from bones and transfer pork to a cutting board; let rest 30 minutes before slicing between ribs into chops.
  • DO AHEAD: The pork can be brined 2 days ahead. Keep chilled.

2 cups water
1/4 cup kosher salt
1/4 cup plus 1 tablespoon brown sugar, packed, divided
1 large fresh sprig rosemary, plus 1 tablespoon minced
2 cups ice water
4 bone-in pork chops
2 tablespoons unsalted butter
1 teaspoon olive oil
2 large yellow onions, or Vidalia onions
Salt to taste
Freshly ground black pepper, to taste
1 tablespoon olive oil

Steps:

  • Brine the chops: Combine the water, 1/4 cup kosher salt , and 1/4 cup brown sugar in a medium saucepan over low heat, stirring to dissolve the salt and sugar. When the salt and sugar are dissolved, take the saucepan off the heat and add the rosemary sprig and iced water. Keep stirring until the brine is completely cooled down.
  • Put the pork chops in a large zip-top plastic bag, and pour in the brine. Squeeze the air out of the plastic bag and seal tightly. Lay the bag in a baking dish (in case there's any leakage) and refrigerate 4 hours and up to 8 hours. (Alternatively, arrange the pork chops in a baking dish in a single layer, pour the brine over the chops and cover with plastic wrap. Halfway through the brining time, turn the chops over.)
  • One hour before cooking, take the pork chops out of the refrigerator, drain and discard the brine and rosemary sprig. Pat the pork chops dry and cover loosely with paper towels.
  • Make the caramelized onions: Melt the butter and 1 teaspoon of olive oil in a large sauté pan over medium-high heat. Add the onions and sprinkle with 1 tablespoon brown sugar, about 1 teaspoon kosher salt, and several good grinds of fresh pepper. Cover for 10 minutes.
  • Remove the cover and stir the onions. Sauté for another 15 or 20 minutes, stirring the onions occasionally and watching that they don't burn. When the onions have caramelized to your liking, take the pan off the heat.
  • Preheat oven to 400 F. Lightly season the pork chops with kosher salt and freshly ground pepper, then sprinkle the minced rosemary over both sides of all the chops, pressing down lightly to adhere the rosemary to the pork.
  • Heat the 1 tablespoon of olive oil in an ovenproof skillet over medium-high heat. Brown the pork chops on both sides, 2 minutes per side. Cover the pork chops with the caramelized onions, then put the skillet into the oven.
  • Bake the chops 15 minutes until their internal temperature reaches 138 F on an instant-read thermometer . Remove the skillet from the oven, and let the chops rest 5 minutes before serving.

Since everyone seems to be doing the brining thing, I thought you all might like this roast. I got the recipe several years ago on the FoodTV network - can't remember which show. The low temp isn't a typo - it cooks at 250 degrees. The flavor and taste are exceptional. Great for a Sunday dinner with garlic mashed potatoes and Sauerkraut with Apples #53036 - this recipe came from the same show. Hope you enjoy - it's a favorite of ours.

8 cups water
1/4 cup coarse salt
3 tablespoons sugar
3 bay leaves
2 whole cloves
1 cinnamon stick
2 teaspoons whole black peppercorns
1 clove garlic, smashed
7 rib pork loin roast (or whatever size your family needs)
salt and pepper, to taste.
6 -8 slices bacon (enough slices to cover the top of roast)

Steps:

  • Bring water, salt and sugar to boil.
  • Add bay leaves, cloves, cinnamon stick, peppercorns and garlic.
  • Simmer 5 minutes.
  • Remove from heat and let cool to room temp.
  • Pour over pork roast and marinate a minimum of 8 hours or overnight.
  • Drain.
  • Pre-heat oven to 250 degrees.
  • Season meat with salt and pepper.
  • Place in a roasting pan with meat side down.
  • Drape bacon slices over the roast so the top and sides are covered with the bacon.
  • Bake in pre-heated oven until internal temperature of the meat is 140 degrees.
  • (Approx. 2 hours+ depending on roast size.) Let roast rest about 20 minutes before slicing.
  • I've found it easiest to cut with an electric knife with the meat down and ribs up- slicing between the rib bones.

  • Whisk together Dijon, whole-grain mustard, sherry, 2 tablespoons butter, thyme leaves, cayenne, and 1 teaspoon salt in a large bowl until combined. Add pork loin to bowl, turning to coat. Cover and chill at least 4 hours or up to overnight.
  • Preheat oven to 350°F. Remove pork loin from marinade, reserving 3 tablespoons marinade. Discard remaining marinade. Season pork on all sides with 2 teaspoons salt.
  • Heat 2 tablespoons oil in a large skillet over high. Add pork, and cook until browned on all sides, about 4 minutes per side. Remove from skillet, and set aside. Toss together red onions, cipollini onions, shallots, 2 teaspoons salt, 1/2 teaspoon black pepper, and remaining 2 tablespoons oil.   • In a large skillet, melt the butter and add the 1/4 cup brown sugar, diced apples and cinnamon. Toss the apples around and make sure they are fully coated by butter and sugar and saute for about 3 minutes. Do not stir during the first 3 minutes, so that the apples caramelize on one side. After 3 minutes toss the apples again and let them caramelize for another 3 minutes on the other side. Let cool.
  • Butterfly the pork loin, basically cut the pork down the center, without completely cutting through, so when you open the two halves they resemble a butterfly. Use your meat mallet to flatten it a bit.
  • Take the cooled apples and spread them down the center of the pork loin and bring the 2 sides up around filling the meat. Use butcher twine to tie around the roll tightly at 1 inch intervals.
