2/3 cup / 165 ml vegetable or canola oil
2 eggs
1 ½ tbsp grated lemon rind ((1 large or 2 medium lemons))
¼ cup / 65 ml fresh lemon juice
1 cup / 250g plain yoghurt ((Note 1))
1.25 cups / 275g caster sugar ((superfine sugar, granulated ok too))
2 cups/300g plain flour ((all purpose flour))
4 tsp baking powder
Pinch of salt
1 3/4 cup / 210 g icing sugar (powdered sugar)
1 tbsp lemon juice
1 1/2 tbsp plain yogurt

Steps:

Preheat oven to 180C/350F (standard) or 160C/320F (fan/convection). Grease a 20 cm / 8" cake pan with butter.
Place Wet ingredients in a bowl. Whisk until combined.
Sprinkle over flour, baking powder and salt. Whisk until smooth - few small lumps is ok.
Pour into pan - it should be fairly thick but pourable (see video). Bake for 50 minutes or until a skewer comes out clean.
Remove metal ring and cool on rack then glaze.

1 box lemon cake mix ((regular size))
4 large eggs
1 1/3 cups water
2/3 cup vegetable oil
1 package lemon jello ((small box - 3 oz)*)
2 lemons (, juiced)
1 1/2 cups powdered sugar

Steps:

Preheat the oven to 350 degrees F.
Spray a 9x13-inch baking dish with nonstick spray and sprinkle with flour.
Tip and tap the edges of the cake pan to coat it with flour.
In the bowl of a mixer, mix the cake mix, eggs, water, oil and jello together.
Pour into the greased and floured pan.
Bake for 27-30 minutes. While the cake is in the oven, prep the icing (see instructions below).
When cake is done, prick with a fork while still hot.
Immediately pour lemon icing over top.
In a small bowl, mix the lemon juice and powdered sugar until smooth.

1 cup confectioners' sugar
2 tablespoons milk, plus more to thin
1 tablespoon freshly squeezed lemon juice (or 1 teaspoon lemon extract)

Steps:

Gather the ingredients.
In a small bowl, whisk together confectioners' sugar and 2 tablespoons of milk until smooth. Test the consistency by dripping the glaze from a spoon.
Whisk in lemon juice or lemon extract. If you'd like it a bit thinner, add more milk as needed.
Brush or drizzle the lemon glaze on a warm or cooled cake.

1 (18.25 ounce) package lemon cake mix
1 (3 ounce) package lemon flavored Jell-O® mix
¾ cup vegetable oil
½ cup water
4 eggs
⅓ cup lemon juice
2 cups confectioners' sugar
2 tablespoons butter, melted
1 tablespoon water

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
In a large bowl, stir together cake mix and gelatin mix. Make a well in the center and pour in oil, 1/2 cup water and eggs. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
To make the Glaze: In a medium bowl, combine lemon juice and confectioners' sugar. Beat in the melted butter and 1 tablespoon water. Poke holes in the top of the cake and pour glaze over.

1 package lemon Jell-O gelatin
3/4 cup hot water
1 ice cube
1 package lemon cake mix
1/2 cup oil
4 eggs
1 teaspoon lemon extract
2 cups powdered sugar
1/2 cup lemon juice

Steps:

Melt Jello in hot water and cool down with ice cube.
Add jello to cake mix, oil, eggs and lemon extract.
Pour cake batter into greased angel food pan.
Bake at 350 degrees for 45 minutes.
Make glaze while cake is baking.
Mix powdered sugar and lemon juice until dissolved.
When cake is baked, poke holes into it with a fork, pour glaze over entire cake and let cool in pan.
Invert onto serving plate when cooled.

1 (3-ounce) package lemon gelatin
1 cup boiling water
1/2 cup canola oil
1/3 cup unsweetened applesauce
4 large eggs
1 (15.25-ounce) package yellow cake mix (Grandma says Duncan Hines)
2 cups powdered sugar
1/3 cup freshly squeezed lemon juice (from about 2 medium lemons)
Fresh berries
Whipped cream

Steps:

Place a rack in the center of your oven and preheat the oven to 375 degrees F. Coat a 9x13-inch pan with nonstick spray.
Dissolve the gelatin in the boiling water. (I measured the water into a large measuring cup, then stirred the gelatin right in. You could also do this in a heatproof bowl.) Let cool to room temperature.
In a medium mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat together the oil, applesauce, and eggs until combined. Beat in the cooled gelatin. Reduce the speed to low, then slowly add in the cake mix, stopping as soon as the dry ingredients disappear.
Pour the batter into the prepared pan. Bake for 25 to 30 minutes, until the top springs back lightly when touched and a toothpick inserted in the center comes out clean with just a few moist crumbs clinging to it.
While the cake bakes, in a medium bowl, whisk together the powdered sugar and lemon juice until smooth.
While the cake is still warm, use the tines of a fork to poke holes all over the top. Pour the glaze slowly and evenly over the top, allowing it to drip down into the holes. Let cool to room temperature. Enjoy warm or hot with plenty of fresh berries and whipped cream.
