BAKED ITALIAN CHICKEN BREAST WITH BRIE

Baked Italian Chicken Breast with Brie image

Relatively simple baked boneless chicken breast with Italian flavorings topped with melted Brie...aka suuuuper yummy. Good for a romantic dinner (you can skip the garlic) or to impress family and friends. This dish is really fun because you can customize it easily. For example, instead of prosciutto try sliced artichoke hearts, or try a different soft cheese on top. Make it more southwestern with pepperjack cheese, light beer, and bell peppers. Guys love it.

Time 1h

Yield 2

Number Of Ingredients 13

¾ cup dry white wine
¼ cup water
2 tablespoons dried oregano
2 teaspoons ground black pepper
1 teaspoon salt
2 large skinless, boneless chicken breast halves
1 pinch red pepper flakes, or to taste
2 roma tomatoes, chopped
2 large mushrooms, sliced
1 clove garlic, chopped
¼ cup grated Parmesan cheese, divided
2 slices prosciutto
4 ounces Brie cheese, cut into 1/4-inch slices

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour white wine and water into a 9x13-inch baking dish.
  • Mix oregano, black pepper, and salt together in a bowl; massage oregano mixture onto both sides of chicken breasts. Arrange coated chicken breasts in the baking dish; sprinkle with red pepper flakes.
  • Bake chicken in the preheated oven for 25 minutes. Place tomatoes, mushrooms, and garlic around the chicken breasts; sprinkle 2 tablespoons Parmesan cheese over chicken and vegetables. Continue baking until chicken is no longer pink in the center and the juices run clear, about 15 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Sprinkle remaining 2 tablespoons Parmesan cheese over chicken; top each chicken breast with 1 slice prosciutto and 2 to 3 slices Brie cheese diagonally atop prosciutto.
  • Bake until Brie cheese is melted, 5 to 10 minutes.

SPINACH ARTICHOKE BAKED BRIE

Spinach Artichoke Baked Brie image

Holiday appetizers have met their match with this spinach artichoke baked brie. The crispy puff pastry encases a layer of creamy spinach and melty brie, making the perfect mashup. Spread onto your favorite crackers or crostini and enjoy all season long.

Provided by Food Network Kitchen

Categories     appetizer

Time 2h

Yield 10 to 12 servings

Number Of Ingredients 13

One 10-ounce box frozen leaf spinach, thawed, drained
4 ounces cream cheese, at room temperature
2 tablespoons mayonnaise
2 tablespoons sour cream
1 small clove garlic, grated
1/4 cup canned artichoke hearts (about 2), drained well and coarsely chopped
1/4 cup shredded whole-milk mozzarella
2 tablespoons grated Parmesan
Kosher salt and freshly ground black pepper
1 large egg, lightly beaten
One sheet frozen puff pastry (from a 17.3-ounce box), thawed
One 16-ounce wheel of brie
Crackers and crostini, for serving

Steps:

  • Put the spinach in a clean kitchen towel over a bowl or the sink and twist to squeeze out all the moisture. Coarsely chop.
  • Put the cream cheese, mayonnaise, sour cream and garlic in a large bowl; mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and Parmesan, mixing to combine. Season with salt and pepper, then refrigerate until ready to use.
  • Line a baking sheet with parchment paper. Whisk the egg with a splash of water in a small bowl. Roll out the puff pastry to a 13-by-12-inch wide rectangle. Cut a 1-inch wide strip of dough off the shorter end to create a 12-by-12-inch square, reserving the strip for decorating. Transfer the square to the prepared baking sheet. Place the wheel of brie in the center of the dough. Top with the chilled spinach-artichoke mixture. Fold the puff pastry up and over the brie, brushing the edges with a little egg wash and pinching to seal. Form the reserved strip of dough into a bow. Brush a little egg wash on the center of the pastry and gently press the bow on top to secure. Brush the bow and the entire exterior of the pastry with the egg wash, then return it to the refrigerator to chill, about 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Bake until the pastry is golden brown and cooked through, about 40 minutes. Let sit for 15 minutes, then serve warm with crackers and/or crostini.

  • Bring a pot of salted water to a boil. Cut the stems from the artichokes to leave a neat, flat base. Cut off and discard top one-third of artichoke. Place artichokes in boiling water and boil for 15-20 minutes, then drain upside down in colander.
  • In a small sauce pan or skillet set over low heat, heat cream and brie, stirring occasionally, until smooth and creamy. Turn off heat and, while still stirring, add the egg yolk and the Parmesan cheese. Season with pepper.
  • If desired, you can cut the artichokes in half or leave them whole. I think it's easier to halve them, but either way works!

  • Start by making the crepes. Add butter to a small saucepan and heat over medium heat. Whisk constantly until brown bits appear on the bottom, about 5-6 minutes, then immediately remove from heat and set aside. Combine all the remaining ingredients in a blender or food processor. Add the browned butter and pulse for 30 seconds or until well combined. Place the crepe batter in the refrigerator for about 30 minutes. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours.
  • Heat a 12 inch non-stick pan. Add butter or cooking spray (I like to use cooking spray) to coat. Pour 1/3 cup of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone. Makes about 10 crepes.
  • Heat a large skillet oven medium heat and add in 1 tablespoon of olive oil and garlic. Add the salt, pepper and crushed red pepper if using, cook for 2 minutes. Stir in spinach and artichokes, cooking for 5-6 minutes until spinach is fully wilted. Reduce heat to low and stir in the parmesan cheese, then turn off heat. Remove from the skillet.
  • Whisk together the olive oil and honey. Place in a small sauce pot and warm through. Keep warm until ready to use. You can also do this in the mircowave.
