ASPARAGUS CREAM PASTA

Making a cream out of the stalks means that every mouthful of pasta will have a delicious taste of asparagus

1 bunch asparagus
142ml tub double cream
2 garlic cloves , peeled, but left whole
50g parmesan , half grated, half shaved
250g tagliatelle

Steps:

  • To prepare the asparagus, cut off and discard the woody ends, then neatly cut the tips away from the stalks. Keep the tips and stalks separate. In a small saucepan bring the cream and garlic to the boil. Take off the heat, remove the garlic, then set the pan aside.
  • Cook the stalks in boiling salted water for about 4-5 mins until tender, drain, then tip into the cream with the grated parmesan. Blitz with a hand blender until smooth.
  • Cook the pasta according to pack instructions, then throw in the tips 2 mins before the end of cooking time. Gently reheat the cream, drain pasta, then tip into a bowl with the cream. Toss, divide into pasta bowls, top with parmesan shavings and serve.

This is something I've been wanting to make for a while. I just whipped it up last night for ze boyfriend and we were both happy with how it turned out. Measurements aren't listed perfectly, so you can also wing it. For best results, get all ingredients from Trader Joe's®.

¾ (16 ounce) package orecchiette pasta
1 teaspoon butter, or as needed
1 bunch fresh asparagus, trimmed and cut into thirds
¾ cup heavy whipping cream
salt and ground black pepper to taste
1 (8 ounce) wedge Brie cheese, cut into small chunks
¼ cup bread crumbs

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook orecchietta pasta in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain and transfer pasta to a casserole dish.
  • Heat butter in a skillet over medium heat; cook and stir asparagus in the melted butter until slightly tender, about 5 minutes. Spread asparagus over pasta layer.
  • Pour cream over asparagus and pasta; season with salt and black pepper. Arrange Brie cheese chunks in the pasta mixture; sprinkle top with bread crumbs.
  • Bake in the preheated oven until cheese is melted and bread crumbs are lightly browned, 20 to 30 minutes.

1/2 pound fresh asparagus, cut into 2-inch pieces
1/2 cup butter, cubed
1/4 cup all-purpose flour
3 cups chicken or vegetable broth
1 cup heavy whipping cream
1/2 cup white wine
4 to 6 ounces Brie, rind removed

Steps:

  • In a large saucepan, saute asparagus in butter until tender. Stir in flour until blended. Cook and stir for 2 minutes or until golden brown. Gradually add broth, cream and wine or additional broth. Bring to a boil. Reduce heat; simmer for 10-15 minutes. , In a blender; cover and process soup in batches until smooth. Return to the pan. Cube Brie and add to soup. Simmer, uncovered, for 5 minutes or until cheese is melted.

BRIE, BACON AND BASIL PASTA



Brie, Bacon and Basil Pasta image

10 oz pasta
1/2 cup pasta water - reserved
4 pieces think sliced bacon
1/2 yellow onion (thinly sliced)
2 cloves garlic (minced)
1/2 lb brie (cut into cubes)
10-15 basil leaves (cut into a chiffonade)
Kosher salt and freshly cracked black pepper to taste
lemon juice to taste

Steps:

  • Bring a large pot of water to a boil and the cook the pasta according to the package directions. Reserve 1 cup of the pasta water before draining, then drain the pasta and set it aside.
  • Place the bacon in a large cast iron skillet over medium heat and cook the bacon on both sides until brown and crispy. Remove the bacon from the skillet and set it to cool on a paper towel lined plate. Once the bacon is cool, break it into bite sized pieces.
  • Add the thinly sliced onion into the cast iron skillet with the bacon grease and saute over medium high heat until the onions are caramelized, about 5 minutes. Add the garlic and toss for about 30 seconds until fragrant.
  • Add the cubed brie into the cast iron skillet along with ½ cup of the reserved pasta water and a few squeezes of lemon juice. Stir constantly until the cheese is melted and then add the cooked pasta to the mixture and toss to combine. Add the bacon and basil and season with salt and pepper as needed. Serve immediately.

