GRILLED BRIE, TURKEY & PEAR SANDWICHES
No, this isn't the grilled cheese of your childhood-it's better. Brie stands in for Cheddar and the turkey and pear are a nod to fresh fall flavors. Don't have turkey? Chicken will work just fine. If you have a panini maker, this sandwich is a great excuse to use it.

- In a small bowl, toss the pear slices with the lemon juice. Heat a large skillet or griddle over low heat. Meanwhile, toss the turkey and thyme in a medium bowl. Spread each bread slice with mustard. Arrange half of the Brie on four slices of the bread. Layer the pears over the Brie. Mound the turkey mixture on top of the pears, layer on the remaining Brie, and top with the remaining bread slices mustard side down. Lightly spread the tops of the sandwiches with half of the butter and set them, buttered side down, in the heated skillet (if necessary, cook the sandwiches in two batches). Set a large heavy skillet right on top of the sandwiches and put 2 lb. of weights (canned goods work well) in the empty skillet. Cook the sandwiches until golden brown on one side, about 4 minutes. Remove the weights, butter the sandwich tops, and turn the sandwiches over. Replace the skillet and weights and continue to cook until the second side is golden brown and the cheese is oozy, about 4 minutes longer. Cut the sandwiches in half and serve.

CRANBERRY, PEAR, & BRIE GRILLED CHEESE
Now THIS is a great way to use up Thanksgiving leftovers. Melty, savory brie melts over sweet pears and mingles with tart cranberry sauce. It's not the prettiest sandwich in town, but it might just be the tastiest.

- Warm a large skillet over medium-low heat.
- Butter each slice of bread on one side. Lay two slices, buttered side down, in the skillet. Carefully lay the pear slices evenly on both slices of bread the bread in the skillet, cover with a single layer of brie, and carefully spoon the cranberry sauce over the top of each. Top with remaining slices of bread, butter side up.
- Cook, occasionally pressing gently with the back of a spatula to help the ingredients meld together, flipping occasionally, until sandwich is golden brown and the cheese is melted and oozing a bit out of the sides.
- Slice each sandwich in half and serve.
BRIE & SPICED PEAR PASTE SANDWICH
A delicious sandwich made with your choice of bread, slices of brie, Maggie Beer's scrumptious Spiced Pear Paste and baby spinach leaves. The first time I made this I used Maggie Beer's equally delicious Apple and Rosemary Paste. On that occasion, I used sour dough bread, but I've also made this sandwich with ciabatta. I've made it as a take-to-work sandwich, which has meant that by the time I have eaten it, the brie has been wonderfully melted - making the use of margarine or butter totally unnecessary. Since making this sandwich the first time - a serendipitous creation: it was simply what I had on hand - I've added chopped walnuts as I love the textural variety that they bring to the sandwich. This sandwich would, I believe, also be delicious pan-fried, though I've not yet tried it that way. Maggie Beer is an Australian chef and writer and she produces many, many food products and drinks. Her products are available online: http://www.maggiebeer.com.au/home/. For Australian Zaar members, her Spiced Pear Paste should be readily available from any good delicatessen, greengrocer's or supermarket. Her pastes might seem expensive but a little bit goes a long way when it comes to the flavour they bring to a sandwich. And I haven't yet even begun to explore where else I might use them. Zaar would not allow me to use Maggie Beer's Spiced Pear Paste as an ingredient, so in the ingredients I have listed slices of pear and I have suggested some spices that could be added if you are using slices of pear. Add one or more of these, according to your taste preferences.

- Place slices of brie on a slice of bread, and spread Maggie Beer's paste on the other slice of bread.
- Sprinkle the chopped walnuts on top of the brie, add the baby spinach leaves, (and if you are unable to access Maggie Beer's Spiced Pear Paste add the slices of pear); then place the slice on which the Spiced Pear Paste has been spread on top of the slice containing the brie, walnuts and baby spinach leaves; cut the sandwich in half; put in the fridge ready to be grabbed on your way out the door next morning!
- OR if you are using slices of pear, add chopped hazelnuts or chopped pecans, add the spices of your choice, then place the other slice on top of the slice containing the brie, nuts (of your choice) and baby spinach leaves; cut the sandwich in half; put in the fridge ready to be grabbed on your way out the door next morning!
- OR, if you're enjoying this sandwich at a more leisurely pace, enjoy it when you're ready to eat it. But allowing it to sit for a while out of the fridge is essential if you want to really enjoy the brie at its best.
TOASTED APPLE-PECAN BRIE SANDWICHES
I came up with this recipe one night for dinner and my husband and family loved it and it has become a regular for us. The combination of spiced apples and brie cheese is amazing. Great served with a spring lettuce salad. You can also make this as an appetizer by using a baguette loaf instead of sourdough slices.

- Melt 3 tablespoons of butter in a large skillet over medium heat. Add the apples; cook and stir until tender, 7 to 8 minutes. Stir in the brown sugar, 1 teaspoon of cinnamon and pecans and continue to cook for 1 to 2 minutes longer. Remove from the heat and set aside.
- Preheat the oven's broiler.
- Cut the slices of bread in half if they are very large and toast lightly. Spread the remaining butter on to one side of each piece of bread. Place two slices of brie cheese onto the unbuttered side of each piece of bread. Top with a generous scoop of the apple mixture. Place the open face sandwiches onto a baking sheet.
- Broil until the cheese has melted, about 1 minute. Sprinkle with additional cinnamon if desired.

AVOCADO PASTE SANDWICH
We have an avocado tree and I make these sandwiches for myself all the time. My 16 month old does not like avocados and this is the only way he'll eat them. There is a variety that tastes very buttery and my grandmother used to call the avocado "poor man's butter" because she would use it on bread instead of butter when times were hard. By itself the paste is an excellent first food for baby.
