BAKED BRIE WITH PESTO & SUNDRIED TOMATOES
A savory twist on baked brie has it topped with pesto, sundried tomatoes and pine nuts. Included are several tips for serving.

Steps:
- Scrape top rind off brie with knife.
- Spread pesto on top of brie cheese.
- Mix tomatoes, olive oil, salt, Italian seasoning and pine nuts together and spread on top of brie.
- Baked at 350 degrees for 10-12 minutes or until brie in center is melted.
- Remove from oven and sprinkle with additional herbs and drizzle with balsamic vinegar, if desired.

Steps:
- Heat brie at about 300 degrees for 10-15 minutes, until just soft to the touch.
- At the same time, heat the pine nuts.
- They are always best toasted just a little.
- Set the brie on a platter.
- Cover it with pesto.
- I don't use the whole package, sot hat more can be added later.
- Cover this with the pine nuts.
- I usually hold a few of these back as well.
- Slice the plum tomatoes and put them around the outside of tray.
- Put the cocktail bread around the outside of this.
- Enjoy!

- Prepare pesto by combining basil, pine nuts, garlic and Parmesan cheese in food processor; pulse to chop. Slowly add olive oil through feed tube and process until finely chopped and blended into a paste. Remove cheese from container and wrapper and slip in half horizontally to make two rounds of brie. Spread pesto on bottom circle, reserving small amount for garnish. Top with remaining circle. Garnish on top with remaining pesto, sprinkling of pine nuts. Wrap tightly and refrigerate overnight. To serve, unwrap cheese, place on serving plate and serve with crackers. NOTE: You may also use a commercial brand of pesto or use sun-dried tomatoes in oil. If using tomatoes, drain completely and pulse to fine chop in food processor.

- Preheat oven to 450 degrees F. Using a sharp knife, trim the white rind off top of the Brie (top part only, leaving the sides and bottom intact). Place Brie in an 8- or 9-inch pie plate or ovenproof dish.
- Mix pesto seasoning with olive oil, pine nuts, and garlic, if desired. Spread mixture evenly over the top of the Brie round (where white rind was trimmed off). Sprinkle with black pepper to taste, if desired.
- Bake 10 minutes or until Brie is warmed through. Serve immediately; surround with assorted crackers.

- Preheat oven to 400 degrees and line a baking sheet with parchment paper. Unfold puff pastry and lay on a lightly floured surface. Pinch together the seams where the dough was folded and roll the dough about 1" longer in each direction.