1 bunch fresh asparagus, trimmed
½ (2.2 pound) wheel Brie cheese, sliced
¼ cup butter, melted
½ cup dry bread crumbs
¼ cup toasted sesame seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still crisp, about 2 to 6 minutes. Drain and place in a shallow baking dish.
  • Lay cheese slices over asparagus. In a small bowl combine melted butter, bread crumbs and sesame seeds. Sprinkle over cheese.
  • Bake in preheated oven for 8 minutes.
  • Increase oven to broil. Broil just until breadcrumbs are golden brown.

1/2 pound mostaccioli or elbow macaroni, cooked and drained
5 garlic cloves, minced
1/4 cup freshly grated Parmesan cheese
1 teaspoon dried red pepper flakes
2 to 3 dashes hot pepper sauce
1/4 cup olive oil
1 tablespoon butter or margarine
1 pound fresh asparagus, cut into 1-inch pieces
Salt to taste
1/4 teaspoon black pepper

Steps:

  • Boil water for the pasta. Cook as you are preparing the garlic/asparagus sauce. In a skillet, cook garlic, red pepper flakes and hot pepper sauce in heated oil and butter for 2 to 3 minutes. Add asparagus, salt and pepper; saute until asparagus is crisp-tender, about 8 minutes. Add Parmesan cheese, mix well. Pour over hot pasta and toss to coat. Serve immediately.

2 tablespoons butter

1 cup milk
1/4 cup heavy cream
7 ounces brie cheese, rind removed,and cut into chunks

1/2 cup crackers or 1/2 cup fresh breadcrumb
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350.
  • Butter a medium casserole dish and set aside.
  • Boil pasta until al dente.
  • Drain.
  • While pasta cooks, melt 2 tablespoons butter in a large saucepan over medium-low heat.
  • Sprinkle in flour and cook, stirring continuously for 2 minutes, to form a golden brown roux.
  • Stir in milk and cream.
  • Bring to a boil, stirring continuously, then reduce heat to low.
  • Add cheese and continue to stir until melted and smooth.
  • Salt and pepper to taste.
  • Toss in drained pasta, combine very well, making sure the sauce soaks the pasta thoroughly.
  • Pour into the prepared casserole dish.
  • Stir together bread or cracker crumbs with 3 tablespoons melted butter.
  • Sprinkle evenly over pasta.
  • Bake for 15 minutes.

1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 stick (8 tablespoons) cold grated butter, grated on a box grater just like cheese
3 tablespoons toasted sesame seeds
6 large eggs
1 cup whole milk
1/2 cup plain Greek yogurt
2 tablespoons fresh thyme leaves
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh chives
1 pinch crushed red pepper flakes
kosher salt and black pepper
1 bunch asparagus, ends trimmed
4 ounces brie, cut into 6-8 wedges
1 tablespoon honey

Steps:

  • 1. Grease a 9-inch tart pan or pie plate with butter, place the pan onto a baking sheet. 2. To make the crust. In a mixing bowl, combine the flour, sesame seeds, and salt. Add the butter and toss with the flour. Add the 1/3 cup ice-cold water and mix until just combined, adding more water as needed until the dough forms a ball. Roll the dough into a large circle about 1/4 inch thick. Fit the pie crust into the prepared pie plate. Cover and transfer to the freezer to chill for 20 minutes, or 1 hour in the fridge. 3. Preheat the oven to 375 degrees F. Remove the crust from the freezer. Line the crust with parchment paper and fill with pie weights, beans or rice. Transfer to the oven and bake until crust is set, 15 minutes. Remove from the oven and reduce the oven temp 325. 4. Meanwhile, in a medium bowl, whisk together the eggs, milk, yogurt, thyme, basil, dill, chives, crushed red pepper, and a pinch each of salt and pepper. 5. Cut 2/3 the asparagus into 1 inch pieces. Arrange in the bottom of the sesame crust, reserve the remaining asparagus for the top of the quiche. Add the brie and drizzle with honey. Pour the filling into the pie crust, wiggling the pan around to help evenly distribute the ingredients. Arrange the remaining asparagus stems on top. 6. Transfer to the oven and bake 55-65 minutes or until the eggs are set in the center. Let cool 5-10 minutes before serving. Serve topped with fresh herbs. Enjoy!
