BAKED ITALIAN CHICKEN BREAST WITH BRIE
Relatively simple baked boneless chicken breast with Italian flavorings topped with melted Brie...aka suuuuper yummy. Good for a romantic dinner (you can skip the garlic) or to impress family and friends. This dish is really fun because you can customize it easily. For example, instead of prosciutto try sliced artichoke hearts, or try a different soft cheese on top. Make it more southwestern with pepperjack cheese, light beer, and bell peppers. Guys love it.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Pour white wine and water into a 9x13-inch baking dish.
- Mix oregano, black pepper, and salt together in a bowl; massage oregano mixture onto both sides of chicken breasts. Arrange coated chicken breasts in the baking dish; sprinkle with red pepper flakes.
- Bake chicken in the preheated oven for 25 minutes. Place tomatoes, mushrooms, and garlic around the chicken breasts; sprinkle 2 tablespoons Parmesan cheese over chicken and vegetables. Continue baking until chicken is no longer pink in the center and the juices run clear, about 15 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Sprinkle remaining 2 tablespoons Parmesan cheese over chicken; top each chicken breast with 1 slice prosciutto and 2 to 3 slices Brie cheese diagonally atop prosciutto.
- Bake until Brie cheese is melted, 5 to 10 minutes.

- Place chicken breasts in a shallow dish. Coat with Italian dressing. Cover with plastic wrap and let marinate in the refrigerator, 8 hours to overnight.
- Heat a grill pan over medium-high heat. Remove chicken breasts from marinade and place in the skillet; cook until no longer pink in the center and the juices run clear, about 6 minutes per side.
- Slice chicken breasts; lay Brie cheese on top to melt.
- Preheat oven to 300 degrees F (150 degrees C).
- Heat 1 teaspoon olive oil in an oven-safe skillet over medium heat. Add tomatoes and 1/8 teaspoon salt; cook, stirring once, until tomatoes release their juices, about 4 minutes. Remove from heat and stir in 2 tablespoons balsamic vinegar and basil.
- Transfer skillet to the preheated oven; bake tomatoes until softened, about 15 minutes.
- Combine remaining 2 teaspoons olive oil, 1 tablespoon balsamic vinegar, and 1/8 teaspoon salt in a bowl. Add spinach; toss to coat.
- Mix mayonnaise, Dijon mustard, garlic, and pepper together in a bowl.
- Place bottom half of the loaf on a baking sheet. Spread mayonnaise mixture on top. Cover with spinach and tomatoes. Place chicken with Brie cheese on top. Cover with top half of the loaf.
- Bake in the preheated oven until heated through, 5 to 10 minutes. Cut into 4 sections.

- Preheat oven to 350 degrees.
- Combine Dijon mustard, lemon juice, egg and pepper.
- Brush chicken with mustard mixture.
- Coat with bread-crumbs.
- Melt butter in large frypan.
- Sauté chicken until golden on both sides.
- Place on baking sheet.
- Cut Brie cheese into thin slices.
- Place on top of chicken.

- Cut chicken into 6 tenders. Slice each tender lengthwise in the middle but not through. Open flat and tenderize a bit. Set aside.
- Preheat large non-stick skillet on low-medium heat and swirl oil to coat. Add garlic and onion, saute until translucent, stirring occasionally. Add spinach, cranberries, thyme, salt and pepper; saute for another minute. Remove from heat.
- Preheat oven to 375 degrees F. Divide spinach mixture into 6 piles. In the middle of a flat open chicken tender, place a slice of brie and 1/6th spinach stuffing next to it. Fold in half, tuck in the ends (if possible) and wrap tightly with kitchen twine. Repeat with remaining chicken. Sprinkle with salt and pepper.
- Return skillet to medium heat and swirl remaining 1 tsp of oil. Add stuffed chicken and sear for about 3 minutes per side. If your skillet is oven proof (I use green pan) cover it or transfer chicken to a baking dish (and cover), and bake for 25 minutes. Remove from the oven, let chicken stand 5 minutes and remove the twine. Serve hot with a side of choice (brown rice, quinoa, potatoes etc.) spooning juices on top.
